Vegan Split Pea Soup I

This was absolutely delicious! Every adult in my family loved it, and went back for 3rds & 4ths. Only thing I did differently was add a little more salt to my taste, but that is a personal pref. And I did soak the peas overnight, which did shorten the cooking time. It was ready in about 2 1/2 hrs. from start to finish. I had planned to add some chopped ham to the pot after I fed lunch to my vegan son-in-law, but it was so good I didn't want to mess it up. And please ... be sure to add the barley! That is what makes this so hearty and unique. You can't taste it. It just gave the soup a nice "meaty" texture. One daughter said this was her fav dish of all that I make. That says a lot, 'cuz she likes everything I cook. Try it!! You will be glad you did!

Traditional Macaroni and Cheese

Part of the family enjoyed this, except for the kids who normally love mac & cheese, and myself. It was just too dry for me.... and not creamy enough. I made it according to recipe, but if I should decide to give it another chance, I think I will use less corn starch.

Ethiopian Cabbage Dish

In my opinion, this is one of the best recipes I have found on this site. The first time I made it, I made it according to the recipe, and it was a hit. But now I add extra of all the seasonings, and it rates off-the charts. Don't worry if you have more or less of any of the veges. Tonight I had about 3/4 head of cabbage that was ready to be used, and it was DELISH! In fact, I think that from now on I will always use more cabbage if I have it. AND... if you are making it for a few people, I strongly suggest that you double the recipe, as my adult daughter and I polished off nearly the whole dish tonight... just the 2 of us. The leftovers are going to work with her tomorrow for lunch.

Crunchy Chicken Casserole

Delicious, in my opinion, but my family didn't seem too impressed by it. I used brown rice, because that is the only kind of rice I buy. They may have liked the white rice better, as they are not into eating as healthy as they should.

Baked Spaghetti

This was sooooo yummy!!! We loved it prepared just the way recipe shows. And it makes so much there is plenty for the next day. This was my first time making baked spaghetti, and this is the way I will fix spaghetti from now. It is nice to be able to prepare it ahead of time and then clean up before dinner. This is even going to be part of my Easter Dinner menu for my picky eaters who don't like ham.

Quick and Easy Green Chile Chicken Enchilada Casserole

Loved this one! Used red sauce rather than green, as that is what the family prefers. They were DELICIOUS! Plan to make these again when more of the family is over, as this is a good dish for a larger group.

Tomato Barley Soup

This was DELICIOUS made exactly according to recipe and was perfect! It will be a nice dish just to have in the frig when a little hunger pang hits. You can eat something healthy. I plan to make this again and again.

Cheesy Quinoa Pilaf with Spinach

Used parmesan cheese and 4x'd the ingredients. It was good, but is not a dish that I will make again without making some adjustments in flavoring. It just did not impress my family nor myself that much.

Zesty Slow Cooker Chicken Barbecue

Family loves this! Super easy and super delicious! And there are so many things you can do with it. I use the leftovers on a green salad, or on a tortilla as a mini taco. My 3 year old granddaughter just eats the chicken with a fork along with the rest of her meal. It is so versatile that it can be individually adjusted to fit everyone's taste buds. My son-in-law adds Balsamic vinegar for extra zip. I basically prepare it according to recipe, but last night I was out of Italian dressing, so just used vege oil with some Italian seasoning, and it was fine. This is a staple dish in our household.
