Tzatziki II

Great recipe! I prefer mine more plain and I just use Greek Plain Yogurt from Trader Joes and cucumber and a dash of dill. I also eat this with Naan Indian Bread which tastes like pita bread. I can't get enough of this lately........I also shred my cucumber ahead of time to reduce the water. Using thr greek yogurt helps because it is more thick too.

Sauteed Apples

Absolute perfection! I have made this as written but recently adapted the recipe by using coconut oil in place of butter and leaving out the cornstarch. I also use a coarse organic brown sugar and it comes out just as well! Perfect over pancakes!

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

One of my favorite recipes already! I used all fresh quality ingredients, minus the tomatos the first time because mine had gone bad. You can bet I am going to make this again soon with the tomatos and over and over again. I am looking forward to bringing this as a dish to the next party we are invited to.

You want to steam the milk before pulling the espresso shot to prevent the espresso from expiring. Typically I make this using 8 oz. of milk.

Garlic Kale

Grilled Zucchini and Squash

I prefer to put mine directly onto a grill or grill pan instead of sealing them in foil. Sometimes I add peppers, but adding feta cheese during the last minute or two if you are grilling in a grill pan on the stove is really tasty. Excellent recipe, very good!

Sensational Strawberry Kiwi Zing Smoothie

Great for a snack or for breakfast. Easily can be made with all organic ingreditents, which is how I make mine. You can top with whipped cream or garnish with fruit. This is a smooth smoothie, but if you prefer an icy smoothie, you could add some ice when blending. If you don't like the zing, sub the orange juice with apple juice. It makes 3 cups, and serves 3 people.

Texas Hot Apple Cider

Best apple cider ever! I used Trader Joes (already) Spiced Cider and followed this recipe as written but adding an extra 1/4 cup of pineapple juice. The citrus flavors came through beautifully. My family and I enjoyed this!

Chewy Brownie Cookies

These are the ultimate brownie cookie. They are really soft. The first time I made them I used chocolate chips and I always use butter in place of shortening. They came out nice, soft, and chewy. I also melted white chocolate and dipped half of them cookie into that. The second time I left out the chocolate chips and I like them even better this way. They ate smooth and soft.

Cinnamon Yogurt Dip

Too much cinnamon? No way! This dip is packed with flavor, I'm just sad I didn't find this recipe a long time ago. I found this is great to make for parties, for a late night snack ('cause it satisfies my sweet tooth), a breakfast side, and best yet for my daughter lunch with apples! I made the recipe as written.

Whipped Cream

Worked perfectly for me. I used my electric hand mixer and I had to mix for a few minutes until the peaks began to form. I am using this to top my Simple Strawberry Smoothie recipe. I also make this to top off my homemade chai tea lattes at home. You can't go wrong here, it is very simple.

Grandma's Hot Fudge Sauce

This is the recipe I will use for hot fudge from now on! I am making some in preparation for my familiy that is coming to visit and this recipe make a perfect amount. It only took me a couple of minutes to make this and it has the perfect rich taste and consistancy. Thanks for the great recipe Dianne! I highly recommend this!

Lemony Caesar Salad

I am glad I tried this, it is a keeper. I used extra virgin olive oil, but next time I will try a lighter olive oil. I love the lemon, it really makes this special. I also squeezed extra lemon juice over my salad.

Caramel Macchiato Ice Cream

This was about perfect - although I prefer a cooked ice cream recipe - this still turned out great! I made homemade caramel drizzle to stir in once the ice cream was churned. Excellent flavor.

Simple Strawberry Smoothie

This is fast and simple and when it comes to smoothies, I think simple is better. You can use a variety of juices, not just apple. I have used peach, apple, and white grape before. This is very smooth tasting. No need to blend in ice. I have made extra and stores in a glass bottle in the fridge for a few days.

Peach Bellini

This was my first peach bellini experience and I don't think you can go wrong with champagne and peaches. I have a feeling I made a mistake - I pureed the skin with the peach. I'm not totally sure you are suppose to do that but I like it just the same.
