Roasted Tomato Soup

Hand down the BEST tomato soup recipe there is! I lost count of how many times I've made this since I discovered this recipe a few months ago. I love how simple it is and it is made from fresh vegetables! I used chicken broth the first couple of times then switched to vegetable broth just as a personal preference. Thanks for sharing a great recipe!

Ashley and Whitney's Popcorn and Pretzel Sweet Snack Mix

This recipe has a creative twist with cinnamon, almonds, white chocolate, and cranberries that we really enjoyed! While I followed the recipe I used slightly healthier options such as non-GMO popcorn popped with coconut oil, raw almond in place of roasted, and I had to thin out the chocolate with a little bit of coconut oil. This was such a hit I am planning on making a huge batch to share with my graduate class as a treat!

Pork Carnitas with Cilantro Tomatillo Sauce

I don't eat pork so I made this recipe using medium tofu and cooked in with oil like the pork, only for about 10 minutes instead of 30-45 minutes the meat requires. I followed the recipe exactly as written otherwise and the spices were spot on and flavored the tofu beautifully. This was very easy to throw together and was even light enough to make for a quick lunch. This is also a very budget friendly recipe! I rarely make Mexican style dishes since I live in the heart of San Diego but this is a recipe I will make over and over again!

Sauteed Apples

Absolute perfection! I have made this as written but recently adapted the recipe by using coconut oil in place of butter and leaving out the cornstarch. I also use a coarse organic brown sugar and it comes out just as well! Perfect over pancakes!

Cinnamon Vanilla Granola

Oh my healthy goodness! I received Mazola corn oil for free in exchange for my honest review. I couldn't wait to get started and decided this would be the perfect recipe to make on a rainy day. My house smells amazing and the granola is simple yet very tasty. Surprisingly I have yet to make granola and this was my first experience with it! I love vanilla and cinnamon so this is a new favorite recipe!

Farmstand Ravioli with Zucchini

I made this as written but used fresh ravioli and tomatoes in place of frozen and canned. Took minutes to make and had everything already on hand. Easy to season to taste!

Real Hummus

First time making hummus! This turned out great! I used about 3-4 Tablespoons of liquid from the can and 1 Tablespoon of olive oil, otherwise followed the recipe as written. Looking forward to trying more hummus recipes on here.

Any Way You Want It Kale Smoothie

I liked it with a change. I'm wasn't so sure about peanuts in my smoothie...almonds or walnuts maybe but not peanuts. I added an organic packet of chai oatmeal which contains oats, quinoa, chai spices in place of the peanuts. I left out the strawberries since they are out of season right now. Overall it was good and I would make this again.

This is most definitely a 5 star recipe. The chocolate sauce is very rich and the addition of cinnamon and vanilla make this recipe a keeper. I highly recommend it! Thanks for sharing!

Roasted Zucchini Casserole

We enjoyed this but I likely won't make it again. It was a tad dry but we did enjoy it for dinner. The leftovers were tossed out since no one was interested in seconds. Besides being a little on the dry side - you need to be prepared to add some additional seasoning to taste.

Fluff Dip for Fruit

I never made anything like this before. My daughter signed me up to bring fruit to her classroom for a potluck but being a "baker" I couldn't bring just fruit. I found this recipe a decided to give it a try. I used vanilla and almond in place of amaretto and everyone loved it. Word of caution: this makes a massive amount of dip. Unless your taking this to a huge party you will likely only need to make half.

Apple Vanilla Smoothie

I haven't seen a smoothie recipe quite like this one before. It turns out to be a great apple based smoothie which is refreshing. There is a nice mix of flavors between the apple, vanilla, and banana. I would make this again!

Kale and Banana Smoothie

I can't say I loved it because it is a very healthy raw smoothie but I did like it. The recipe itself is great with the exception that the liquid needs to be doubled. My poweerful blender refused to blend this until I increased the liquid and it was still a thick smoothie. I would make this again for my health.

Slow Cooker Zucchini Soup

A new favorite in our house. My husband and I love this recipe! I left out the sausage and used a can of Progresso Roasted Tomato Recipe Starters and a can of regular tomato sauce in place of cans of diced tomatoes.
