Fresh Asparagus Soup

This recipe is a keeper! I am completely impressed by the full rich flavor of this soup. I used regular milk instead of soy. I've been on a quest to try all sorts of of new meals for my family and this was a hit. I served with Parmesan Cheese and a side of fresh bread.

Vegetarian Tortilla Soup

I made a few minor changes by using all fresh vegetables plus a can of tomato sauce instead of stewed tomatoes then I tossed it all in the slow cooker for 6 hours.

Banana Pancakes I

I had everything on hand to whip up the recipe for my family on a rare rainy day in Southern California. The banana came through nicely and we pairs it with real maple syrup, fresh sliced strawberries, and whipped cream.

I added everything but the anchovy fillet, this was super easy to make and I already had the ingredients on hand! Don't forget the red pepper flakes and Parmigiano cheese!

Stuffed Peppers My Way

The was my first time making and eating stuffed peppers! I grew up a vegetarian in a meat eating family and my mom always made stuffed peppers but they were filled with meat. They always smelled great but I was never able to eat them. I followed this recipe as written with one small change. Instead of adding Italian Seasoning I subbed it for a few tablespoons of tomato basil pasta sauce. I will be making this recipe over and over again!

Slow Cooker Butternut Squash Soup

I added some extra garlic and Himalayan pink sea salt to boost the flavor but overall we loved this recipe. We tend to enjoy soups with a vegetable broth base and would make this again. I decided to leave the vegetables chunky instead of pureeing them. We served this with crusty french bread for dinner.

Healthy Chocolate Mug Cake

The texture was okay, slightly rubbery. I made this in a large single latte mug using the recipe as written. The cake cooks up quickly and the taste is good. We topped the warm cake with vanilla ice cream, whipped cream, and caramel sauce. My daughter was not fond of the cake, although it may be a personal preference.

Chocolate Caramel Latte Syrup

Then tste was good but because the syrup is really thick it makes if difficult to incorporate into the drink. I would not recommend refrigerating this and instead scale the recipe down to make a fresh small amount as needed. I have an espresso machine and I usually do not mix the syrup into the milk I'm steaming. I followed the directions and added it into my steaming pitcher. Although the milk was hot and frothy the syrup was too thick to melt and mix in so I had to use a spoon. Overall the taste was great, it's just the consistency of the syrup that requires some extra work. I subbed raw agave for corn syrup.

Cinnamon Nutella® No-Bake Cookies

I made a slight modification due to the fact I was unable to locate cinnamon chips this time of the year, but hands down this was the best no bake cookie recipe I have ever tried. I used Guittard Milk Chocolate Chips and ground cinnamon in place of the cinnamon chips. I highly recommend trying is recipe out, you won't be disappointed.

Cheesy Veggie Mac and Cheese

I made this recipe minus the okra. Don't skip the bread crumbs, it adds depth to the flavor in addition to the fresh sautéed garlic. This is a wonderful "grown up" version of macaroni and cheese.

Polar Express Hot Chocolate

It tastes different than any other homemade hot chocolate I've made and I have tried many over the years. I followed the recipe using Trader Joes Belgian 72% dark chocolate. The chocolate was right on but the recipe was a bit too sweet, even for a sweet tooth like me! I would use half of the sweetened condensed milk next time.
