Old-Fashioned Chocolate Fudge

This is my favorite ever recipe for chocolate fudge. I don't like the fudge with the marshmallow fluff in it. Funny as it sounds it is to smooth and a little mushy. I like my fudge a little grainy and firm. This recipe comes out perfectly! I have used it for 2 years and the ONE batch (so far) that didn't firm up (my thermometer wasn't accurate) it made the best suace for ice cream!

Laura's Unbelievable Chicken and Pasta

I give it 5 stars with my modifications. I added a small amount of roux to thicken it a little more. We like ours a bit thicker. I also didn't have any cherry tomatoes and am not a fan of whole tomatoes. I had petite cut tomatoes that I blended up and added them that way. I chopped fresh spinach instead of frozen. I also used the pasta I had on hand. The chicken I baked in the oven with garlic and onion. Using Italian dressing would be a nice touch as well. It was so good that my youngest child was raving about it a week later!

Amish White Bread

This is by far the *BEST* recipe I have ever used for pancakes. I did a couple things to it but it would have been fine alone. I doubled the recipe and substituted 1 cup of flour for 1 cup of almond flour and added vegetable protein. I don't do well with a ton of carbs so this adds the needed protein. I also added vanilla. Excellent!!

Amazingly Good Eggnog

Excellent! I have made 4 gallons (yes gallons!) this year for different events and it came out great! This recipe is very forgiving. You can adjust the sweetness as you need to. I also omitted the alcohol as we are serving to kids :) If you have a high power blender (like a Vitamix) you can put it in there (if it gets a little clumpy) and blend it together. I do it every time, I don't strain it, I just put it in my Vitamix to whip it all together and it comes out smooth and great! Another thing I do is to substitute the milk for some heavy cream or half and half or if you want a lighter nog then use skim milk. I have used this recipe for the last three years and will always use it! I quit buying eggnog!

Beezie's Black Bean Soup

End result was excellent! Now as for the beans. I followed the directions exactly. It took *WAY* longer than three hours for the beans to soften. I would double the time it takes for the beans. I also took about an hour for the rice to fully soften as well.

Veggie Burgers

Excellent! I did, however, need to add more flour. I added some to the mixture as well as patting it with flour. I couldn't pick them up if I formed them and put them on the plate of flour. So I floured my hands and formed the patty (using flour as needed) then sprinkled just enough for a coating and then put it in the skillet. YUM! I well certainly be making these again!
