Double Almond Chocolate Chip Cookies (Gluten-free)

These cookies are very delicious, I make them for my boys who love chocolate chip cookies (trying my best to feed them healthier alternative to regular cookies). The first time I made them, I didn't know that Elana's recipes don't come out right if I use "Bob's Red Mill's Almond Flour" and the cookies came out very greasy and crumbled all over. They tasted good but they were not very pleasant to look at. Since then I got her cookbooks and found out that she cautions people to not use Bob's Red Mills almond flour because they are courser in texture and don't work with her recipes. She has recommendations on her website on which flour to use. Since I switched my almond flour, they come out great. Thought people might want to know since Bob's Red Mill is the most common brand in supermarkets.

INCREDIBLE Raspberry Cheesecake Cookies

I am sorry to say that I din't care for these cookies at all... I even went out of my way to find and order raspberry chips just to make these cookies because there were so many raving reviews about them. First of all, I didn't enjoy the strong artificial flavors of these cookies. Second, I didn't like the textures of them. Since I was determined to like these, I made them 3 times to make sure I didn't mess up anything but I still didn't care for them. My 6-year-old did like them, though. But my 4-year-old didn't like them at all, either. So there it is, my honest review/opinion. Hope it helps.

Chef John's Blueberry Muffins

These are very good. I ended up with 24 muffins instead of only 16 and only needed about 23 minutes or so in my oven. I know that the muffin pan sizes vary so if you end up with more than 16, start checking after 20 minutes to make sure you don't over bake these.

Wonderful Gluten Free White Bread

I made this bread yesterday for a friend who is gluten intolerant. She loved it and said it tasted very good. I followed the recipe exactly using the white rice flour, I am going to try with brown rice flour per her request next time.

Silver Dollar Pancakes (Gluten-free)

These are great pancakes. I know the recipe creator Elana Amsterdam (I have her cookbooks) recommends NOT using Bob's Red Mill Almond flour because they are not as fine as what she used to test her recipes with. Before I knew that, I was using Bob's Red Mill Almond Flour and was getting really grainy oily outcome from her recipes. I recommend switching to something else.

Schwabischer Kartoffelsalat (German Potato Salad - Schwabisch Style)

This was very easy and quick to make yet resulted in good salad. I used organic red skin potatoes and left the skin on and used white distilled vinegar. Followed the recipe exactly. Will make it again.

Oyakodon (Japanese Chicken and Egg Rice Bowl)

This is a good recipe for Oyakodon. However, if you really want to make it authentic Japanese, you will have to use Japanese short grain rice. We never use Jasmine rice in Japanese dishes because the texture is not right and the aroma doesn't mix with the flavors of other ingredients well. Other than that, the recipe is a good solid one!

Boilermaker Tailgate Chili

Authentic or not, very good and spicy chili. For kids and myself, I used sour cream to tone down and it was really good. My husband loved it spicy the way it was. I will definitely make it again.

Jack's Beanie-Weenies

I made this for more than 10 people. Some who love beer loved it and I didn't care for it (I don't like beer). Since the recipe author said she and her sister loved it as a child, I gave them to my kids but they spit them out. So I gave it a 3 star review because of the split reactions from my people. This might be a great tail gate recipe for people who love drinking beer.

Sesame Asian Tofu Stir-Fry

This is a good recipe. For people who are complaining that it's too greasy, you can certainly use less oil and it shouldn't be a problem. Also, if you have a problem with the sauce not sticking or being too thin, you can add a little COLD water to a little bit of corn or potato starch in a separate small ball until dissolved and add that right before you turn off the heat to thicken the sauce. You can also add arrowroot directly into the sauce to thicken the sauce before you finish cooking/turning off the heat.

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

I tried this recipe because it was rated so high AND I like Pam Anderson's recipes. Boy, am I glad I did. I halved the amount of pork I used because I was only cooking for 4 (and we still have lots of left over) but used the full amount of everything else (stuffing and sauce etc.) for the pork. It tasted soooooo good and I am not even a pork easter. I hardly cook pork because I cannot stand the smell of it but this tasted really good and I didn't notice the odor/smell I dislike of pork. I will be making it again.

Garlic Cheddar Chicken

I made these tonight following the recipe exactly. My husband and kids loved them but it was difficult to get the breading to stick to the chicken. I like to try the original recipe first before I change anything but next time, I will coat chicken in flour and use eggs to stick the breading on the chicken and bake them in the oven.

Spelt Waffles

These waffles were great, my entire family loved them. I followed the recipe exactly but next time, I will probably add about 2 tablespoons of palm sugar (to go with the coconut theme) since the waffles had no sweetness what so ever. I will also reduce the amount of salt to 1/2 t or even 1/4 t since it was salty to my liking. Also, after carefully measuring out my canned coconut milk, I realized that 1.75 C of coconut milk (I guessed it but I had to be sure) was exactly a can of coconut milk so people who are making this in the future can just pour it directly into the bowl. I will also sift spelt flour in the future. Thanks for the recipe.

Easy Chocolate Ice Cream

Other than being very simple to make, this ice cream recipe is just waaaaaaaaaay too sweet. I was worried about it being sweet but I tried it anyway and I was right. Maybe unsweetened chocolate (melted) or unsweetened cocoa powder next time. Not recommend it.

'Day Before Payday' Kielbasa and Corn Hash

I couldn't find the stif fry mix anywhere so I ended up using one fresh red pepper and 1 medium size yellow onion. These turned out really well and yummy. I did end up with a lot of left overs (I think it will serve 8 people depending on the portion size) so we will have some for lunch tomorrow as well. Thanks for the recipe!

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette

The salad tasted good but it had way too much dressing for our taste... Next time I will only use 1/2 the dressing to see how it tastes first. FYI, we are one of those people who only use 1/2 of the dressing if we eat out at a restaurant.

Meatloaf with Fried Onions and Ranch Seasoning

While it was easy to make, we weren't very impressed with this meatloaf recipe. The flavor is kind of bland and it turned out kind of dry for our taste. I think the fried onion breading absorbed all the moisture. Next time, I will try with the whole packet of ranch dressing seasoning and less (maybe half) fried onions. I might add some fresh onions to make up for the lost half.

Baked Salmon II

It's very easy to prepare and tastes good so I have made this so many times over the past years (probably more than 5 years)that I don't even remember. But over the years, I learned to adjust to the following: use 50% of the salt, double the garlic (we love garlic) and use 2 Table spoons of olive oil. I also serve this over rice. Families and friends like it.
