Baked Salmon II

It's very easy to prepare and tastes good so I have made this so many times over the past years (probably more than 5 years)that I don't even remember. But over the years, I learned to adjust to the following: use 50% of the salt, double the garlic (we love garlic) and use 2 Table spoons of olive oil. I also serve this over rice. Families and friends like it.

Chuck's Favorite Mac and Cheese

I am sorry to add a negative review when so many people seem to like this but I didn't like it at all, in fact, no one in my family liked it. We still have a lot of left over and I will have to toss it soon. I thought it was too tangy and had too much topping on it.

Amazing White Clam Sauce

Just made this for lunch for our family. I followed the direction exactly and used 2 tablespoons of red pepper but it was too much. I felt like it was all I tasted. Next time, I would reduce it to 1 tablespoon or even less so we can taste other ingredients more. I also thought that it made a lot of sauce (more than we needed) so we would increase the amount of pasta so we can enjoy the left over.

Peach Cake II

The cake turned out okay but we thought it was way too sweet. I usually like to make something exactly like the recipe and modify according to our own preference/taste. Next time, I will put only a half of the sugar and increase the amount of peach that is in it. I also thought that I tasted more Cinnamon that I would have liked (I want to taste peach if I am making a peach cake), I would decrease the amount of cinnamon as well.

Real Hummus

This is the best hummus recipe I have tried so far. Since we love garlic, I put more garlic (double the amount) than the recipe called for. Just perfect. I was also too lazy to squeeze real lemon so I used a bottled organic lemon juice and it was fine.

Oven Baked Jambalaya

I made this recipe for the first time tonight. The flavor was excellent. After reading some reviews, I decided to change the way I cook rice. First, I soaked my rice in chicken broth for several hours. My Japanese mom always soaks rice in water before cooking so the rice comes out more tender. It turned out to be a smart choice. Next, being a lazy person that I am, I decided to cook everything in my Le Creuset French oven (one big pot to wash vs. a pot and a casserole dish :o) ) Lastly, I didn't care for the shrimp being rubbery from being overcooked so next time, I will add it towards the end of the cooking (maybe cook it for only 10 minutes to heat) just to heat through (since it's already cooked, it doesn't need to be cooked for a long time and when shrimp gets cooked too long, it doesn't taste as good as when it's cooked just long enough.) With those adjustments, I think the dish will be a five star dish! Thanks JOSLYN.

Swedish Meatballs II

I just made these for kids' lunch. They turned out pretty good and we liked them. I did make the following changes. I doubled the sauce (and feel like should have even made more). We like a lot of sauce. Also, I used whole wheat dried bread crumbs instead of regular. I think it added more flavor as whole wheat has more flavor than the white bread. Overall, we liked them. They were easy and quick to make, I will make them again.

Homesteader Cornbread

Rempel Family Meatloaf

I made these for my family for dinner tonight. Both of my kids and my husband liked it. It turned out moist. But be sure you like the A-1 steak sauce if you are making it because you taste it a lot more than anything else. Next time, I will cut down on the amount of A-1 so I can taste the other stuff more.

Meatloaf with Fried Onions and Ranch Seasoning

While it was easy to make, we weren't very impressed with this meatloaf recipe. The flavor is kind of bland and it turned out kind of dry for our taste. I think the fried onion breading absorbed all the moisture. Next time, I will try with the whole packet of ranch dressing seasoning and less (maybe half) fried onions. I might add some fresh onions to make up for the lost half.

Clone of a Cinnabon

These are the best, they are so yummy. Since I didn't have a big enough surface to make one huge rectangle shape, I cut the dough in half and made 2 rectangles and still rolled it the way I would have if they were big. Worked out perfectly and they were so good this is a keeper recipe.

Cinnamon Rolls II

I tried to make this in my bread machine, it ended up creating a huge mess. I didn't read all the reviews before I made this. If this recipe is written for a bread machine, would you consider modifying it so people like me who don't always have time to read all the reviews wouldn't end up cleaning up the bread machine? I couldn't finish making these since my dough was completely wet and messy.

Fiery Fish Tacos with Crunchy Corn Salsa

This is a great recipe. We enjoyed it quite a bit. I do agree with other reviewers about the recipe for the sprinkle being too much. I used all of it and we couldn't believe how strong it was. We had to take some fish out to make it okay for us to eat. Next time, I would only use 1/4 to 1/3 of the recipe. The salsa was excellent, I couldn't believe how good it was since it only has lime and cilantro leaves to taste it with. I found jicama in my not so ethnic grocery store in a section where they sell fresh hot peppers instead of other produce section. I also used multi grain flour tortillas instead of corn tortillas. Yummy, definitely will be a repeat.

Very good. I made it exactly how the recipe was written. However, I thought they were too sweet for our taste (even though I used Granny Smith which are more tart than other sweet apples) so next time, I will cut the sugar down to 3/4 cup or 1/2 cup and see.

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette

The salad tasted good but it had way too much dressing for our taste... Next time I will only use 1/2 the dressing to see how it tastes first. FYI, we are one of those people who only use 1/2 of the dressing if we eat out at a restaurant.
