This one was worth all the work.  The flavor profile is amazing and the recipe delivered everything that I could hope for.  The pork shoulder was excellently seasoned and very tender.  The broth was bursting with flavor and the chile sauce delivered the heat.  I had always avoided hominy… MORE

About this Cook
I learned to cook as a child and when I became a Boy Scout at age 11, I became highly motivated to learn to cook well while out on camping trips. I have been experimenting with cooking for many years. I am a fantastic cook, but only a mediocre chef. Mediterranean Chickpea Salad I
This recipe was a quick and easy lunch. It comes together so quickly and had a very tasty flavor. I think that we will use half the garlic next time, but we will definitively be making this one again.

Cilantro Tomato Corn Salad
This side dish is a winner and once I had my first bite I knew that this would be going onto my favorites list. The sweetness of the corn with the butter, the little bit of heat from the pepper and the crisp flavor of the cilantro are a great combination for goodness. I used a bag of Trader Joe's fire roasted corn witch added even more flavor. I cut the butter down to two tablespoons, putting the butter and the corn in a bowl and microwaving it for three minutes. I substituted a Serrano chili for the Jalapeno and it gave it some very nice heat. I will be making this one throughout the summer. Enjoy.

Southwest Stew
This recipe was a great starting point for some delicious stew. We did not add the jarred salsa, instead I used roasted hatch green chilies (about 2 ounces by weight) and then gave it a little bit of smoky heat by adding a heavy 1/4 teaspoon of ground chipotle chili. It was flavorful and our meat was very tender.
