Baked Shrimp Scampi

OMG... my husband is more of a meat/potatoes kind of guy but he DEVOURED this and couldn't stop telling me how great this was! Only thing I did differently was using panko bread crumbs instead of Italian, although I'm sure Italian would've been just fine! Served the shrimp (and scampi sauce) over plain ol' spaghetti, with steamed broccoli and garlic bread on the side. Fantastic meal! Can't wait to make it again. Thank you thank you!

Mini Pumpkin Cheesecake

Great recipe! I cut all the ingredients in half, and was able to make 48 mini (bite size) cheesecakes using a graham cracker crust. Lined my mini cupcake pan with mini liners, combined one cup graham cracker crumb with 4 tablespoons of butter and 4 tablespoons of sugar, and pressed into the bottom of each liner. Spooned pumpkin cheesecake mixture into each cup - filled almost to the top. Then baked for 15 minutes. Came out perfect!

Hamburger Potato Casserole

I gave the recipe 3 stars because I did add a few things which I'm sure made it more tastier! With my additions I would've easily given it 5 stars. My husband didn't even add salt and pepper - something he does almost automatically with almost everything! What I did: Sauteed a can of mushrooms and 2 cloves minced garlic along with the already called for onion when I was browning the meat. Added approx. 1 tablespoon garlic powder, a bit more salt and pepper, and a few dashes of cayenne pepper. Covered the dish with foil and baked for an hour. Then I took it out of the oven and sprinkled on the cheese. The cheese melted while I opened a can of refrigerator biscuits, split them in half, and placed them on top of the cheese. Then back in the oven for an additional 15 minutes or until the biscuits were done... all I can say is YUM. Definitely will be making again!

Campbell's® 15-Minute Chicken and Rice Dinner

Quick and easy but does seem to be lacking a little something and that's why I rated it 3 stars. I spiced up my chicken while cooking it with salt/pepper/garlic powder/cayenne pepper and with that would give it another half star. Very filling though!

MMMMM... Brownies

Delish! So quick and easy - I will never use a boxed brownie mix again! I made mine in one of those brownie pans that has 12 separate squares for individual sized brownies (no cutting necessary)! I just made sure I checked them at 20 minutes - and they were done perfectly! Cool completely to allow for easy removal. Will make these again for sure!

Creamy Chipotle Chicken

Oh my. Made this for the first time today... I think I could've ate all of it myself! YUM. I did heat up the soup with the broth first, and then let the cream cheese sit in the soup mixture just a little while to let it 'melt' a bit before adding to chicken. Also instead of breast halves, I used 3 breasts cut up into large chunks. Just was hoping it would cook faster and it ended up taking only a few hours. Seems to make a lot of sauce but the sauce is what makes it so good! Great on top of rice but now anxious to try it with pasta!

Spicy Bean Salsa

Quick, easy, and yummy. It says to refrigerate it overnight but I just made it this afternoon and it's getting devoured! There might not be any of it left by tomorrow!
