Sour Cream Lemon Pie

I'm not really sure how I feel about this pie. It wasn't really "creamy" as I was expecting the but the lemon flavor and tartness were great.

Oatmeal Peanut Butter Cookies III

These cookies spread a little too much and they get too crispy. The filling was very liquid-y. I had to add at least another cup of powdered sugar to thicken it up. Though they taste good, I will not be making them again.

Great cake! Do not be intimidated by the amount of steps, it is really easy to put together! It's a showstopper and people will never guess it starts with a mix.

Dairy-Free Coconut Candy Bar Ice Cream

Yum! Thankfully the high fat content in the coconut cream helps this recipe thicken nicely! I did add about 1/2 c. of sugar because the coconut milk is unsweetened and the mix tasted bitter before I added the sugar. Now that the ice cream has been in the freezer it is nearly impossible to scoop and has a lot of ice crystals. Hard as a rock. The way the chocolate is drizzled in also causes big deposits of chocolate which basically turn to rocks in the freezer. Will not be making this again. Quite disappointing once it's frozen.

Caribbean Zucchini Bread

This is a cross between banana bread and zucchini bread but I love that you can use up bits and pieces from your pantry. Would be fantastic with cream cheese frosting or a fresh orange glaze.

These are heavenly! I accidentally left the butter out of my first batch of frosting and I prefer it that way. Much thicker and it holds to the cookies better. You will probably need more frosting than called for to cover the entire batch of cookies. I had to double the frosting.

Nana's Favorite Fruit Cobbler

I made this tonight and it bakes up beautifully! I used frozen cherries and whole wheat flour. I'm sure my husband's coworkers will love it. I did omit the cinnamon since I wasn't sure if it would go well with cherries.

Turkey and Provolone Sandwiches

These are better than your average sandwich! So easy and yummy with a little more effort than your standard sandwich. I added salt and pepper to the mushrooms mixture and I salted my tomatoes. Would be great spread with ranch dressing. Please note you do not need 1 pound of provolone cheese. You could probably get away with 1/2 lb.

Ladyfinger Cheesecake

Great no bake cheese cake with phenomenal visual appeal. I used separated lady fingers. Would be much easier to use the cakier version. I overbeat my whipped cream just a tad. I used drained morello cherries from Trader Joe's.

Good Old Fashioned Pancakes

Threw these together for dinner tonight with ingredients from the pantry. Perfectly fluffy on the inside and crispy on the edges. I added a splash of vanilla extract. One batch made about 10 pancakes using a 1/4 cup measure.

Great texture for dipping apples! Make sure to get the waxy coating off your apples and chill them before dipping to help the caramel stick and cool quickly. The salt is fantastic.

Easy Fruit Cobbler

I love the ease of making this cobbler. It goes together quickly. I used a mix of blackberries, raspberries, blueberries, strawberries and cherries. I doubled the batch and put it in a 9"x13" pan.
