Easy, Cheesy Tortellini Bake

My family LOVED this recipe, BUT I am only giving 4 stars because it all depends on what brands/flavor sauces you use as to how well this turns out. Our first time this was amazing! We used Prego Onion and Garlic sauce. The second time we used Ragu (can't remember what kind, something similar) and it was pretty salty and tasteless. Having made the recipe before we knew how great it was and will make it again. But if we hadn't made it previously with such awesome results, we never would have touched it again. That's what a big difference the sauce can make. I recommend going for something more tomato'y, not sweet or cheesy. If you sample your sauce and it's too sweet, try mixing a little tomato paste into it. Anyway, great recipe, IF you can pick the right kind of spaghetti sauce!

Tomato and Basil Quiche

I personally could not get enough of this, but I did change the recipe some. I used fresh basil, and removed the goo from the center of the tomatoes so it wouldn't be as watery. It was super yummy! I think next time I'll try some sun dried tomatoes instead of fresh to mix it up a bit!

Tex Mex Black Bean Dip

Another hit. I took this to a large Christmas party and almost everyone asked for the recipe. I personally like things a bit spicer, but this was perfect for a large group of people with a variety of heat tolerance. It just has a great flavor to it.

Restaurant-Style Hashbrown Casserole

Awesome!!! Our guests could not get enough of this, it was totally the hit of the dinner! I used cream of potato soup instead of cream of chicken as I'm a vegetarian. It worked great! Simple, easy, and tastes wonderful!

Broccoli Rice Casserole

This was just ok. It was bland, tasting mostly like velveeta and not much else. I've certainly had better and will try a different recipe for this next time. But, if you can't get enough of Velvetta, you'll really enjoy this!

Slow Cooker Chicken and Dumplings

This is such a great recipe for busy days or when you just don't feel like cooking. I follow the recipe as it was entered, except instead of dicing my onion I cut it into 4 big chunks. Before serving I remove the chunks as my children think they hate onions. ;) This way they still get the flavor but I don't get complaints!

Peanut Butter Stuffed Jalapenos

I made these for a party and they were a huge hit! I was a bit nervous heading in as it is such a unique combination. I am so glad I took the chance because not only did they make a great ice breaker, but they were a huge success! In fact, we are making them for another (much larger) party at my husbands bosses house next weekend. One quick note about the heat. I made about 20 peppers, and some were really hot, some were milder. The smaller ones seems to have the most kick! So, if you don't like the heat, my advice is to get the bigger peppers and make sure you scoop the seeds out really well!

Chocolate Chip Banana Muffins

Wow - this recipe was great! I took these to my son's end of the school year party (5th grade) and they went over great! I did 1/2 brown sugar, 1/2 white sugar and milk instead of yogurt. They were moist, soft, and super yummy. I'm about to make another batch today. :)

Seven Layer Tortilla Pie

I have now made this several times and it just hasn't turned out "that great". I was disappointed since all of the reviews have been so high. I even tried it again recently and took it to a friends along with a few other highly rated recipes from here and out of all of them this one was the one thing that wasn't raved about. It wasn't that people didn't like it, it's just when there were other things to pick from this just didn't stack up. I am finally throwing in the towel and moving on to other new recipes to try. I love good vegetarian mexican food and I just don't think this fits the bill. It's just okay.

The Best Vegetarian Chili in the World

I made this tonight when non-vegetarian friends came over. (I've been a vegetarian for 17 years). We all enjoyed it very much!!! I took the seeds out of the jalapeno because my friends don't like things too hot. It was nice like that - not too hot but not too mild either. However, if you like it hot by all means keep the seeds in. :) Also, this is amazing coupled with the Cornbread Muffins 1 recipe. The cornbread is on the sweet side which is just yummy paired with the spiciness of this chili. Finally, since I've tried a lot of imitation meat over the years, keep in mind that the comments over this being too salty might be because of the brand of "meat" they are using. Some are saltier than others. I used Boca and felt it was not too salty, but Boca tends to be a bit blander than Morning Star Farms in my opinion. To sum it all up, this is filling, delicious, and enjoyable to vegetarians and meat eaters alike! *********UPDATE*************** I made this again with Morningstar Farms Crumbles and my chili came out SUPER salty! If you use these crumbles **do not** add the additional salt!!! I did everything else the same, and it really is the different brands of crumbles that make this perfect or too salty.
