Libby's® Pumpkin Cranberry Bread

This was a Thanksgiving favorite! I enjoyed it so much that I am going to make small loafs to give out for Christmas! I just tweaked the recipe a little, by substituting 1/2 whole wheat flour and 1/2 all purpose, and 3/4 cup of brown sugar and 2 cups of regular sugar. I used 1/2 cup of apple sauce and 1/2 cup of oil to reduce the fat which made it so moist and flavorful. I also added a 1/2 cup of chopped walnuts, and doubled the amount of fresh cranberries. It was very easy to make and the house smelled wonderful!

Shrimp and Crab Enchiladas

This was fantastic, and so easy to make. The hardest part was finding the green chili sauce. But it was well worth the hunt! I added sauteed onion, garlic, chopped green and red peppers to the shrimp and crab mix. I can't wait to make it again.

Oven Roasted Potatoes

I have friends begging me to make these anytime I have a dinner party. They are so tasty and easy to throw together. I always add a 1/4 cup of grated parmesean cheese. I have made them several times and the last time I used little purple potatoes...they looked beautiful and tasted great!

Tiramisu Cheesecake

This was my first ever cheesecake and I have just one word...AWESOME!!! I had to do some running around to find the mascarpone cheese, and to get a spring form pan, but it was well worth it! I think it turned out better than any store bought cheese cake or restaurant dessert that I have ever had! A favorite for any cheese cake or Tiramisu lover!!!

Cocktail Meatballs

I made these for a Christmas Eve drop in party, and they were fantastic...not one meatball left in the crockpot! I jazzed up the meatballs a little by using seasoned bread crumbs, Worchester sauce, crushed red pepper flakes, and garlic.

Buttermilk Pancakes II

Pancakes are my sons absolute favorite food, and he has now voted this recipe the BEST! I have been searching for the perfect pancake recipe and I have finally found it. They are a little extra work, but so worth while. I separated the egg whites and beat them until stiff, folded wet ingredients in until just combined...you want the batter to still be lumpy.

Libby's® White Chip Pumpkin Spice Cake

I made this cake into a Jack-o-lantern for my niece's first birthday by using two bundt pans, everyone was so impressed. I frosted the cake with an orange colored cream cheese icing, and decorated the face with cut-out jellied candies and fruit roll ups! The cake looked and tasted like it came straight from a bakery!

Beth's Spicy Oatmeal Raisin Cookies

Excellent soft and spicy oatmeal cookie...they turned out perfect! I added an extra 1/2 tsp of cinnamon, and 1/4 tsp of cloves, and additionally I added a 1/4 tsp of ginger!

Wasabi and Shrimp Cheese Ball

I love wasabi!!! This recipe was so easy to make and turned out fantastic, everyone was so impressed! I toasted the sesame seeds and doubled the amount of wasabi. I used 1/2 low fat cream cheese, and half regular. The secret to shaping it into a perfect ball is chilling it for several hours before trying to shape it and roll it in the seeds. Thanks for a wonderful recipe!

BBQ Chicken Pizza I

Great alternative to traditional pizza! This recipe turned out perfectly and was super easy. Started with a thin Boboli pizza crust, and I used some mozzarella and parmesean cheese along with smoked gouda. Additionally, I sauteed the onions to caramelize them. The key is to use a really good BBQ Sauce, I used a smoked honey flavor and omitted the honey, molasses, and brown sugar.

Wonderful and easy recipe, sure to impress everyone. I used half chicken broth, half white wine (Sauvignon Blanc). Additionally, I threw in about a half pound of shimp...perfect main course dinner!

Broccoli and Ramen Noodle Salad

Every time I take this to a party, I am hounded for the recipe! It is a wonderful alternative to the traditional pasta salads. I used rice vinegar and sesame oil to give it more of an Asian flare. I used soy nuts instead of the peanuts. Additionally, I blanched some broccoli and sugar snap peas and added them to it. Fabulous!

Hot Artichoke Spinach Dip

This recipe was fantastic for my superbowl party! I used some cream cheese as well, and added lump crab meat, extra garlic, white pepper, and a little hot sauce. I served it with toasted pita points brushed with butter and a little garlic salt.

Monkey Bread I

My ex-boyfriends mother used to make this and I thought I'd never find this recipe again...I love this site!!! I tweaked it just a little by adding some cinnamon honey to the syrup mixture. It's a Sunday morning favorite!!!
