Texas Ranch Potato Salad

My husband hates cold 'salads' of any kind, but he loved this! I took the advice of some other reviewers and used half mayonnaise/half sour cream. I also stir in the crumbled bacon right before serving it so it stays crunchy. Great summer salad!

Baked Potato Skins

These baked potato skins taste like are straight from a Steak House restaurant, only better, they are a lot less greasy! I needed to baked them a little longer, to get the crispiness, the kids love em!!!!

Shrimp Fried Rice II

I have tried many fried rice recipes, but this by far is my favorite...I use it for chicken and pork as well. My only addition to the recipe is to add in about a 1/2 cup of frozen peas. This is a keeper!

Eggplant Slices, Tomatoes, and Mozzarella

I loved this recipe, but I loosely followed it…still trying to be true to it and do it justice...I grilled the marinated eggplant slices instead of frying them, and used fresh mozzarella cheese, the tomato and basil was from my own garden, and then broiled them in the oven on top of crostini slices until the cheese was bubbly. For the olive oil basil drizzle, I omitted the anchovies, and instead used a tsp. of olive oil infused with white truffles, white balsamic vinegar, and roasted garlic! Out of this world!

Dale's Swedish Meatballs

Very tasty meatballs, and I love the flavor the coffee adds to the beef stock. I omit the green pepper, and use Parmesan cheese instead of cheddar. Great served over whole wheat noodles!

Shrimp Scampi Bake

I love the addition of mustard in this shrimp scampi, I used a White Wine Dijon mustard, and it was perfect. Served it over angel hair pasta, and a crusty Italian bread!

Baked Beans II

I used an entire pack of bacon that I pre-cooked and crumbled, and took this to my Grand-daughter's 2nd birthday party, and I was told this was the best baked beans they ever ate by 3 people!

Cowboy Casserole

This was big hit with my family, and it's a nice comfort food meal! I took the advice of others and baked my biscuits separately, and then spooned the beans and meat over top. I did add in a packet of brown gravy mix and some water to make it more of a gravy.

Best Steak Marinade in Existence

This marinade recipe truly lives up to it's name, it is the best steak marinade I have made! I used it marinate kabob's that I grilled, they were out of this world! My only substitution was fresh garlic instead of powder.

Me and my husband love this recipe, I usually make it along with an Italian panini, with fresh mozzarella cheese, olive oil, tomatoes from my garden, and panchetta! It's the perfect accompaniment to the soup!

Homefried Potatoes with Garlic and Bacon
