I have loved participating in the Allrecipes Allstars sponsor program this month with Avocado's From Mexico!!!  I have always been intimidated by avocados, worried how to pit them, worried that they would brown too soon, how to pick the right one, is it ripe enough?  Well I am not intimidated… MORE

I have had high blood pressure since I was 30 years old so I have always cooked with Canola or Extra Virgin Olive oil to be health conscious and because I loved the taste of both. I never really gave Mazola® Corn Oil a thought before this month’s #AllstarsMazola assignments, and it could not… MORE

Ore-Ida products are and always have been a staple in my freezer!  This month they were by 2 for $5.00 at my local grocery store, and I stocked on them buying 6 bags!  For the AllStar’s assignment this month, I made two main dishes and paired them with my own recipe for OreIda Loaded Tatter… MORE

I was so excited this month that I was one of the AllStars to be chosen to prepare a Bison recipe!  I have always heard wonderful things about Bison from friends and family, but I was only ever able to find Ground Bison in my local grocery store.  I was ecstatic when I opened my Bison… MORE

I was pleasantly surprised when I received my $30 gift card towards this month Beef, It's Whats for Dinner program.  I bought a large flank steak, 4 nice t-bone steaks and ground beef.  I made Grilled Steak and Asian Noodle Salad with the flank steak.  I made Greek-seasoned t-bone steaks with… MORE

My family really enjoyed this months Allrecipe Allstars GOYA partnership!  I was tickled pink when my care package arrived, and I think actually used everything in it!  By far our favorite GOYA product has to be the Adobo Seasoning, my kids even sprinkle it on popcorn! I am looking forward… MORE

This month playing around with the al fresco® chicken sausage recipes, I came up with a spin on a recipe that is one of my kids favorites, a grilled Italian style sausage heroe!  We always get these when we are at the local end-of-summer carnival, and now I can make a healtier version of this… MORE

As an Allrecipes Brand Ambassador, I was very excited for this month’s activity “Go Bold with Butter”! I am what you could call a butter snob, I never use margarine or any artificial butter product in any of my cooking, and my preference is good old natural unsalted butter.  Growing up in… MORE

About Me
I have grown up with an appreciation for food, my Dad was a head chef and owned his own restaurant. I can remember at the age of 8, eating frogs legs and him telling me it was chicken...and I didn't know the difference! He always had me and my sister at least try what he was making, even if he knew we wouldn't like it. Well his love for cooking has definitely rubbed off on me. I find I am the happiest when I am in my kitchen cooking something wonderful for my family and friends. Everyone thinks cooking is so hard, but really it is one of those things that the more you do it, the better you get at it. There is nothing more satisfying for me then to hear, "Oh my gosh, that was so good...how did you make that"! I only hope I can have the same influence now on my son that my father had on me.
My favorite things to cook
I love to cook spicy foods, especially Cajun or Creole, my signature dish is Cajun Jambalaya. I make a pretty tasty Mexican lasagna as well. I am just learning how to make my own bread. I find there is something really special about making fresh homemade bread from your own hands, getting the yeast to rise, kneading it, and watching it rise!
My favorite family cooking traditions
My favorite time of year to cook is the holidays, everyone is so festive! My parents have a Christmas Eve drop in every year, and I spend the entire day cooking with my Dad helping him prepare! I also love baking Christmas cookies, spending the entire weekend baking and listening to Christmas music...this past year it even snowed! As for starting my own cooking tradition, well that has been baking family birthday cakes from scratch. I never really thought of myself as a baker, but after making a few birthday cakes it has now become expected in my family….and I love it, it’s much more personal! I’d actually get my feelings hurt now if they wanted a store bought cake!
My cooking triumphs
Well I have to say my biggest cooking triumph has been a Tiramisu Cheesecake, it was the first cheesecake I ever made...and let me just say, it was THE BEST I have ever had...I even impressed my Dad!
My cooking tragedies
Hands down...homemade pasta! I tried to make a fresh spinach pasta for a seafood dish, and it turned out to be a gross, green, sticky, pile of dough! I wont even attempt to make my own pasta again!
