About this Cook
I enjoy cooking and plan a menu before I go to the grocery store. I love this site for that! I try to only go to the store about twice a month to keep out food costs down. We raise our own cows and so I cook more meals with beef than other meats because: Beef, it's what's for dinner!
My favorite things to cook
I love to cook Mexican food, mostly because I like my food on the spicy side. I really enjoy making things from scratch.
My favorite family cooking traditions
I bake bread twice a month and freeze extra loaves so we always have fresh, homemade bread. It just tastes so much better! My husband usually cooks breakfast on Saturday and Sunday.
My cooking triumphs
I have gotten really into desserts and have mastered the cream pie. My husband probably wishes I would make them once a week, but I try to limit it to once a month.

Quick Cheeseburger Pie
I followed other reviewers suggestions and added a can of diced tomatoes. I would have used swiss cheese, but my husband doesn't like it, so I use cheddar instead. This was soooooooooooooo good, I ate 2 servings and was completely stuffed.

Baked Ziti I
I love this recipe and make it at least once a month. I use Kay's Spaghetti and Lasagna Sauce from this site. I followed another reviewers suggestion of mixing the sauce with the bottom layer of noodles. Thanks Colleen for a filling and satisfying recipe!

Black-Eyed Peas and Tortillas
Simple, inexpensive and delicious. i have only tried them with canned beans, but I will try the pressure cooking method with dried beans next time. We really enjoy these as a light dinner.
