Crazy Crust Pizza Dough

This was....ok. My 7-year-old loved it. I wasn't sure how large of a pan to use. Obviously this affects the crust and how thick it is, how long to bake it, the consistency. I went with a small-ish pan, a bit smaller than a 9x13 jelly roll. The crust puffed up in the center. I was able to flatten it when spreading the sauce, so that was fine. The crust was pretty thin, even for my small pan, was sort of soggy, despite prebaking it correctly. I doubt I'll make it again, but it tasted ok.

Salmon with Dill

Easy and tasty! I ended up using onion salt since that 's what I had on hand and I already put some salt on the fish, so it was a tad bit salty, but still very good. Next time, I'll omit the salt if I use onion salt! I also cook my fish like other reviewers mentioned, 5-6 minutes per 1/2-inch of thickness at 450 degrees.

Oven Brown Rice

Great recipe! I used Basmati brown rice, all chicken broth (low-sodium), a little less than 1/4 cup clarified butter, minced garlic, sea salt and threw in a few mushrooms. I cooked it covered since a lot of people did that and it took about 1-1/2 hours. But it was sooo easy and very tasty.

Nanaimo Bars I

The ratios of ingredients were too off for me to use this recipe; I actually started over with a different recipe that had better ratios. I made the crust and regretted putting in the full 2 cups of graham cracker crumbs, it made it very dry and crumbly, not at all the consistency needed for a crust. The egg should have been whisked lightly before adding to the melted butter and chocolate (off heat) so that it didn't get all "eggy" or scrambled into the mixture. So, although Nanaimo bars are DELICIOUS, the ratios are off and the directions need tweaking in order to make them delicious. Sorry!

Blonde Brownies I

Rich - yes! Chewy - oh yeah! These were easy to make, easy to customize and DELISH! I mixed about half of the chips in with the batter and sprinkled the rest on top, very good that way. I used mostly semi-sweet chocolate chunks and a good handful of white chocolate chips. A total of 1 cup of chips.

Banana Cupcakes

These are SOOOO good! I needed to use some overripe bananas and this is the first banana recipe I can happily give 5 stars to! I think it goes to show that there are a lot of good reviews here without highly advised "tweaking" recommendations, just mostly ingredient changes based on availability and some personal preferences! I didn't change anything in the recipe, made them as is, other than using mini muffin tins. And everyone is right, they are delicious without frosting, could pass for a sweet cake-like version of mini banana muffins. I couldn't stop eating them! I frosted some with the recipe here, less a 1/2 cup sugar and a bit more milk and the other half with that Creamy Chocolate Frosting recipe some other folks mentioned. They didn't need the frosting, and although they were good, I'd have to say they were even better plain. Next time, I might throw some chopped walnuts in the batter too! Sidenote: It took 2 medium bananas to get 1 cup of mashed banana for me.

Nanna's Banana Bread

I did not care for this banana bread. I just realized though that I forgot to put the sugar in...it still tastes sweet though, just very bland. I don't think the sugar can fix that the extreme lack of flavor. Even though I can smell the banana, I can't taste it at all. I used half whole wheat/half regular flour and 2 med-large overripe bananas. The bread was moist and dense, but unlike any other banana bread I've made as its somewhat cake-like, not bread-like. Maybe I'll try it again with the sugar (oops!), but I've had other recipes that far exceeded the flavor of this one already, so I think I'll stick with those. Sorry, this one just didn't do it for me.

White Velvet Cutouts

Easy to make, delicious to eat! I rolled them out thicker than the recommendation, maybe 1/4 of an inch? I wanted them thick enough to make decorating easy, easy to pick up without breaking, etc. I love white velvet cookies better than sugar cookies and this recipe is a keeper!

Chocolate Banana Bread

Not too chocolatey, just right. I personally would have given it 4 stars because I thought it was good, but not to die for. I brought it to work and everyone scarfed it down, loved it, so hence the crowd-pleasing 5 stars! I had to bake it a little longer than the directions said. I adjusted the recipe to use 4 bananas since that is what I had and with that amount, I made a large loaf and two mini loaves. Used mini chocolate chips too. I highly recommend trying this recipe for a change to the usual banana bread!

Bacon Ranch Pasta Salad

This went over very well at a picnic! Quite a few people went back for seconds and I got a lot of compliments. I'm a fairly picky person and it was nice to have a pasta salad that didn't call for peppers and onions and such. Made a few adjustments that worked great for us: used a 16oz. box of medium shells, a whole package of bacon (duh!) and no olives since I don't like them. It seemed like A LOT of ranch mix and it tasted pretty strong to me. As I ate some of the leftovers, I added some extra mayo/Miracle Whip and then it was perfect for me. Also, I did not find the recipe too salty. In fact, my bf wanted to add some salt and I wouldn't let him because I thought it was perfect.

The Best Vegetarian Chili in the World

Yum! Served this at a family get-together and it was a hit! I made a few subtle changes - I don't care for green peppers and my hubbie doesn't like corn, so those were omitted. I used one can crushed, 1 can stewed, and 1 can diced tomatoes as that is what I had on hand. I also used garlic powder instead of cloves as I was short on time. Turned out just as good as my usual meaty chili! And I should add that it was super easy to make.

Easy Ice Cream Cake

This dessert is amazingly delicious and so easy to make! When you put a slice on someone's plate they have no idea its just an ice cream sandwich! I can't wait to try this with variations such as the neopolitan ice cream sandwiches, with candies in the layers, or crushed Oreo's. Yum!

Jam Thumbprints

These were pretty good, better if you make sure you slightly underbake them. I did one batch with putting the jelly on AFTER baking them and a second batch putting the jelly on halfway through baking. I preferred the batch in which I added jelly halfway through baking because it stays in place better and it looks nicer, more smooth. I used apple jelly and colored half green, half red for Christmas. The dough was very easy and nice to work with! Make sure you put a DEEP imprint in the cookie for the jelly. The first batch I put a regular thumbprint in the cookies and when they baked, you could hardly see it anymore and there wasn't much of a well anymore for the jelly.

Mum's Irish Apple Pie

My expectations must have been high after reading all the great reviews as I wasn't all that impressed. This apple pie was good, but I thought the pie crust would be super, especially after all the work I put into it and it wasn't anything spectacular. I'm going to try this filling with the Best Pie crust recipe from this website - I enjoy that crust and its much easier to make. This crust was super crumbly and difficult to work with and roll out. Once you get it rolled out though, then it is like regular pie dough and it works fine. I sprinkled sugar on top of the pie crust before baking it - gave it a nice sweet touch. I cut back on the nutmeg to 1/2 teaspoon and added a 1/2 teaspoon cinnamon.

Chocolate Caramel Candy

This recipe (well, very similar recipe) has been in my family and I LOVE it! We call them "Snickers Bars." The only difference I've used is melting the caramels with water. I'll try this version next time I make them. I just wanted to note that if you are thinking of making these bars, they are delish!

Jam Filled Butter Cookies

Something didn't translate. I must have done something wrong because my cookies flattened like pancakes in the oven instead of looking like the traditional thumbprint cookies, as shown in the picture. I tried a few that weren't completely flattened and they tasted good. The dough was hard to work with, very crumbly and sticky when rolled in a ball. It helped when I let the dough chill for a bit first. I used apple jelly and colored half of it red, the other half green for Christmas. Since they were pretty yummy, I shall try to remake them and see if they bake better.

Libby's® Pumpkin Roll with Cream Cheese Filling

Yum! This turned out great, even though I messed up a couple of times! First, I ended up baking it for twice as long because the middle wouldn't bake through. (I put it directly under the turkey...oops.) I had to trim the crunchy edges off. It got super moist after wrapping it in plastic and keeping it in the fridge. My other mistake which went unnoticed, was that I only used 2 tablespoons of margarine. I forgot the other 4 in the microwave where it was softening. Tasted great!
