Emily's Famous Apple Pie

This pie is really easy to make, and is delicous! I used 8 apples, as listed, and ended up having enough for two 9-inch pies. For the first pie, I followed the directions exactly and used a store bought crust. It was good, but when I made the second pie I placed the spices and apples in a large bowl to mix, instead of sprinkling the spices over the top of the apples. It was much better, I thought. I also used the Best Ever Pie Crust recipe and made a lattice top, which turned out quite well.

Apple Honey Bundt Cake

Quite good! We cut the sugar to 1/4 cup and the honey to 1/2 cup. Substituted 1/2 vanilla rice milk for 1/2 the oil. Also, had no nuts. Easy to make. Shared with the neighbors, who also liked it. Plenty sweet with less suagar and honey. We will definitely use this recipe again.

Moroccan-Style Stuffed Acorn Squash

Wow, this was great! I didn't think I would like the raisins, but they were perfect. Smells much spicier than it is. I think the spice level is just right. Five stars.

Lavender Tea Bread

This bread is really easy to make and very delicious! It has a cake-like texture, but isn't too heavy or too sweet (I might use just a little less sugar next time). The lavender gives it an almost mint-like freshness that's is really quite delightful. A lemon glaze, or a bit of lemon zest in the dough would be a tasty addition. I can't wait to make it again!

Cranberry Muffins

Great muffins! The OJ is the perfect balance for the tartness of the cranberries. I'd like to try the recipe using whole wheat flour next time. Perfect for brunch day after T-Day.

Bee's Mac and Cheese Bake

This I my recipe, and I have been experimenting. I melted 2 tablespoons butter in the microwave, mixed in the crackers, and used that for the topping. I also mixed in small frozen peas in step 3. Nice additions!

White Bean, Spinach, and Barley Stew

I'm not exactly sure this recipe should be in the Soup collection; however, I very much like the flavor and textures. It is a very dry, thick stew - I ate it with a fork - but I don't know that I'd want more liquid in it. If you like these ingredients, you will most definitely like this recipe! (Note: I did spice it up a bit with jalapeno slices and Tabasco sauce.)

Portuguese Sweet Rice

If you like rice pudding, this is the stuff you want! As you can see in my photo, I served it to company with strawberry and kiwi slices, garnished with mint. Delicious!

Jen's Tomato Arugula Bruschetta

I like the flavor of this bruschetta, although it's just a bit sweeter than I would prefer due to the sun-dried tomatoes. Also, I was a bit conservative with the arugula - I recommend using a lot! I was worried there would be too much liquid, even after I drained the tomatoes before tossing them into the skillet; however, after chilling in the refrigerator for about 10 hours, it was perfect.

Signature Pumpkin Pie

Tried this pie at a pre-Thanksgiving "pie testing" at work. It's really good! I think the McCormick Pie Spice must be the perfect blend of spices (which makes it easy for a person like me who always seems to be missing at least one of the spices when it comes pie making time).

I don't usually like the peanut sauce at Thai restaurants -- it's too sweet for my personal tastes. But this recipe caught my eye, and it was so amazingly delicious! The balance of flavors was perfect. I can't wait to make this again, and I'd love to try the sauce on grilled veggies and grilled tofu. Yum!

These stacks are wonderful! I had them with vegetarian ham-style slices and pineapple rings (along with the juice). All the great flavors of breakfast are packed into these, and they smell really terrific while cooking. Send more stacks!

Easy Beginner's Turkey with Stuffing

This recipe looks a little intimidating, but it's surprisingly easy and extremely delicious! Even with the sugar glaze, it's not too sweet, just right. Review Update: I made it again last night. Still 5 stars, but not so easy this time. The phyllo dough can be troubling, but a little patience yielded excellent results. Everyone loved this!
