Jamie's Cranberry Spinach Salad

This recipe provided the base for the best salad ever. I substituted pine nuts (toasted with the sesame seeds at 350* for 10, no butter) for the almonds, used Craisins instead of cranberries, omitted the poppy seeds, halved the sugar and then added bleu cheese and mandarin oranges. Everyone raved!

Shredded Brussels Sprouts

I quartered the sprouts and followed the recipe exactly. They were good -- as everything with bacon is! -- but not tasty enough to find a place at my Thanksgiving table.

Pizza Pinwheels

These are so tasty and easy to make! Freezing the rolls for 5-10 minutes before slicing the pinwheels is important, and cooking the pinwheels on their sides allows them to brown evenly and without falling apart. Seriously, I can't stop snitching from the batch I made for tomorrow!

Dirt Cake I

Yummy and simple -- I don't know that I'll ever "slaughter" a box cake with icing again! I used a plastic bag with the corner snipped to fill plastic cups for individual servings, then decorated each cup with a flower stem or gummy worm -- perfect for the girls and the boys.

Tortellini Soup I

I've streamlined the recipe a bit to cut down on dishes and ingredients. I brown the sausage in the pot with a little olive oil, 2 Tbsp rehydrated minced onion and 1 tsp jarred minced garlic. When the meat is done, I pour one large can of beef broth over the undrained meat and skip the water and red wine. The rest of the recipe I use as is, sometimes adding chopped spinach or arugala in place of the parsley. This soup is always a hit at our house.

White Cheese Chicken Lasagna

I assembled the lasagna the day before a party, then popped it in the oven for 45 minutes to cook the next day. I only made a few changes, using 3 garlic cloves, cottage cheese, 1/2 a rotisserie chicken and fresh spinach. The end result was a little runny, but overall very good.

Layered Spinach Salad

This salad is so filling it is a meal in itself. I added 1/2 a rotisserie chicken, bacon bits and a few egg slices to the recipe. I tossed the salad to spread the good stuff around -- yum.

Green Bean Salad with Feta

I was looking for something different for green beans...this was a great change. I tossed cooked green beans with the feta, olive oil, balsamic vinegar and orange juice. Then I added sliced grape tomatoes and some slivered almonds I had on hand. What a yummy side dish!

Shrimp Lemon Pepper Linguini

Absolutely awesome! I doubled the sauce, as suggested by other reviewers, and used 1 lb. of frozen precooked shrimp (defrosted under water then reheated in sauce). The recipe definitely has some kick, but could easily be modified to lessen the blow. Just fantastic!

Monkey Bread

The kids loved helping make this yummy treat. Only change we made was to double the pudding/sugar/cinnamon mixture. It would have been impossible to coat all the pieces of dough (that we cut with scissors rather than tear) with the amount of mix the recipe calls for. A new weekend fave!

Spinach and Yogurt Soup

If you can get past the somewhat nasty appearance of this dark green soup, it actually tastes pretty good. I used fresh spinach rather than frozen, and I substituted sour cream and some leftover cottage cheese for the yogurt. Topped it with a tablespoon of sour cream and some bacon bits. Not bad to go with a sandwich.

Spicy Slow Cooker Black Bean Soup

Absolutely delicious. I skipped the jalapenos and hot sauce to keep the soup kid friendly and instead added diced green peppers, onions and corn. I let the soup cook on low all day then used a potato masher during the last hour of cooking to thicken it a bit. Yum!

Cool Watermelon Slushes

What a great way to use up the leftover watermelon from this weekend's bbq! Made as directed, topped with a little whipped cream and served with a straw. A big hit with and without the frozen strawberries.
