Peach Amaretto Upside-Down Cake

Reviewed: Aug. 12, 2011
Very good! A nice change from peach cobbler or crisp. I had bought a 1/2 peck of peaches from the peach orchard and had already made cobbler, crisp and baked peaches in syrup. I found this recipe and made it just as written. It smelled fabulous and tasted just as great. I made it in a 10" pie pan as I was afraid it would boil over in the 9". I think it would have, so was glad I had used the larger pan. It popped right out of the pie pan also and looked very nice.

Orzo and Rice

Reviewed: Aug. 3, 2011
As is this was good, but like others said a little bland. I added some garlic to it. Then, after it was done, I stirred in some fresh chopped parsley, basil and oregano from my herb garden. I made this to go with Bacon Wrapped Duck Breasts - another recipe from this site and they went great together.

Bacon Wrapped Duck Breasts

Reviewed: Aug. 3, 2011
A great way to prepare duck! Mine did not take an hour to cook, more like 40-45 minutes. My husband and son are both avid waterfowl hunters and I'm always looking for new ways to prepare what they bring home. This was good!

Yogurt Shrimp Fettuccine

Reviewed: Aug. 3, 2011
We all enjoyed this dish very much. I did not have any sour cream, so I used all yogurt and it was fine. The shrimp in the sauce was delicious. I think next time, though, I will mix the noodles in with the sauce before serving as the noodles seemed a little dry and bland with it just served over the top. I used a brandy we bought at a winery in Michigan that was made from their grapes. What wonderful flavors! We topped it off with fresh-grated parmesan cheese and served with salad, homemade bread and a bottle of Virginia chardonnay. Thank you!

Tabbouleh II

My friend and I love this! The family? Not so much. I grow my own mint and parsley and with fresh tomatoes this is fabulous!

This was really good! The nuts and cranberries give this a great flavor. Will make again I'm sure!

Chinese Pot Roast

Reviewed: Aug. 1, 2011
Delicious! Any time my son agrees something is good - it becomes a favorite here real quick! One bite and he was reaching for more. The gravy definitely is what puts this over the top! I used my cast-iron skillet for this like Mike had suggested in his blog and I think that helped add to the flavor. Thank you for a delicious dinner!

Crab Stuffed Flounder

Reviewed: Jul. 30, 2011
Very, very good! My flounder fillets seemed awfully thin to me, so I made a "sandwich" out of this using the crab as the filling. We enjoyed these very much and will have them again.

Pork Chops Stuffed with Smoked Gouda and Bacon

Reviewed: Jul. 30, 2011
Worth a 10-star rating! My grocery didn't have thick enough chops out so I asked the butcher to cut me these. He also cut the pocket in them for me as well. I would suggest to maybe only use a 1-3/4" thick as these were very thick and took a little longer to cook. These flavors were fabulous altogether! The next night I took the leftovers and cut them up in a microwaveable dish, added more shredded smoked gouda, cooked bacon and parsley and microwaved until the cheese was melted. Made an excellent "casserole".

Rachel's Cranberry Chicken Salad

Reviewed: Jul. 30, 2011
Very good! I made this for a picnic lunch we had at a winery - goes well with a nice cool, crisp white wine. The pecans and dried cranberries add interesting flavors. I made it the night before and it was definitely better after the flavors blended together. Delicious!

Creamy Chicken Enchiladas Verde

We loved this! Super easy. I added some cumin and ancho chili seasoning to this for some extra "punch". We will be having this again.

Crab Salad

Reviewed: Jul. 30, 2011
This was good, just not what I had my hopes up for. I knew going in there would be WAY too much celery so I cut that back to about a tablespoon or so of very finely diced (just enough to give this some crunch). I didn't want my crab to drown in celery. I'll probably make again at some point, but it was just not super-delish.

Caramel Macchiato Banana Bread

Reviewed: Jul. 13, 2011
This is very good! The glazing on top is pretty sweet and buttery, but I like that sort of thing. The only thing I'll do different next time is make sure I have 3 good-sized bananas for more banana flavor; I only had 2 this time. I also wonder what some mini-chocolate chips would taste like in the batter. But as is this is a 5-star recipe. Thank you!

Slow Cooker Barbecue Goose Sandwich

Reviewed: Jul. 11, 2011
One word - WOW!!! My husband and son are avid waterfowl hunters so I have plenty of goose in my freezer. This is fantastic! I bought a bottle of raspberry chipotle sauce and it goes great with this instead of bbq sauce. Definitely a new favorite at our house.

Ciabatta Bread

Reviewed: Jun. 30, 2011
Very Good! This bread came out wonderful! I took the advice of other reviewers and spritzed my bread while it was baking. I did it every 7 minutes. I also added some fresh rosemary and that gave it a wonderful aroma! I can't wait for hubby to get home so we can have a glass of wine and dip this bread into olive oil with oregano in it. Some reviewers complained of this bread being too sticky. It was somewhat sticky & wet, but not overly so. Came out perfect!

Cheesy Potato Casserole

Reviewed: Jun. 30, 2011
These were good, just nothing really spectacular. I found it to be a bit too much mayo for our taste. They needed something to "spice" them up, next time I'll try to think of something.

Hidden Valley Ranch Smashed Potatoes

We liked the flavor of these - it was a nice change from regular mashed potatoes. My only problem with this recipe was it seemed pretty dry. Next time I'll add more milk.

Rigatoni Pasta with Chorizo

Reviewed: Jun. 17, 2011
We liked this. I followed the recipe except for I did not use all chorizo sausage, I was afraid that would be too much for my family. Instead I used 1/4 chorizo and the balance in Italian pork sausage. It was a nice mix. This was a nice quick and easy meal for a week night. We will make this again.
