Easy Cabbage Roll Casserole

A 4-star as written. I added more tomato sauce (about 1/4 cup)and about 1/4 cup more water to it so it would not be too dry. I also added some basil and oregano to the mixture as it seemed like it would be sort of bland. This was very good and we enjoyed it. We will make it again. Went great with mashed potatoes and a bottle of cabernet franc!

Chicken Breasts with Lime Sauce

We really liked this! I thought I had limes in the fridge, but turns out they were lemons. So... I used lime juice from a bottle, which I know isn't as good, but it was still tasty. Lucky for me there was enough left over for me to take for my lunch tomorrow!

Yakisoba Chicken

I made this recipe because I had half a head of cabbage to use up. Boy am I glad I found this recipe! We used shrimp instead of chicken, because we love shrimp, but I can't wait to make it again using chicken! This was very good and had great flavor. I had never used chili paste before or soba noodles. I will say that I'll be using both from here on out. There is just enough for me to take for my lunch tomorrow - and I know I'll be the envy in the lunchroom!

Southwest White Chicken Chili

We liked this a lot! I made it as is with the exception of one thing, I added some garlic powder to it. I stirred some cheddar cheese into the chili and we also used shredded cheddar as a topping. Hubby also put a dollop of sour cream on his. The crunch of the corn in it was different from other chilis and I really liked it. We will have this again.

Simple Tuna Melt

Not bad, but nothing to write home about either. Instead of toasting the bread, I used my new panini press and turned it into a tuna panini melt. I think it needed just a little more flavor - perhaps next time I'll add more dill pickle and more dijon mustard. We'll have these again.

Italian Sausage Soup with Tortellini

This is one of our favorite soups. It is very hearty and warms you up on a cold winter's day! We like to grate fresh parmesan cheese as a topping for this soup.

Wild Duck Gumbo

This is one of our favorite ways to prepare the duck my husband and son shoot. They are both avid waterfowl hunters and so I always have plenty of duck in my freezer for this. I do cut back on the celery, personal preference, and sometimes I add some okra to it. One of these times I'm going to try chorizo sausage in place of the smoked sausage. I was very happy to come across this recipe! Thank you!

Colcannon Bake

This was very good! I made a corned beef in the crock pot with carrots and this went with it great! I followed the recipe to a T, except I had some bacon crumbles so I threw them in for added flavor. At first I was a little worried because when I mashed the potatoes they seemed too runny, but as they baked they thickened up nicely. I will be making this again.

Favorite Bourbon Pecan Pie

I made this as one of our Christmas desserts. I wasn't impressed or pleased with the result. I followed the recipe exactly and used a better bourbon. I had to bake it longer than stated and the pie was runny and the bourbon over-powered. When I make my normal go-to pecan pie recipe there is never any left. After my company had left I had over half of this pie. I put it in the freezer as we were going out of town for a week and just pulled it out last night to try it. It did freeze well, but we decided we just don't care for this recipe. Unfortunately I will be throwing away half of a pecan pie and I hate wasting food; especially food that was expensive to make (pecans are not cheap).

Tender Pheasants

I always have pheasant in my freezer it seems and I'm always looking for new ways to prepare it. This recipe caught my eye and am I ever glad I made this! The pheasant was so tender and moist it fell right off the bones. I made mashed potatoes to go with it and used the sauce as a gravy. It had great taste. We will make this again.

Rum and Sweet Potato Casserole

We have a favorite restaurant that makes an awesome sweet potato casserole and I thought I had found one that was close to it. Well.... Now I know I hadn't found it until I tried this recipe! This is an awesome recipe. I made this last night to go with grilled salmon, broccoli, and a great bottle of chardonnay. This is the best - the rum is what really gives this first prize! The topping is quite good also. My husband who thinks sweet potatoes are only "OK", ate 3 helpings of this and declared it fabulous! It went especially well with the wine. This recipe is my new favorite and will be on my holiday table!

Creamy Hollandaise Sauce

This was simple to make and tasted pretty good, too! I'm not a fan of Hollandaise sauce but my husband loves it on eggs benedict. Normally I buy the sauce mix packets, but not anymore. I like this sauce and will be making it from now on for our Sunday morning brunches!

Bacon Mushroom Chicken

This was delicious! And very easy to make! My husband worked outside all afternoon chopping & splitting the wood from the tree that fell on our house a few weeks ago so I knew he'd be hungry. The smell of this cooking in the oven was fabulous - what doesn't smell and taste great with bacon??!! I seemed to have quite a few drippings in the pan, so I added a bit more cream and made some gravy to go on mashed potatoes. We will be having this again!

Slow Cooker Maple Country Style Ribs

I was looking for a different way to make a package of country ribs I bought on sale and came across this recipe. I loved how this one sounded and it smelled delicious while cooking, but the flavor was just OK. I may try it again but cut the soy sauce down to about 1/2 tsp. or so and increase the maple syrup to maybe 2 Tbl. I used 100% pure maple syrup as we have a friend who makes it and that's all I ever have - and I recommend using the real stuff. I used the left-over pork for fajitas the next night. I liked them in that better than I did the first night we had them.

Pierogies

I had not ever had a pierogi until I married my husband; and then I only bought the frozen ones from the freezer section in the grocery. The other night when looking for a side to go with the slow cooker country ribs I had made I came across this recipe. These were very easy to make and quite good! I stuffed with mashed potatoes and cheddar cheese this time, but I want to make again and try with chorizo, Mexican cheese and cilantro, among other things. The dough was easy to work with, but I think I'll add a dash of onion powder and/or some salt to it next time as it was just a tad bland. I didn't roll out the first ones thin enough and they took forever to cook and they were a bit "doughy" on the inside so be sure to roll the dough out plenty thin! I used my large biscuit cutter and that made a perfect size pierogi for us. Sorry Mrs. T but I won't be buying your frozen pierogi's anymore - these were just too easy and too good!

Tar Heel Pie

This is a 5-star recipe just as it stands. It could be a 10-star recipe with just one change, and that change is personal preference: Cut back on the coconut! I made this for our 4th of July picnic and every member of my family agreed this would be super-fabulous if made with less coconut. Next time I will cut the amount to 1/4 cup. My daughter's favorite "pie" I make is the Tollhouse Pie which is very similar to a Kentucky Derby Pie and she said I could quit making that and make this Tar Heel Pie instead. We all loved it - with a scoop of vanilla ice cream on the side!

Rosemary Ranch Chicken Kabobs

I followed the recipe exactly, except I didn't cut up the chicken. I just marinated boneless/skinless chicken breasts and grilled them as is. They were wonderful! Very moist and tender with good flavor. The rosemary was very subtle - I'm thinking I'll add just a tiny bit more next time.

Banana Split Ice Cream Pie

Made exactly as is this gets 3 stars. I made this for a Saturday afternoon cook-out with family. All members agreed that there were plenty of changes that could be made to turn this into a 5-star recipe. Next time I'll put a layer of chocolate-fudge topping on the bottom and maybe layer vanilla, chocolate and strawberry ice cream as all strawberry was too much strawberry. I also think I'll not put the whipping cream on until serving time so it isn't frozen. It was a nice, cool dessert for a hot summer day, it just needed some "tweaking" to suit our tastes.
