Elegant Wild Rice Soup

Pumpkin Dip

This dip is creamy and delicious. The only change I made was to add fresh apple cider instead of the oj concentrate, cause that is what I had in the fridge, which was delish. I had no problems with lumpy cream cheese (like other reviewers) but I let it get completely soft before I began the recipe. I am making this to take to a Halloween themed dinner next week and plan on cutting back the cinnamon to 1 teaspoon, I thought it was a bit overpowering. The dippers I am bringing are: Ginger snaps, Honey Crisp apples, Pretzel Rods, Strawberries, and Graham Crackers.

Veggie Vegetarian Chili

I just finished making this chili. Fun and easy to make with great flavor. I took the advice of others and rinsed/drained my beans before adding. I used vegetable stock to make up for the liquid. I added cayenne, a chopped/seeded jalapeno, and more garlic. We are having this for dinner served over rice. Thank you!

Blueberry Buttermilk Coffeecake

This coffee cake is moist and delicious. I used 2 cups of fresh raspberries, and as per other suggestions swapped brown sugar in the topping and added some cinnamon. MMMMMMM! So good I made another one for our neighbors with blueberries. With both cakes, I did have the problem with my berries sinking to the bottom. Overall, very pleased with this recipe.

Raspberry Custard Kuchen

This was simple to make and very tasty. I followed the recipe with no modifications and agree with others that the tartness from the raspberries requires the full amount of sugar in the recipe. We ate this cold last night for dessert and for breakfast this morning. YUM!

Rich and Simple French Onion Soup

This is a great recipe. Thanks Lori! I like to add a bit more sherry and some crushed garlic cloves (add while simmering, remove before serving). Also, the first time I made it, it was a little bland, so really go for it with the salt & pepper!

Key Lime Pie VII

Excellent pie! I took the advice from others and also used my garlic press to juice the limes, which worked great! I baked my pie for 10 minutes which was the perfect amount. Got rave reviews at a dinner party last night!

Easy Batter Fruit Cobbler

This was okay. I thought the fruit fillng turned out well (I used blueberries) but the crust was wet, gooey and soft. Cobbler should be soft inside, with a good outer crunch. Too much butter in the crust recipe.

Garlic Mashed Red Potatoes

These are the best garlic mashed potatoes I have ever had. I left the skins on and they were awesome that way. I used a couple extra tablespoons of butter for added creaminess. The second time I made these I had to use half and half for the milk since it was all I had on hand, and that made these even better!

Cranberry, Apple, and Fresh Ginger Chutney

I made this last Thanksgiving and impressed my entire family. I had never made a chutney before, but this was easy and really good. This chutney is sweet, tart, spicy and delicious. I will be making this every year on Turkey Day.

Chocolate Covered Strawberries

I made these for Valentine's Day and they turned out really well for me. I used semi sweet chocolate chips, which created the perfect contrast with the sweetness of the berries. There is no need to use toothpicks or skewers, just hold on to the stems and leaves. I will be making these again!

Roasted Potatoes with Greens

These potatoes are so good! I make these often, in fact I am making them with dinner tonight. The second time I made this I didn't have any Parmesan cheese on hand, so I grated up some swiss on top and it was equally delicious.

The Best Banana Bread

I love banana bread and am constantly trying to improve it by finding new recipes. I followed the recipe, but used half white and half light brown sugar. I also added a tablespoon of vanilla. My boyfriend said it was the best one I've made yet (believe me, I've made a lot!) and he ate about half of the loaf in 10 minutes! I will be making this again and again. Sometimes, I like to toast a slice of the bread and put peanut butter on it...yum!

Stuffed Shells I

This recipe is delicious! I made it for myself and my boyfriend and we both loved it. I only have a 9x13 pan, so I made the recipe in that and found that I had enough shells and filling to fill another 8x11 baking dish too! I assembled the second pan and put it in the freezer. Not sure how long it will last in there, since my boyfriend won't stop raving about the first batch! Thanks for the good recipe.

Amelia's Tuna Macaroni Salad

I made this macaroni salad and it was delicious! However, I don't like too much mayo, so I cut it down to 3/4 cup and it was perfect! I also substituted dill pickle relish and added some lemon juice. The paprika was a nice touch! Thanks!
