Bread Pudding Apple Pie

No need to put into a pie shell. It's just as good without and reduces the fat/calories.

Pig Pickin' Cake

Delicious and moist. Did not put the oil into the cake, but used a 15 ounce can of oranges with the juice. Let sit in the fridge overnight, and the cake tasted great the next day.

Half and Halfs

Recipe is much easier to do than the directions sound. Making the 2 different doughs at the same time is quick. Then just grab a little of both and put onto the sheet. I used white chips in the chocolate dough for a nice contrast in color and flavor. These are great hot out of the oven with a scoop of ice cream, fudge sauce, whipped cream...

Mike's Signature Pretzel Bread

Would give 10 stars if possible. This bread is my family's favorite and everyone that has tried it has begged for the recipe. I make the dough in my bread machine and then follow the rest of the directions. This makes it so easy. I also don't bake for as long, so the bread stays soft and chewy. Love it!

Tres Leches (Milk Cake)

My daughter tried this dessert at a restaurant and has been asking me to make it ever since. Tried it the other day and she loved it just as much. Her new favorite cake! I also used reduced fat milks because that is what I usually have in the pantry, and they worked just fine.

Honey Bran Muffins

Love these! Only change was to use applesauce instead of oil (I try to do this whenever possible). That usually makes the muffin a little denser, but I still really like them.

Turkey and Quinoa Meatloaf

My kids said this was better than the beefy meatloaf that I usually make. I am new to using quinoa, so I love finding new recipes to try it in. This one was a definite keeper in my household. I didn't alter the recipe, and it was easy and tasty.

Coconut Cranberry Bars

The school that I work at has red and white as their school colors, and every Friday is red/white day. I made this and they were gone by lunch. I did use fat free condensed milk because that is what I usually have, and they still turned out wonderful. Next time I will line the pan, as they did stick a little.

Graham Cracker Cookies

Turned these into s'more cookies with marshmallows and chocolate chips. The first batch stuck really bad, so I just dumped the rest of the dough in an 8" pan and baked like brownies. My kids loved them and they were easily lifted out of the pan.

Mom's Zucchini Bread

only change is to cut the oil in half and use applesauce. Bread is moist and tasty. I bake in mini loaf pans because I feel that they bake more evenly and quicker. This is my favorite zucchini bread recipe.

Spicy Bean Salsa

This is addicting. I made this when we had company, and after looking at the bowlful that it made, I was concerned about leftovers. We had none. I even used fat-free dressing and it still tasted amazing. We serve it with tortilla chips, wheat thins, and use it on top of taco salads.

Fruit Pizza I

Made today to bring to work. I have been here for 2 hours and it is all gone from the teacher's lounge. I topped mine with strawberries, kiwis and blueberries. Perfect for a dessert that you can start the night before and assemble in the morning.

This was great. I used reduced fat cream cheese and used applesauce in the cake instead of oil. As good as it tasted with these ingredients, I can only imagine how awesome it is as written. What a clever idea!

Grain and Nut Whole Wheat Pancakes
