Cranberry Muffins

These were good, but with my sweet tooth, I feel that they needed a little more sugar. My cranberries were so tart that the 1/4 cup of sugar wasn't enough. I did enjoy the orange flavor in these.

Meringue Pudding Cups

These were okay, but the family agreed that a different flavor of pudding would have been better. Spooning into these, the vanilla pudding looked like lemon and that is what everyone was hoping for. I would also try butterscotch or chocolate pudding to change things up.

Oat Applesauce Muffins

This is a good base muffin recipe that lends itself to a varitey of additions. I chose to add some walnuts and dried cranberries which added great texture as well as flavor. I also added a little brown sugar oatmeal streusel on the top. I think these are best warmed with a little butter and a cup of tea. Will be trying again with some added cinnamon and diced apples.

Bacon Scalloped Potatoes

I doubled this recipe to feed my family of 5 (which consists of a little boy who doesn't like potatoes), and we all enjoyed this very much. My 2 girls love bacon and were huge fans of this recipe. Thanks!

Peachy Bread Pudding with Caramel Sauce

Absolutely delicious. For once, I was actually delighted that I am the only bit bread pudding fan in my family, because I got this dessert to myself. It took days to finish, and was still delicious at the end. I made no changes except to use a little rum extract instead of the rum in the caramel sauce. What a fabulous find!

Apple Snack Squares

Delicious!!! These were very popular around here. The only change I made was to make my own self-rising flour using flour and baking powder. These were moist and bursting with apples. The walnuts and butterscotch added a nice crunch and depth of flavor. Will make again and again during apple season.

Oven Baked Zucchini Fries

Nice alternative to traditional fries. I used egg white instead of butter to dip the zucchini into before adding the crumb coating. This worked very well for me, and the coating stuck really well. This also cut down on the fat and calories to make this a reasonably healthy side dish. I also chose not to peel my zucchini. My kids preferred theirs dipped in ranch, but my husband and I enjoyed these as is.

Banana Chip Muffins

Very nice banana muffins that my kids enjoyed having for a snack. I did increase the amount of banana to a full cup and think that otherwise the flavor of the applesauce would compete too much with the banana flavor.

Oma's Rhubarb Cake

Delicious rhubarb cake. I followed the instructions exactly and was very pleased with the outcome. This would be good as a dessert cake, but also as a morning coffee cake.

Incredibly Cheesy Turkey Meatloaf

The whole family enjoyed this meatloaf. I didn't have seasoned bread crumbs, so I used plain and added italian seasoning and garlic powder to the mixture. I also decreased the milk by 1/2 cup and the meatloaf was plenty moist. Thanks for a great, flavorful, turkey meatloaf.

Smoky Mountain Chicken

This was very good chicken. Enjoyed by the entire family, but especially loved by my husband. He commented on how all of the flavors were perfect together and the chicken was very moist. I am sure this one will be made again. Thanks!

Kitty Kat Bars

First, let me say...these taste nothing like a Kit Kat Bar, but they are very good. I took an idea from another reviewer and made these in a silicone lined muffin pan. They were very easy to assemble, popped right out of the liners, and were perfect individual treats. They are very rich, a little bite goes a long way. I also cut the recipe in half and still got 15 muffin sized treats.

Chocolate-Covered Cherry Cookies

Followed the recipe exactly, adding some colorful sprinkles on top of the frosting. The dough was very easy to work with and I had no problems rolling it around the cherries. I did make sure the cherries were well drained and then blotted them on paper towels to remove as much moisture as possible. All of the cookies turned out beautiful as well as delicious!

Sausage, Peppers, Onions, and Potato Bake

A new favorite in this house!!! Delicious and easy to assemble. The only change I made was to use all chicken stock instead of white wine. Kids and adults both loved this dish. Great with a side salad and french bread.

Hot Milk Sponge Cake I

I did not make the coconut topping to go on this. I made these my mini Bundt pan, and then we topped them with whipped cream and strawberries. Made for a delicious and very light dessert, especially because of the very low amount of butter in the cake.

Chocolate Toffee Crunch Bars

Delicious! These would be perfect for cookie or dessert trays during the holidays. They very much remind me of toffee, but so much easier to make. I only made 1/2 a batch and put into an 8X8 pan, and we still ended up with plenty of pieces.

Spanish Rice

This rice was good, but not the best. Only change I made was to omit the celery, not only because I didn't have any, but also because I have never seen celery as an ingredient in spanish rice. I liked this recipe because it was very fast, using instant rice. This was a nice side dish to our turkey burritos.

Margarita Cake with Key Lime Cream Cheese Frosting

Flavorful, moist cupcakes. Great dessert to finish off a mexican dinner. This recipe did yield me 24 cupcakes, not 12 as listed in the recipe. I made no changes, and have actually used the frosting for other cakes....it's very good!
