Layered Macaroni Casserole

Delicious pasta casserole. We have a lot of different pasta casseroles around here, as they are a favorite of my kids. This one was especially popular, especially the crunchy topping. It also made for great leftovers the next day.

Cake with Buttercream Decorating Frosting

I made this recipe into cupcakes for a swim team banquet. My kids' team mascot is a Manta Ray, so I made little white chocolate manta rays and pushed them into the tops of these cupcakes. They were the first dessert gone, and the kids were fighting over the last few. This recipe is easy and is only limited by one's creativity.

Fluffy Cheesecake Dessert

Light, fluffy dessert. I used graham cracker crumbs instead of vanilla wafers. My kids actually liked this more than my husband and I. The orange flavor is very subtle, and I would add in some very fine orange zest next time to up the flavor.

Restaurant Style Chicken Nachos

The perfect chicken nachos. I made one huge platter of these to feed my family of 5. These would also be a great thing to make for a crowd to eat during a football game, or other TV event.

Lorraine's Club Sandwich

A wonderful club sandwich, just like one that you would pay $8-$10 for at a restaurant. The only change I made was to add some ham to each sandwich. We quadrupled the recipe to serve our family of 5, and everyone was more than happy.

Southwest Chicken

Super easy and quick, a great meal for a busy weeknight. After cooking, I ended up cutting up the chicken and mixing everything together to use as a filling for tortillas. Some added cheese, lettuce, sour cream and salsa, finished them off perfectly.

Slow Cooker Cilantro Lime Chicken

A new family favorite. My slow cooker is my best friend during the fall and winter months when I am working and the kids are involved in sports. This chicken was so moist and flavorful, just perfect. We used this chicken in tortillas with lettuce, cheese, sour cream and salsa. Everyone loved it.

What a fun and delicious treat for my kids. A little tricky to make, as you really do have to let the batter cool a little before putting in the piping bag. I had to double bag mine in order for the batter to not melt through. I agree with others that it's better to pipe all of them on parchment paper, and then just add them to the oil a few at a time. Piping them directly into the oil did not work for me. I immediately rolled them in the cinnamon sugar mixture to make sure it stuck and they were well coated. My kids were so thrilled. The only problem is that now they expect me to make these on a regular basis.

Caramel Bread Pudding

Nice, comforting bread pudding recipe. I made no changes, except to add some additional caramel sauce when serving. We thought this was best served warm with whipped cream and the caramel sauce.

Kristen's Awesome Oatmeal Cookies

The BEST oatmeal cookies we have ever had. The only change I made was to add in some semi-sweet chocolate chips at the end. The chocolate cinnamon combination was exceptional. My husband and I had a hard time not eating all of these in one sitting. Definitely try this recipe... the name is so appropriate... they are awesome!

Red Velvet Cupcakes

Excellent, moist, easy cupcakes. The only change I made was due to the fact that when I made the frosting, I realized I didn't have any Cool Whip. So I just made a traditional cream cheese frosting. It was perfect, and everyone loved these cupcakes.

Granola Cereal Bars

These are a favorite of my kids, especially to take to their swim meets. I make just as written, but have used mini Reeses Pieces in place of the mini chocolate chips. Both ways are delicious. I have also used honey in place of the corn syrup, and it works just as well. I have made this one so many times, I have the recipe memorized.

Raspberry Oatmeal Bars

I have made these with both raspberry jam as well as apricot jam (my favorite), and they were both just awesome! Using a cake mix makes these bars very easy and quick to prepare. These bars are great to take to potlucks and BBQs in the summer.

Chocolate 'N' Oat Bars

These bars were good, very rich. I felt there was a lot of condensed milk, and even after cooling, I had white milk oozing out when I cut into the bars. My kids did like them and ate most of them, but we've had better bar recipes.

Slow Cooker Salisbury Steak

Nice, easy comfort food for a brisk, fall evening. My family, not being big on onions, felt that the onion soup mix was a bit overwhelming, so I would cut that down next time. Other than that, this was enjoyed over mashed potatoes. Some fresh mushrooms near the end of cooking would be a nice addition.

Glazed Mint Brownies

I couldn't wait to make these after seeing Dianne's great picture. I also took a note from her review and made the cream filling into a red and white swirl, more for the holiday season. I did not double the filling, and there was plenty. The brownies are rich and fudgy and the mint compliments very nicely. I topped mine with some candy cane sprinkles and chopped candy cane Hershey Kisses. They were not only delicious, but also made a pretty presentation.
