Florida Strawberry Muffins

I think I am giving up on finding a decent strawberry muffin recipe. I think I have tried most of them on this site, and none of them have been good. I had a very hard time getting the batter to come together for these muffins. And, although, I am a huge nutmeg fan, I did not think the spice worked well in these at all. On a good note, these are beautiful muffins, nicely domed, with the berries oozing out of them.

Linda's Monster Cookies

I have made these several times, as they are very popular with my kids. I always cut the recipe in half, and still get plenty of cookies. I also only use butter. These are very easy, and come out great every time!

Orange Brownies

I am a huge fan of chocolate and orange together, so I knew I was going to enjoy these brownies. The only change I made was to omit the pecans, as I don't really care for nuts in my brownies.

Mexican Rice III

I use this recipe often when making mexican dishes. It always turns out and is forgiving depending on what you have in your kitchen. I have decreased the onion, used red peppers, yellow peppers, canned jalepenos when necessary, and sometimes even canned tomatoes. This is my go-to mexican rice recipe!

The Best Lemon Bars

These were easy to make and had great lemon flavor. Having an actual measurement for lemon juice would be better than just saying the juice of 2 lemons. I used 1/3 cup juice because that is just generally what I get from 2 lemons, after many trials and measurings. That amount seemed to give me the perfect balance of the tart, sweet, and buttery that I was looking for in a lemon bar.

Cherry Chocolate Chunk Cookies

There are so many things to love about this cookie. First, the combination of the tart cherries with the chocolate is out of this world. I only used pecans, and the added flavor and crunch was perfect. Lastly, the addition of the almond flavoring sent this cookie over the top. Since I don't always have dried cherries in the house, I will be tempted to try this with dried cranberries, which I suspect will be equally delicious.

PHILADELPHIA Smarter Fettuccine Alfredo

A fabulous way to enjoy Fettuccine Alfredo without all of the guilt. The only change I made was to omit the nutmeg. I am a huge fan of the spice, but since others in the family are not, I just left it out. Next time, I will be doubling this because leftovers were also delicious and my kids really loved this dish!

Berry Sour Cream Cake

First off, this cake was beautiful and the berries were delicious. I used strawberries, blackberries and blueberries. I also cut the recipe in 1/2 and baked it in a 9-inch springform pan for easier serving. My only complaint is that because of the berries, the middle of the cake would not cook. I did use fresh berries, so there was no extra moisture from using frozen berries. If I had contined to bake the cake so that the middle was done, the edges would have been black. Luckily, since this was just for the family, we ate around the middle, so it wasn't a total loss. I just think there are much better "berry" cake recipe out there, and won't be making this one again.

Meatball Sandwich

Excellent, delicious meal. The only change I made was to use mozzeralla cheese instead of provolone because that is what we had. These meatballs would also be great with spaghetti, but having them on a sandwich made for a very popular dinner at my house. I also think the meatballs could be made in the slow cooker, making this very easy and ready to eat when you are.

Original NESTLE® TOLL HOUSE® Dark Chocolate Chip Cookies

These cookies were good, but not really any different than Nestle's original recipe for chocolate chip cookies. We still prefer the Best, Big, Chocolate Chip Cookie recipe from this site. I did enjoy the dark chocolate chips, especially because they are bigger than normal chips. In the future, I will just use those chips in my go-to chocolate chip cookie recipe.

Glazed Lemon Bread

I made this into muffins, omitted the walnuts, and used poppy seeds instead. The first day, these were excellent. But, because of the glaze, the tops became gooey after that. I would suggest if making muffins, only glazing the ones that will be eaten right away. Or maybe making a thicker glaze with powdered sugar. Overall, the lemon flavor was terrific and perfect with the addition of the poppy seeds. Will for sure make again, probably trying as written, as a bread.

Baked Pepperoni Pasta Casserole

Blueberry Breakfast Cake

Much like a blueberry buckle, which is one of my favorite desserts. I followed the recipe, but used a springform pan for easier serving. I also made a vanilla glaze and just did a light drizzle. The topping is so good, and I like the addition of the walnuts. Definitely add in the lemon zest, it's the perfect addition.

Chocolate Almond Sheet Cake

I am a huge fan of almond flavoring, so I knew this one would be a winner for me. It was moist, not too overpowering with the almond, and the frosting was perfect. This makes a large cake, and will serve more than 16 people. I made this for a gathering, and it fed about 25 people with decent sized pieces. This was a nice variation on your typical chocolate sheet cake.

Beef Tips

Some of the most flavorful and tender meat we have eaten in a long time. I followed the directions and served this over egg noodles. This was a popular dinner....no leftovers. This would be just as excellent over rice or mashed potatoes.

Fluffy Pancakes

Family enjoyed these pancakes. Did made a few changes, first by doubling the recipe to feed my family of 5. Secondly, I used butter instead of shortening and did not double that amount, keeping it a 1/4 cup. These are great with fresh berries and powdered sugar, and, of course, with maple syrup. YUM!

Mini Pineapple Upside-Down Cakes

Fun and delicious. I made these easier by using chopped pineapple. Then there is no need to cut the rings to fit the tin. They are also easier to eat, again, no cutting. These turned out perfectly, everyone at the party loved them.

Heavenly Angel Food Cake

This is the perfect recipe to make after making the homemade eggnog recipe from this site, which requires 12 egg yolks. I have never made an angel food cake and had to borrow the correct pan from a friend. But, it turned out wonderful, following the instructions exactly. Topped with strawberries and whipped cream, this is a delicious, light dessert.
