We use empty Smart Balance containers to cook the egg in the microwave. When the butter substitute is down to just a little around the edges, crack the egg, or 2, a tiny splash of milk, scramble. Bake in microwave for 1-2 +- minutes steering once in middle of cooking time. When finished, place cheese on top and cover with container cover, waiting a minute or so, the cheese melts quickly. Then remove cover, place toast on top turn over quickly. The egg falls right out on the toast, centered on the toast, cheese melted and ready to eat. If you need to use the container again, spread a little smart balance around in the container and use again.
