Colorful Frittata

A very nice breakfast casserole! I didn't have ham, so I used cubed turkey kielbasa. I also only had 7 eggs, not 8, but didn't miss the extra egg. My only complaint is that I didn't enjoy the italian seasoning with this casserole. Next time I will use just basil and fresh parsely. Great way to get in some veg for breakfast!

Turkey Minestrone

SO SO DELICIOUS! Did throw it all together, with the uncooked pasta, and let it simmer for a while until it was all done. Just used a pound of ground turkey, no sausage. Didn't use frozen veggies, but fresh : yellow squash, chopped spinach, chopped carrots, mushrooms and green beans. MMMM... Will make this often this winter!

Carrot Broccoli Casserole

Delicious! I forgot to use the stock but honestly didnt need any. The vegetables were cooked PERFECTLY! We really enjoyed this dish. I used Cabot 3 year aged cheddar which was fabulous. It doesn't shred well, so I just chopped it up. I did add some garlic salt and lemon pepper. I love the tender crispness of the veggies. Thanks for this one!

Best Butternut Squash Soup Ever

So delicious! I used an entire 5 lb butternut squash, tripled the fresh thyme and garlic, and added a leek, but kept the stock at 4 cups. While I was pureeing i added about a cup of whole milk. Upon tasting I added some garlic salt. This soup is so good. It thickens a bit while it cools. Thank you for this one!

Mushroom Spinach Omelet

Tasted great. i used 4 whole eggs instead. My complaint is with the presentation... it was nearly impossible to get the top to set, even by lifting up the edges. I finally just flipped the whole thing over, but fell apart. Any tips for me? Taste was great though. Good way to get in some veggies.

Marinated Vegetable and Olive Salad

These vegetables were absolutely outstanding! However, I think the amount of dressing is WAY off. I doubled the amount of veggies, and even added julienned carrots and a can of corn. However, I kept the dressing amount the same (minus the garlic salt but adding 2 chopped garlic cloves), with one major change: instead of a cup and a half of olive oil, I used a half of a cup. If I were to have used that much oil I would have had to throw all of the vegetables away because they would have been DROWNED in oil. I gave it four stars because of this, but the vegetables I made were very much deserving of a five, and I will make them often for parties. I only blanched my beans for a minute and they were crisp yet slightly tender.

Spaghetti Squash I

So delicious! The major complaint from reviewers was that the squash was crispy, so I used a different method of cooking the squash. I pierced it all over like I would with a baked potato and roasted it for an hour at 375. When it cooled enough to handle it I sliced it, deseeded it, and used a fork to get the meat out. It turned out perfectly this way! I did add salt and pepper to taste. This was my first time trying spaghetti squash and I will definitely make it again!

Rosemary Seasoned Lamb

This rub was delicious! I overcooked the lamb though (no fault of the recipe). Still, it was really good. I highly reccommend taking the time to untie it so you can get all surfaces coated with the rub. It's a pain to tie it back up, but well worth the effort.

Quick Italian Vegetable Soup

Great soup after some doctoring, but kind of bland as stated. I added 2 cubes of boullion (the big kind that makes 2 cups of broth) and it still was too bland for me, so I added about a cup of chicken broth and that did the trick. I didn't have any cabbage so I added baby spinach, I added a yellow squash, and a can of chickpeas. GREAT SOUP!

Special Potato Salad

This is the best potato salad I have ever made! My boyfriend doesn't care for mayo so I reluctantly tried this recipe and it's hands down a winner! The only thing I did differently was using fresh basil instead of dried. Gave it wonderful flavor. This will be my signature potato salad from now on!

Simple BBQ Ribs

These were definitely simple! I would try making your own BBQ sauce, or using one that you really love. I got a different sauce than I usually buy and it just wasn't out of this world. But the ribs were so tender! I used boneless country style ribs and boiled them for about 45 minutes before baking about 2 hours. This was even better knowing that I got the ribs on sale!

Indian Turkey Burgers With Lime, Cucumbers, and Chutney

YUM! I really enjoyed this recipe. Although I made a yogurt cucumber sauce rather than using the sliced cucumbers and chutney. I had some coriander seeds that I put in my mill and ground them... what a fabulous flavor freshly ground coriander has! I had no idea! I, too, microplaned my ginger rather than mincing it. I *may* cut back on the spices next time, but I truly enjoyed this departure from my normal fare.

Very good recipe! We served this inside corn tortillas with all of the fixings. The leftovers look kind of unappealing though, as the fat reconstitutes. But just eat it all when it's ready and you won't have that problem!

Strawberries with Balsamic Vinegar

These berries were a nice change of pace for us! My boyfriend ate his over vanilla frozen yogurt. I was suprised at how nicely the balsamic vinegar complemented the berries. Not sure if I will make it again, as I just love strawberries plain, but it was a new taste for us that we enjoyed.

Steamed Broccoli Drizzled with Roasted Beet Sauce

I wanted SO badly to love this recipe, but it was just ok. The beet sauce was a gorgeous color, especially when compared to the bright green broccoli. It just was lacking flavor. I loved the idea of this, and we ate it all, but I won't make it again. It took a lot of time for an ok result. But health wise it's a sure winner. Its always fun trying new things, though!

Cabbage Roll Casserole

I had a couple issues with this recipe. First of all, it makes so much more than one can possibly fit into a 9X13 pan. Secondly, I noticed that the recipe didn't call for any seasonings other than salt. I added a hefty dose of italian seasoning, garlic salt, and onion powder. The end result was still completely bland. I let it sit in the fridge overnight, and yes, it did taste better the second day, but still very bland. I adore cabbage, especially cabbage rolls, but this was not at all what I was hoping for. Thanks anyway.

Slow Cooker Italian Beef for Sandwiches

Really good beef! I followed the directions exactly, except I used a 4 lb top round roast. After 6 hours on high, my meat would not pull apart (probably because of the low fat content). So I just took it out, sliced it thinly, and put it back in the juice. Served this on sub rolls with provalone and banana peppers. Really easy meal that I will definitely make again when roasts go on sale!

Yellow Squash Patties

Very good, very easy to make! I let my squash drain for about an hour (with a sprinkling of salt) and it was not moist at all. The patties stay together well, too. I scaled this recipe for 2 and I got just what I wanted: 2 good sized patties.
