Horseradish Honey Ham

Reviewed: Apr. 15, 2010
Delicious! I made this glaze to go over a nine lb bone-in ham and it was wonderful! I was worried that the horseradish would be too spicy but the oven really mellows out the flavor. Will definitely use this again!

Tangy Coleslaw

Reviewed: Mar. 23, 2010
I always find that these types of recipes are better after 24hours in the fridge, and this is no exception :) It was really good on corned beef sandwiches and russian dressing. Didn't change a single thing and it was really nice on corned beef sandwiches.

Chilled Russian Salad Dressing

Reviewed: Mar. 23, 2010
I'm not sure what is meant by "chili sauce" but the only chili sauce I know of is Sriracha. I know this sauce is really spicy so I just used one tablespoon. It was still too spicy for Russian dressing, so I added some sour cream to dilute it. The dressing still didn't taste right to be so I added some dill pickle relish which helped. After my alterations it was really good on corned beef sandwiches.

Slow Cooked Corned Beef for Sandwiches

Reviewed: Mar. 23, 2010
What a delicious recipe! I halved it and used Corona as the beer. I didn't have enough garlic so I added some garlic powder. This recipe is very forgiving and so easy!

Special Irish Beef Stew

Reviewed: Mar. 17, 2010
Happy St. Patricks Day! We made this last night with awesome results, and all of the leftovers are officially gone! Per other reviewers I only used a cup of Guinness Extra Stout and a little extra beef broth to make up the rest. I did add salt and pepper to the flour to coat the meat. I boiled the meat, onions, and mushrooms for about a half hour before adding the veggies and cooked another hour. I used two carrots, and added two celery sticks along with a few handfuls of cabbage. I didn't need to use the cornstarch because it was perfectly thick enough for us. The end result was delicious! i would guess that if you didn't use the full amount of tomato paste your stew might be bitter from the Guinness Extra stout, but mine was perfect. Thanks for this recipe!

Lisa's Co-op Kale Soup

Reviewed: Mar. 13, 2010
I LOVE kale! It's so nutritious and delicious. This soup was great, and I would have given it 5 stars had it called for less red pepper flakes. It was so so spicy that I had to add more broth to tone it down. I will definitely make this again, but with a third or so of the red pepper flakes. I didn't use the sausage, but I did make tiny little meatballs which were great in this.

Grilled Swordfish with Rosemary

Reviewed: Mar. 11, 2010
This was a good marinade! I took the advice of others and didn't make the lemon sauce but mixed it al together and marinated for one hour. i agree that you need to let it marinate for a much longer amount of time for the flavors to infuse the fish. I will def make this again.

Sicilian Pineapple Pork Roast

Reviewed: Mar. 1, 2010
This pork was so tender it was almost hard to cut a nice slice! I, too, added a lot of cornstarch to make the gravy thick. I prefer savory dishes to sweet, and the pineapple made this dish just sweet enough. Thanks for the recipe!

Seared Sirloin Steak with Garlic Butter

Reviewed: Feb. 15, 2010
These steaks were so good! I didn't use the reduction, but I did use the garlic butter which was fantastic on the steaks. I love the pan searing method because I always seem to over cook my steaks on the grill.

Chocolate Strawberries

Reviewed: Feb. 15, 2010
Really good! Although 5 ounces is too much for one pint of strawberries. I ended up wasting a few ounces of the Ghiradelli chocolate I bought, which is expensive. A great dessert for Valentines Day!

Lemon Chicken Soup II

Reviewed: Feb. 11, 2010
This soup is phenomenal! I halved it, but used the juice from 2 lemons instead of 1 and a half. I used low sodium chicken stock, but ended up adding some salt at the end. I used about 3/4 of a bag of baby spinach, and subbed macaroni for the rice. This was so easy to prepare and the end result was delicious! I have never had a soup with lemon juice before, and I am so glad I tried it. What a great way to use up the leftover chicken I had from the seven pound bird I made a few nights ago. I can't stop eating!

Scrambled Egg Muffins

Reviewed: Feb. 10, 2010
These were really good! I made the recipe exactly as stated except I used spicy sausage, red bell pepper instead of green, and I halved the recipe. I had two problems... although I did grease the tins with cooking spray the muffins still stuck to the pan pretty well. Some of the muffins crumbled because of this. My second problem was that when I filled the tins only one third of the way full I had enough for 12 muffins instead of 6 (like I said I halved the recipe). There was really no need to only fill a third of the way because the muffins didn't really rise that much. Next time (and there will be a next time) I will grease the tins extra well, and I will fill the tins all the way to the top. Thank you for this fun breakfast!

Garlic-Roasted Chicken and Vegetables

Reviewed: Feb. 8, 2010
Delicious! Did use less garlic and less broth. The chicken was moist and flavorful and the veggies were perfectly tender crisp. I have a large roaster with a rack and everything fit perfectly in the pan. Thanks for this recipe!

Baked Ziti Casserole

Reviewed: Feb. 6, 2010
4 stars before my alterations and 5 stars after. I added sauteed onion and ground beef and added that to the sauce, of wich I used 2 jars of. I also used almost double the amount of ricotta, to which I added Italian seasoning. It was delicious after my changes, but 4 stars go to the original recipe. Thanks for this one!

Chili I

Reviewed: Jan. 25, 2010
This was a really good, basic chili. Not very spicy, but it still had great flavor. I used ground chicken instead of the ground beef. I also put it in the slow cooker and let it cook overnight. My only advice if you are using the slow cooker is to not add the beans until the last hour. I added 2 cans at the beginning and 2 at the end. The beans that were added first were kind of soft. Made this for a small get together and almost all of it was gone afterward.

Bean Soup With Kale

Reviewed: Jan. 21, 2010
This was SUCH a delicious soup after my modifications (the four stars are for the original recipe). I added carrots, celery and a potato. I also added some red pepper flakes for kick. I ended up simmering this for 30 minutes so that the kale got nice and soft. My boyfriend and I almost finished the entire pot I made last night by noon today!

Sassy Shrimp Stir-Fry

Reviewed: Jan. 20, 2010
This was a really nice accompaniment to the teriyaki baked salmon we had. Per others I reduced the amount of orange zest by half and it was just the right amount. I added red bell pepper, baby corn and straw mushrooms. Next time I will add a little more of the spices. Thanks for the recipe!

Garlicky Baked Butternut Squash

Reviewed: Jan. 10, 2010
SO SO GOOD! It was the only dish that was gone after our Thanksgiving in January. I didn't change a single thing about it. I used shredded Reggiano Parmesan, but added it halfway through the cooking time to prevent it from burning, then added more when it came out of the oven. I was even asked for the recipe. Delicious!

Baked Corn Pudding

Reviewed: Jan. 10, 2010
This was a huge hit at our Thanksgiving in January. I had never tried corn pudding before, but it is delicious! I cut the sugar to 1/4 cup and it was perfect. I drained the corn, then took paper towel and pressed the corn to get even more water out. I cooked it for an hour and it turned out really well. Will definitely make this again and again!
