Carrot and Ginger Soup

I hate to be a negative Nancy, but I didn't care for this soup. The ginger completely overpowered the other flavors. I made this recipe exactly as written. I do love that it is healthy, and it is a beautiful color, I just can't get past the strong taste of ginger. I'm saving it in the fridge just incase my boyfriend likes it. I enjoyed making it, though!

Tex-Mex Turkey Soup

Fabulous! I made a whole turkey breast and had a lot of meat leftover, so I decided to try this. I'm so glad I did! We are watching our salt intake, so instead of the boullion and water, I used 3 cups of low sodium chicken broth. Didn't have the salsa, so I chopped up 2 jalapenos and 1 hungarian wax pepper from my garden. Also from my garden, I used fresh oregano and parsely. Finally, to cut out the fat, I didn't use the sour cream, cheese, or chips. This soup was easy to make and tastes delicious! Thank you so much!

Veggie Potato Salad

I love that this recipe is so healthful! We are really trying to watch our fat and salt intake, and since this recipe is fat free and uses no additional salt, I had to try it. The combination of the veggies is very good. I'm not a huge fan of fat free italian dressing, but it works in a pinch. I would have preferred a homemade vinagrette and will definitely use one next time. I added a heafty splash of lemon juice at the end to liven up the flavors. Thank you for this recipe!

Roasted Garlic Rosemary Cauliflower

4 stars as written, 5 with my changes. I reduced the oil by half, omitted the salt, and added freshly chopped cloves of garlic. This was fabulous with fresh rosemary from my garden!

Geneva's Ultimate Hungarian Mushroom Soup

Spectacular! I have a Hungarian wax pepper plant and I'm trying to find recipes using them. This one was a sure winner! I didn't have any fresh dill so I used 1.5 tsps dried dill instead. This soup is rediculously good! i used a mix of baby bella and white mushrooms. I love that it uses skim milk and light sour cream, too. I only used a quarter of a tsp of salt instead of the full one that the recipe calls for, as well as low sodium soy sauce. I didn't have Hungarian paprika, so I just used regular paprika. After removing the wax pepper and tomato, I ended up chopping them up and using them as a garnish. I usually do not care for dill but it was perfect in this soup! I can't wait to make this again!

Garden Fresh Breakfast

MMM... The dijon mustard gives it a really nice flavor! I added broccoli, garlic, and spinach. Because of my additions I had to add two more eggs. Really easy to make, too.

Insalata Caprese I

Such a basic salad with a really nice taste. I left out the onions because I made it for a bbq and wasn't sure if everyone would love them like me. The mozzarella was expensive, but it is so worth it to buy fresh.

Sesame Seared Salmon

Great dish and really pretty to look at! My only complaint is that there is too much oil for me. I only used half of the 2Tbs oil, rice vinegar and garlic, and the vegetables were still a bit to oily. Next time, when sauteeing the sugar snap peas, I will use a tsp of oil. Other than that, this was great! I added red bell pepper to the snap peas for a pretty color. I also used a mix of black and white sesame seeds. Nice summer dinner.

Lemon Rosemary Salmon

Ten stars, if I could! This recipe just proves how simple ingredients complement eachother to make a delicious dish. I used a salmon filet that weighed a pound, but used just the one lemon and four rosemary sprigs (which I snipped right out of my garden). I didn't use any salt, and didn't miss it at all. I used a foil packet to bake it, and found that I needed about 45 minutes at 400 for it to be done to my liking. The flavors blend so well with the salmon. I always use rosemary for chicken, and never thought to do so with fish. This is a keeper, for sure. Thank you so much for the recipe!

Polish Chili

This chili is fabulous! I have a Hungarian wax pepper plant that had three gorgeous peppers on it, and this is the recipe I decided to use them in. I substituted ground turkey breast for the beef and light Polish kielbasa to make this chili really healthy. Also, by mistake, I used Cubanelle peppers instead of Anahiem (although they are almost identical in taste). What also drew me to this recipe was the lack of salt, as we are on a very low sodium diet. I was really nervous because there was no liquid other than the vinegar, but the tomatillos and the tomatoes gave off a lot. The end result was a medium spicy, delicious chili with great flavor! I did sprinkle in some cumin after tasting, but that is just personal preference. Thank you for the recipe!

Kung Pao Chicken

SO GOOD! Although I don't think this tastes like the Kung Pao I get from the restaurant. But this is so good! I used much less cornstarch and the sauce was perfect. I used broccoli and green peppers as my veggies. Next time I won't chop the peanuts, I'll just leave them whole. Thank you for altering the original recipe, it's delicious!

Sopa De Lima (Mexican Lime Soup)

I followed the recipe exactly and the aftertaste was far too bitter for us. I really wanted to love this as it was easy to prepare and very healthy. I ate one bowl and threw out the rest. Maybe use less lime? I know I am in the minority here, but my boyfriend and I really didn't care for it. Just had a really strong, unpleasant bitter taste. Thank you, though! It is always fun trying new things.

Spiced Lentil Soup

This was such an easy to make soup, and the end result was really good. We are on a low sodium, low calorie diet, so this recipe fit the bill! Because I didn't add any salt, the soup was a bit bland. I looked around my kitchen cupboard and saw curry powder and cumin. Instant fix! It is so good with these additional spices, and still very healthy! Thanks for this one, it's definitely a keeper.

Lentil Soup

Stir-Fried Mushrooms with Baby Corn

This was absolutely delicious! I had never used fresh baby corn, but I found some at Wegman's and decided to give this a try. I also added one bok choy to the mix, and used low sodium soy sauce. The end result was so good! Thanks for this!

Best Green Apple Martini

I have never used triple sec in my appletinis... Just 1.5 oz of vodka and 1.5 oz of Apple Pucker... these are good, too! I will use this as a variation at my bar. Another variation to try: 1 oz. Apple Pucker, 1 oz. Crown Royal, and some cranberry juice. Called Washington Apples.

Basic Ham and Bean Soup

Gosh, this was really bland! I had to add beef broth, italian seas, basil, parsely, and Mrs. Dash to make the broth taste like something other than water.
