T's Easy Chicken

Simple and delicious! I used fresh tomatoes and served this over spaghetti squash for a super healthy meal. I also added some freshly chopped basil and garlic. I gave it 4 stars for this original recipe, but would give it 5 stars with my modifications. I will definitely use this recipe again!

No Frying Eggplant Parmesan

Really good! I halved the recipe, but used the full amount of Ragu. Eggplant isn't my favorite vegetable, but covered in cheese and tomato sauce, it's not bad! I used Reggiano Parm because the stuff in the green can is not real parmesan cheese. Served this with Meatball Nirvana from this site.

Meatball Nirvana

Great meatballs! Made the recipe exactly as stated, minus a little bit of the salt. The italian seasoning was a little much, so I will reduce it next time. I used Reggiano Parmesan because it's so much better than the powdered, fake Parmesan cheese in a can. Thanks for the recipe!

Slow Cooker Carnitas

So rediculously easy and good! I used a 3 lb bone in pork shoulder with the full amount of spice rub and it was perfect. The cinnamon was prominant, but I didn't mind it. We made delicous burritos with this recipe. Thanks for posting!

Mmmm, great chili! I made it exactly as stated. Perfect amount of heat! I did feel that something was missing... some layer of flavor that I can't put my finger on. But this was really good nonetheless!

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

MMM so good! I used only one package of ravioli (Light cheese) but the full amount of sauce. I also cut back on the salt, and added sliced black olives, as well as fresh basil (about 2 Tbsps). This was delicious! Perfect amount of sauce for 9 ounces of ravioli. I know that a bunch of other reviewers said that something was missing... try the fresh basil! And if you are using parmesan cheese from a can, dump it out. There is no replacement for fresh parmesan (I spend the extra money for Reggiano Parmesan... it's the BEST and makes such a difference in recipes). Also, the recipe calls for FRESH tomatoes. There is a time and place for canned tomatoes, and this recipe is not the time, nor the place. Quality ingredients are needed to make this dish. Took me a half an hour from start to finish. Thank you for this one, Cathy!

Moroccan Tagine

Doesn't get much healthier than this! I, too, added cumin, turmeric, and celery. Next time i will cut back on the sugar. So nutritious and a nice change of pace from the ordinary. I served this with arcini de pepe pasta.

Spicy Spaghetti Squash

YUM! I used a different method of cooking the squash... I pierced it all over and cooked it at 375 for one hour. It makes it so much easier to cut this way! This sauce recipe was delicious... pretty spicy, just how we like it. I didn't have crushed tomatoes, so I subbed a 15 ounce can of tomato sauce and a 6 oz can of tomato paste. I also simmered it, covered, for about an hour. I love that this uses fresh herbs, and I LOVE that it calls for no salt! Will make this again and again!

Janet's Rich Banana Bread

Really nice banana bread! I found I didn't have any sour cream but did have fat free Greek yogurt (which in flavor and thickness is very similar to sour cream). I also mashed 3 overripe bananas rather than leaving them sliced. So easy to throw together and makes a really moist, flavorful bread. I usually add cinnamon and allspice to banana bread, and will probably do that next time for more flavor.

Cilantro Chicken and Rice

This was quick and easy, and a nice recipe to have because I usually have all of these ingredients on hand. I added a little cumin for a Mexican taste. I couldn't taste the cilantro in the dish though. Next time I will not cook it for 30 minutes, but rather just stir it in before serving.

Best Steak Marinade in Existence

Outstanding steak marinade! I almost psyched myself out because I was using T-Bones, and I usually don't marinate them because they are so nice to begin with. But I'm so glad I did! I made the recipe exactly as stated, minus the Worcestershire sauce because I didn't have any. I subbed A-1 instead. I also left out the garlic powder and used 1.5 Tbsp of minced garlic instead. I marinated the T-Bones overnight, then pan fried them today. Fabulous! This is definitely going to be my go to marinade from now on!

Chicken Souvlaki Gyro Style

This was delicious! I marinated the chicken overnight and the flavors really came through. For those that said it was too sweet, the recipe calls for balsamic VINAIGRETTE not balsamic vinegar. My boyfriend loved the chicken! The tzatziki sauce was delicous as well! I also made this the night before so that the flavors had time to meld. Here's a tip: instead of salting the cucs to dry them out, I placed them in a sieve over a bowl with a bowl on top of them. I put a can of soup in the bowl to give it some pressure, and all the liquid seeped out the bottom. By the morning I had less moist cucs, and then combined them with the sauce I made the night before. I used non fat Greek yogurt (thicker and creamier) and dried dill (just 1 tsp). I also used reduced fat feta cheese, which isn't bad. The only problem I had (no fault of the recipe) was that the pitas ripped. Anyone have a good solution for that? This was such a welcome change from the usual turkey sandwiches!

Greek-Style Green Beans

Great side dish! I blanched the green beans for 2 minutes, then sauteed them for 3 minutes in order to keep a lot of the nutrients and keep the beans crisp. I also added 2 cloves of chopped garlic when I added the beans to the onions. We are on a low sodium diet, so instead of using salt, I finished this dish off with a heafty squirt of fresh lemon juice. This was really nice served along side chicken pitas with tzatziki! Thanks for this!

Nice sauce! I used 1 can sauce and 2 cans paste. I, too, sauteed onion and garlic. I may play around with the seasonings to make it perfect for me.

Oven-Roasted Asparagus

Nice recipe, however I prefer my asparagus to be a little crisper. 12 minutes was too long for the thick stalks I had... 8 minutes would be about right at 425.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

This was absolutely one of the best vegetable dishes I have ever eaten! I had never tried Swiss chard before, but I picked some up at the store because it looked so beautiful. It was the Northern Brights variety and the stalks were yellow, magenta and orange. This recipe was beautiful to look at and amazing to eat! I added 2 cloves of garlic and the juice of half a lime instead of lemon. I also used an entire can of garbanzos. I will make this again and again! Thank you so much for this healthy recipe!

Pasta, Broccoli and Chicken

Really nice pasta dish perfect for a summer dinner. It's nice and light. I didn't have pesto so instead I added fresh chopped basil and a little more olive oil. I also didn't have any parmesan cheese, but I did have blue. I sprinkled a little on my serving and I thought it was fantastic. I just blanched the broccoli with the pasta for the last 3 minutes of cooking time. Thank you for this one!
