Fast and Friendly Meatballs

Delicious! I give them five stars with added parmesan, garlic powder, onion powder, and ground oregano. I had the mix ready before the oven preheated! I love the idea of using the ice cream scoop. You get uiform meatballs without getting your hands messy. Clean-up was a breeze. I highly recommend these! Thanks for the recipe!

Butter Roast Chicken

Delicious, moist chicken! I, too, used a whole chicken, and because it was 7.5 lbs, I baked it at 350 for about 2.5 hours. I used "I Can't Beleive It's Not Butter" (the light version). Next time I will use more lemon, and leave the squeezed lemon halves inside the bird for more lemon flavor. I will also add the spice mixture inside the bird as well (I couldn't taste it much because we don't eat the skin). This was one of the moistest chickens I have ever eaten! I did have to tent my chicken with foil because the skin browned up almost to the pointof burning. Thanks so much for this recipe!

Korean Marinade

What a fantastic marinade! I marinated turkey breast cutlets over night and made turkey lettuce wraps for lunch. I just diced the meat and threw it in a skillet with some vegetable oil, a diced jalapeno, matchstick carrots and chopped mushrooms. I poured in the leftover marinade, and when the turkey was done cooking I stirred in some diced water chestnuts. We wrapped the mix up in lettuce leaves with a dash of Sriracha and we had a delicious meal! I didn't deviate from the recipe at all, except I used yellow onion instead of green onion because I was out. This was the perfect amount of marinade for a little over a poud of meat. I will definitely try this with chicken, pork, and beef. Thank you for a wonderful recipe!

Pan Fried Brussels Sprouts

These were good sprouts! I cut them in half to shorten cooking time, and I threw everything into the pan at once (I don't like my garlic to darken that much). At the end I sprinked the sprouts with Parmesan cheese.

Cabbage and Noodles

I love this type of dish! I made it exactly as stated and it was really good. However I prefer my cabbage and noodles with keilbasa or some other type of smoked sausage. Just a personal preference! Great both ways!

Perfect Deviled Eggs

Super Fajita Marinade

Definitely zesty! Made this to go over strips of beef. I feel as though there was an ingredient missing, however. Can't put my finger on it, but the meat didn't have the richness I associate with fajita meat. I know a lot of places finish their meat off with a dollop of butter, so maybe that was it. I will try this marinade with chicken, as well. It only marinated for 2 hours on the counter top and all of the flavors really came through. I did have to used onion powder because I didn't have any green onions. Easy to prepare!

Southwest Chicken Quesadillas

Mmmm! This quesadilla was really good! I only made one, so I just eyeballed all of the ingredients. I left out the salt (really doesn't need any with all of the great flavors). I added sauteed peppers and onions to the mix because I love veggies in my quesadillas. I may reduce the heat next time because at 450 my tortillas started to brown on the edges, which I didn't care for. I had a hard time flipping this quesadilla, too. I ended up putting a dinner plate over top of it and flipping over the cookie sheet, sliding it back on the cookie sheet with ease. I just cubed some chicken breast that I grilled with Mrs. Dash Lime Fiesta seasoning rather than shredding the meat. This is an easy, quick recipe that I will use again, for sure.

Chipotle and Adobo Pickled Eggs

Very good! I would add more chipotle or adobo sauce to make these eggs spicy. The spice as-is is very mild. I still prefer throwing boiled eggs into left over pickle jars in the remaining brine for the perfect pickled egg, but these were nice for a change of pace.

Oven Fried Chicken III

I liked the idea of this, but the coating wasn't crispy at all. I even took others advice of using Panko. The mayo DID keep the chicken moist. Next time I crave fried chicken, I'll get KFC. But at least it was a heathier alternative!

Rice Balls a la Tim

I really wanted to like these, but they were just entirely too bland. I felt like there was too much rice and not enough seasoning. We ate them with extra sauce and hot sauce, but I would suggest to others to add plenty of italian seasonings and red pepper flakes.

Christmas Banana Bread

I didn't really care for this banana bread. It was very dry for my taste. I usually add sour cream to my banana bread to keep it moist. This bread also needed more bananas, in my opinion. It just didn't taste that strongly of banana at all. I did like the idea of putting chocolate chips into the bread. I left out the cherries.

Manicotti with Cheese

Very good! I left out the parsely and added fresh basil to the cheese mixture. I only boiled the noodles for 6 minutes so that they would stand up to being stuffed. They were perfectly cooked by the end of baking. I didn't have enough mixture to stuff all of the pasta, though. I had 4 tubes left over. I didn't use whole milk ricotta or mozz... I used part skim to save a few calories. Finally, 3 and a half 32-ounce jars of pasta sauce is entirely too much! I used 2 26-ounce jars of pasta sauce and it was still too much... and I like my pasta saucey! All in all this was a nice change from lasagna or spaghetti. I added ground beef and zucchini to the sauce to make it a little more hearty. Thanks for posting!

Red Chard and Caramelized Onions

Another delicious way to prepare this awesome veggie! I left out the olives because I didn't have any. I would add a little more brown sugar next time to balance the bitterness of the chard and lemon. I let my onions get really caramelized by leaving them on low heat for about a half an hour.

Marie's Easy Slow Cooker Pot Roast

Really easy recipe! I didn't change a thing except for adding crushed garlic and more veggies. It wasn't AS moist as I would have liked, but we still enjoyed it. I'm still on the look for the perfect recipe!

Aunt Jules' Balsalmic Chicken with Peppers

A nice change of pace from traditional stir fry soy sauce based sauce. It was a bit sweet for my taste, but that is the nature of balsamic vinegar (and brown sugar, of course). I loved all of the fresh veggies. We are on a low sodium diet so I really appreciated that I didn't have to use any salt to flavor this dish. Thank you for the recipe!

Southwestern Lasagna

We really enjoyed this change of pace casserole. I used ground turkey instead of beef, and mozzerella instead of Monterey Jack, because that's what I had. Everything else stayed the same. I would definitely double or even triple the cottage cheese mixture. There was barely enough for one layer, much less two. This was a good way to use up leftover corn tortillas, although for a casserole it was rather time consuming. I made my own enchilada sauce (10 minute enchilada sauce from this site) as well. Thank you for the recipe!

Pico De Gallo

Great! I agree with the majority, however... it tastes even better with fresh lime juice, fresh garlic, and more cilantro. I served this with Fish Tacos from this site. My boyfriend ate the remainder of the pico de gallo with tortilla chips.
