Delicious, moist chicken! I, too, used a whole chicken, and because it was 7.5 lbs, I baked it at 350 for about 2.5 hours. I used "I Can't Beleive It's Not Butter" (the light version). Next time I will use more lemon, and leave the squeezed lemon halves inside the bird for more lemon flavor. I will also add the spice mixture inside the bird as well (I couldn't taste it much because we don't eat the skin). This was one of the moistest chickens I have ever eaten! I did have to tent my chicken with foil because the skin browned up almost to the pointof burning. Thanks so much for this recipe!
