Dill Pickle Meatloaf

This was a really unique meatloaf! I, too, doubled the sauce. I was out of Worchestershire sauce so I used soy sauce instead. My only complaint is that every few bites you get a mushy bite from the bread. But that could be remedied by using bread crumbs or crushed crackers instead. Thanks so much for this!

Coconut Curry Tofu

Really great curry! Here's a tip for firmer tofu... I placed the block of tofu between two dish towels (not terrycloth) and pressed gently to get some of the excess moisture out. I cut the tofu into 1/2 inch thick blocks, then cut into triangles. I then heated a nonstick pan over md-low heat, and put in the tofu. I gently pressed the tofu so the rest of the water evaporated, and let it get golden brown, then flipped it and did the same thing. This takes a while, but you get a nice skin on the outside that won't allow the tofu to fall apart. I also thickened the sauce with a bit of cornstarch, as well as added some bamboo shoots that I had leftover from another recipe. The end result was healthy and great! The light coconut milk is much better for you than regular.

Tilapia Soft Tacos with Chipotle Cream

I didn't use the chipotle cream sauce for these, so my five stars go entirely to the tilapia. SO good! i didn't alter a thing and the fish turned out so tender and flavorful! I used corn tortillas instead of flour and I used the white sauce from "Fish Tacos" from this site to top. Delicious and healthy!

Sausage, Peppers and Onions

Couldn't be easier and the results were fantastic. I didn't slice the links, but cut them into 2 inch chunks so we could have these on sandwiches. Because of this the sausage took longer to cook. Thanks for this simple recipe!

Spicy Sausage Quiche

Awesome! I added a layer of sliced mushrooms and salsa. I also put the cheese on the top instead of in the middle. I prepared this the night before, refridgerated it, then heated it for about 45-50 minutes at 375. Absolutely delicious!

Garlic Red Potatoes

Vegetable Pasta Salad

I left out the ham, and it still turned out great! My seester almost ate the entire bowl! She gave it 5 stars, but I didn't adore it as much as her, nor did my boyfriend. It was great, but just not Wow. I will make it again and again for my seeeester.

Roasted Garlic Soup

WOW. Took a long time to prepare but the end result was worth every minute. I cut the tops off of the garlic bulbs, placed them in aluminium, then drizzled with olive oil and wrapped them tightly. 45 minutes at 350 was perfect. I, too, used one large leek, pureed, then added Silk brand soy milk instead of heavy cream at the end. It was perfect this way! Delicious soup, and my house smells wonderful!

Chicken with Herb Sauce

Very good recipe! The chicken was moist and flavorful. I was really excited to make this dish because I had just bought a basil plant, parsely plant, and chives plant! How perfect! I served this over minute rice.

Chicken Broccoli Ca - Unieng's Style

Wow, this was great! I didn't have any oyster sauce, so I used fish sauce instead. It was quite salty, however. Next time I will use low sodium soy sauce. I also separated the bok choy stems and leaves, adding the stems in with the broccoli and the leaves at the very end to ensure even cooking. Thanks for this one!

Easy Marinated Pork Tenderloin

This marinade was good! I didn't have dijon honey mustard, but used plain honey as well as a stoneground mustard with horseradish. It was perfectly cooked. Although we liked this a lot, i am still iso the perfect pork marinade.

Easy Olive Oil, Tomato, and Basil Pasta

here's a tip i got from foodnetwork: marinate the tomatoes in the basil, garlic, and olive oil, along with balsamic vinegar and fresh mozzarella at room temperature for a couple hours. this really gives the tomatoes powerful flavor!

Best Yet Turkey Chili

We moved into a new apartment a few days ago, therefore the only thing we had in the freezer was ground turkey, but had plenty of canned goods in the pantry, so this recipe fit our needs. I left out the green pepper and added a chopped yellow onion. I only had a 15 oz can of black beans, so i added a 15 oz can of kidney beans, and drained and rinsed both to get rid of the high sodium content. I added a splash of low sodium chicken broth to make up for the liquid lost from the beans. Upped the spices as suggested, except for the cinnamon which remained as just a pinch. The recipe does state "a pinch, or to taste", so not a deviation. I did add a pinch or two of corn starch to thicken the sauce a bit, as we don't like our chili liquidy at all. We served this over rice and it was great. For the ease of preparation, I give this 10 stars!

Lots O'Veggies Sausage Spaghetti Sauce

Delicious! I used sweet Italian turkey sausage and ground turkey to make it healthier. I only added in two cans of the diced tomatoes, but used a 15 oz can of tomato sauce as well as some tomato paste to thicken it. It would've been too watery without the sauce and paste. I used fresh spinach rather than frozen. It makes a ton for two people, so I froze 2/3's of it. Thanks for the recipe!

Tejano Style Shrimp Cocktail

Amazing! I looove this recipe. I didn't change one single thing about it and it turned out great. The amount of spice was perfect for me, but of course you could add extra peppers for more. We just ate this with a fork right out of the bowl. Next time I am going to add avocado as someone suggested.
