Oven Baked Jambalaya

This dish is delicious! I was trying to recreate the jambalaya from this awesome fusion restaurant in our neighborhood, and although it's not identical, this recipe is a home run. I cut the recipe in half and it was dripping over in the oven in my 9x13 dish. I even left 1cup of the broth out! Mistake, too, because once the 90 minutes was up my rice wasn't quite done. So I added the cup of broth I had omitted and cooked another half hour. Fixed the problem! The amount of spice was right on... Definitely use andouille! I used Tony Cacheries Cajun seasoning. Next time I'll omit the shrimp as they are expensive and I could've done without them. All in all this will definitely be a repeat! Thank you for this one!

Hungarian Cucumber Salad

Precisely what I was looking for! I had this type of salad in the Czech Republic and fell in love. I've tried many recipes, but this is the one that comes closest to what I remember. I think the oil is the trick!

Basic Chicken Salad

This is a great base for chicken salad. As is, it was a bit bland for me, thus the four stars. I added more black pepper, diced onion and some celery salt. Afterwards it was five stars! Served on top of sliced radishes for a low carb late night snack.

I don;t know what I did wrong, but these were not good. They were really heavy... tasted like spiced up balls of flour. Won't be trying this again.

Avocado Shrimp Ceviche-Estillo Sarita

This was really good! I had the same problem as others with the shrimp not cooking fully in an hour, so I took the whole thing and simmered it for about a minute. This fixed the problem. Maybe if you let the shrimp sit overnight like others suggested, the shrimp would cook through. The flavor was nice, though!

Black Beans and Rice

Fabulous! Easy to prepare, perfect amount of spice, and HEALTHY! 3.5 cups of beans is equal to two 15 oz cans. I only had one can of black beans, so I used a can of kidney beans as well.

Spicy Turkey Burgers

These were really good! A little bland, but nothing that upping the dill and hot sauce can't fix. These were are a great light dinner on multigrain English muffins. I made them into 5 patties, and with lettuce, ketchup and mustard, I estimate a whole sandwich is 300 calories. Can't beat that!

Sauteed Portobellos and Spinach

Roasted Garlic Zucchini and Tomatoes

Outstanding! I made this exactly as intended and it was fabulous The perfect amount of spice. I did use a smaller baking dish so I had to stir the veggies and increase the baking time. I will make this over and over in the summer!

Cha Cha's White Chicken Chili

Fantastic! The other reviewers are right... this stuff is spicy! But that is exactly how we like our chili. The chicken broth I used was very low sodium and organic. I love that this recipe doesn't call for salt, and it doesn't need it! I like a thicker chili so I cut down on the broth and added a tsp of corn starch to thicken it up. I also used two fresh jalapenos instead of the canned chilies. I think that it's the cayenne that makes this dish so wonderfully spicy! I also added a can of Rotel tomatoes and a can of regular diced tomatoes. For the beans I used cannellini, Great Northern, and pinto. I added some chopped cilantro at the end. I will definitely make this again! Thank you for sharing!

Oriental Cold Noodle Salad

Great noodles! I used thin whole wheat spaghetti instead of the soba, and added some broccoli coleslaw (without dressing) and thinly sliced red peppers. Sesame seeds would be a great addition. I spiced it up even more with some Hunan chili sauce.

Thai Chicken Balls

Phenomenal! I cut the recipe in half, and instead of the sweet chili sauce I used part Sriracha and part honey (heavier on the Sriracha). SO delicious! My boyfriend loved these meatballs. A definite keeper! Thank you so much for posting.

High Temperature Eye-of-Round Roast

This was delicious! I didn't keep it in the oven for the whole amount of time because I was worried about overcooking the roast. After I turned off the heat I only kept it in for about an hour. The inside was pretty red when I took it out, which is fine for us, but next time I may leave it in a little longer to get on the pinker side of red. I served this with Horseradish Sauce from this site and it was delicious. Tender and juicy!
