My 9 year old said I should make this soup every week. We all (husband & 3 sons) LOVED it! I made a couple changes but they in no way changed the integrity of the recipe. We don't keep beer in the house so I used an entire container of chicken stock. I used canned chicken (so yummy!) and just added it to the soup for the last 15 min to heat it through. I wanted it to be more soupy so we could sop it up with our cheddar biscuits so I added extra tomato sauce. I buy taco seasoning in a large container instead of the taco packets - so I just eyeballed it. I used Rotel tomatoes. ALWAYS USE ROTEL in my Mexican recipes. I put all the left overs into a 3 pint mason jar filled to the top. By evening - - when we usually get popcorn or a bowl of ice cream - everyone got more soup. The was barely any soup left. Will make this again and again! thank you Patti!!
