Left Over Spaghetti Lasagna
Followed ingredients exactly. I used leftover spaghetti. I added a little extra sauce (from a jar) because the leftover spaghetti seemed too dry. This made the final product a little too wet. I didn't take into account that the sour cream & cottage cheese would add additional liquid. I kept the dish loosely covered with foil for half the baking time because I don't like for the cheese to get overly browned too quickly. I uncovered it for the last 20 min. Everyone loved this dish and had seconds. Although we all loved it... I feel like it needs a little more seasoning. Next time I think I will mix in some Italian seasoning, salt and pepper into the cottage cheese mixture. Great way to use leftover spaghetti. I think I will start making extra spaghetti ON PURPOSE and put in freezer so I can make this dish the following week.

Mexican Style Shredded Pork
Prep time 15 min? NOT FOR ME! I used a 3# boneless pork SHOULDER roast and it took me over 25 min just to cut into 2" pieces. Maybe because I always trim all the fat off which takes some time. I don't go real fast because my knife is super sharp and I have learned the hard way - so... maybe its 15 min if you don't cut off the fat or if you are quicker than me. Anyway - - very good flavor. Hubby and all 3 sons all gave it 2 thumbs up. My youngest had 3 servings. Next time I will not shred it prior to serving. But I will shred up the leftovers to have pork tacos or burritos later.

Oven Roasted Parmesan Potatoes
Yum!! Totally kid approved. Since I feared the cheese might get over cooked before the potatoes were tender enough... I cut the small red potatoes into quarters and tossed them generously in all the topping and then put into a greased pan. They had a tendency to stick... so next time I will go in and give them a toss more frequently. Everyone ate these as-is. No sour cream or ketchup was required by the boys. 2 thumbs up!
