Skillet Zucchini

Reviewed: Aug. 28, 2013
I made the mistake of leaving my car unlocked and my neighbor filled it with zucchini so I thought I'd give it one last chance. Bad idea.

Stuffed Green Peppers

Reviewed: Jul. 24, 2013
I followed the recipe exactly and they were very good. I modified the procedure slightly, however, cooking the peppers in my microwave oven for 4 minutes instead of boiling.

Brown Sugar Meatloaf

Other than scaling this down for 1 lb. ground beef I followed it precisely. Excellent taste, didn't fall apart.

Szechwan Shrimp

Reviewed: Feb. 16, 2013
I followed the recipe precisely and served the dish over white rice. It was excellent however the sauce thickened too quickly and the sauce became pasty. Next time I will cut the corn starch in half.

Sweet and Sour Sauce I

Reviewed: Jan. 14, 2013
I've made this before and liked it. This time I use a sugar substitue and it was just as good. Also used orange juice instead of water.

Emily's Pickled Eggs

Reviewed: Oct. 7, 2011
These were good but a bit mild for my taste. Whenever I finish a jar of pickled beets or jalapeno rings I pack it with eggs. The jalapeno ring juice makes great, snappy ones but the ones made in the beet juice are great too. No heating required. Ready in about four or five days. Easy and, except for the eggs, free.

Baked Coconut Shrimp

Reviewed: Nov. 19, 2010
I made a half-recipe using one whole egg. Turned out great. Made the maralade dip mentioned in another comment and also tried Yoplait Pina Colada yogurt. Both dips were excellent with these however the yogurt let the full flavor of the shrimp come through. Although this deserves 5 stars as-is, I'm going to try substituting powdered ginger for the cayenne pepper when I make this again next week. Girlbob, thanks for sharing this!

Linguine Pasta with Shrimp and Tomatoes

Reviewed: Jan. 12, 2010
Excellent! I cut this in half. Browned a sliced habanero sausage with the olive oil, tossed-in the shrimp until pink, then removed sausage and shrimp to a bowl. Added wine and a can of chopped tomatoes with basil and oregano to the pan. Reduced this while pasta was cooking. Just before pasta was finished I tossed-in the shrimp/sausage and butter. Oh wow. I was going to save half for tomorrown night but couldn't stop. Thanks!

Hoot-n Holler Baby Back Pork Ribs

Reviewed: Jun. 30, 2009
These are great. Here are a few suggestions: 1. Peel cavity side to expose fat. More fat will be boiled away. If rack is thick, simmer for a full hour. 2. Formulate witch's brew with beef bouillon and spices to make beef stew. After boiling ribs, chill liquid, skim fat, and prepare stew. 3. Cut ribs in 2-bone sections, paint with a variety of sauces and then refrigerate or freeze for serving as hors d'oeuvres or small meals later. 4. Painted sections carmelize nicely on grill, under broiler and even in the microwave. Sometimes I sprinkle a little bourbon on them.

Slow Cooker Turkey Breast

Reviewed: Nov. 28, 2008
I followed the recipe with two minor exceptions: After washing and patting the 8lb breast dry I wiped it with the wrappers from two quarters of butter so the soup mix would adhere and then sprinkled the breast with celery seed. The fork-tender breast cut very nicely. The drippings, in conjunction with the gravy packet that came with the breast and some thickening, turned into a LOT of flavorful gravy. Much easier and probably more energy efficient than roasting in the oven. I'll definitely do it this way from now on.

German Currywurst

Reviewed: Jan. 17, 2007
Good, but I like it better the easy way. Brown a brat, put lots of ketchup on it, sprinkle a teaspoon of curry on it, and continue heating until bubbly. My favorite curry for this recipe is by Spice Hunter.

Zesty Hominy and Cheese

Reviewed: Dec. 6, 2006
I've made this for years but my recipe is slightly different using 4 cans white hominy, small can green chillies, small can sliced black olives, 1 pt. sour cream. These are mixed in a 14 X 7 pan and topped with the cheese.

I followed this to a "T". cut potatoes into 1/4" - 3/8" cubes. They definitely were not done. I recommend par-boiling them.

Modenese Pork Chops

Reviewed: Nov. 13, 2006
Living alone I halved the recipe except for the garlic. Only cut the wine by about 25%. Added a can of mushrooms for the last 5 minutes of simmer. Served with buttered carrots seasoned with thyme and a glass of the wine used in the recipe. My nicely marbled boneless loin chops were moist and tender. The sauce is likely the nicest things you can do to a can of mushrooms! Looking forward to eating the other chop tomorrow night. Thanks, Stephanie.

Followed recipe exactly. Nice appearance but I can think of better things to do with pork tenderloin. Probably better with fresh herbs.
