Caramelized Onion and Horseradish Smashed Potatoes

Pork Carnitas with Cilantro Tomatillo Sauce

We really liked this. Pork Tenderloin was on sale, so I took advantage of that and it was delicious and tender in this recipe! I reduced the chili powder to 1 teaspoon and that was plenty for us. I did not use the chipotle as I'm not a fan. I used a tablespoon of fresh garlic also. The tomatillo salsa is amazing. I added a 1/2 teaspoon of freshly minced garlic to it and served this on flour tortillas instead of the corn. Be sure to get a good sear on the pork it really adds to the flavor! Next time I make this I will double everything. There wasn't enough!! I think this would great over rice too. Thanks for a delicious recipe!

All American Roast Beef

The cooking process was spot on! I had a 3 pound bottom round roast that I took out of the fridge several hours before I was ready to cook. It is important to let your roast get to room temp before cooking to ensure even cooking throughout. I cooked for 20/mins per pound at 375 degrees and it was a perfect 120 degrees when I took it out of the oven. I wrapped in foil and let sit for about 20-30 mins until I was ready to serve it. I gave this 4 stars because of not enough seasoning. I doubled the seasoning and it still wasn't enough. Next time I will use more salt and pepper, fresh garlic, and thyme and make a paste to rub all over the roast. I will wrap it in foil and refrigerate overnight to get more flavor into this roast. This is a tough cut of meat, so be sure you have a very sharp knife or an electric one to slice very thin. It is wonderful! Thanks for the great cooking technique!

Penne with Pancetta and Mushrooms

This has excellent flavor, however 1/2 cup of cream was not enough. I used 1 cup. This helped to cut the saltiness from that much pancetta and parmesan and helped the overall flavor of the dish. Very good. Thanks for sharing!

RITZ Humble Pie with Peanut Butter Mousse, created by Serendipity 3

We were surprised the Ritz crackers made such a tasty crust that held together nicely! I omitted the peanut butter from the crust. I also cut the peanut butter in the filling in 1/2 and I made my own whipped cream. I did not like the peanuts in the pie. I would omit them if I made this again. I made this in the food processor which made quick work of mixing everything together so the filling wasn't grainy from the sugar, but even with cutting down the peanut butter by 1/2 I felt this was very peanut buttery, so I made a chocolate sauce and that helped tremendously! The pie held its shape nicely after spending a few hours in the fridge and topped with chocolate sauce and homemade whipped topping we were able to cut down on the strong peanut butter flavor and enjoy it. If you love peanut butter this is the pie for you!

Oh my!! These turned out perfect!! We loved them and gobbled them up!! My husband doesn't really like caramel, so I left the sauce off a couple and then I noticed he bypassed the sauce-less ones. Champagne Sorbet with Berry Medley

Thank you for a unique recipe. I made this as the recipe states, and I also made a batch where I pureed the strawberries and added them to the champagne and sugar. I also added a pinch of salt and a little more sugar to my liking. We preferred the later, but this does make a great addition to a celebration!

White Chocolate Raspberry Cheesecake

Very good! Thank you for a wonderful recipe! I used the raspberry jam to avoid having to strain the seeds out. It was delicious. I also followed the water bath instructions. Baked for 60 minutes and turned off the oven and let it sit in the oven for another hour. Beautiful and delicious.

Pecan Pie Bars I

Love it! I followed the recipe except I use butter instead of margarine, and I added salt to the topping. Be sure to use the proper sized pan and these will bake up nicely in 25-30 minutes. I recommend lining the pan with parchment paper and allowing the parchment to hang over on all sides for easier cleanup and no problems with the bars sticking. The shortbread crust is amazing with the pecan and caramel topping! Delicious!
