Jalapeno Popper Mushrooms

Amazing! I used 6 large white mushrooms and cooked the mushrooms stems, garlic, and jalapeno in the bacon fat instead of olive oil. I will make this again and again. I love that it is low carb too! Thanks for a winning recipe, CookinBug!

Hot Corn Dip

Fantastic! I cooked this in a cast iron skillet and it only took about 10 minutes. I topped it with some cheddar cheese and put it under the broiler to melt/brown the cheese. I also used frozen white/yellow corn kernels and garnished with some tomatoes, cilantro, and green onions. I also cut the recipe down by half, but even if I had made the whole thing, I'm certain it wouldn't have lasted long. It was a big hit!! Thanks!

Delicious! The vanilla really adds a nice touch. I gave it 4 stars because the vanilla was a little strong. I reduced it to 1 1/2 teaspoons the 2nd time I made it and it was spot on (for me).

Split Pea Soup

This was just okay for us. I wasn't a fan of the carrots in the soup. I think the carrots made it the unappealing color. I have a pea soup recipe I have made for years that doesn't have carrots and the color is much nicer.

Italian Sausage Deep Dish Pizza

This was very tasty. I found pre-baking the crust worked better for us. The crust is soggy if you don't prebake. I placed the pan with the dough in the oven while the oven was preheating for about 10 minutes. This recipe is great for a busy night. It is easy and fairly quick too.

Slow Cooker Chicken and Butternut Squash Stew

I made this recipe exactly as stated without the peppers. I subbed in some a teaspoon of chili beak chili oil and the heat was perfect. My problem with the recipe is the cook time. It is way too long. This was perfect after just 3 hours. With such small pieces of chicken and squash you should not have to cook it for 7+ hours! It ruins the texture of the meat and the squash and turns them into mush. After just 3 hours they were perfect and the flavors were distinctive and delicious. I wish I had gone with my gut and took it off the heat at that time. I rated the recipe as it is written. We did not like it overcooked and mushy. I recommend cooking this for no longer than 3 hours and then it's almost 4 stars for me. It smells great the first few hours of cooking too. I might try it again with the lower cooking time.

This was okay as written, but the sauce was missing something for us. I added cilantro and that helped a great deal and then grated some fresh ginger into the sauce and that gave it the depth I craved! Great base sauce. I love how thick and sticky it is!

Apple Chips

Delicious! I served with a homemade salted caramel dip. I gave this 4 stars because I had to bake longer than stated. I baked at 225 for about 2 hours total and they came out nice and firm. I flipped them over halfway through. I used parchment paper so there wasn't any issues with sticking. I used the mandolin to slice them and left the core to keep the pretty star shape in the center.

Delicious! I didn't have walnuts, so I used pistachios I had on hand. I left out the raisins/cranberries (personal preference). I also reduced the recipe by 1/2, but this is so good I would be inclined to make the whole thing and jar it up for gifts. Thanks for a great recipe!

Delicious. Perfect for summer. I made my own raspberry vinaigrette and added the mango to it in the food processor. Yummmm. I was fresh out of hazelnuts, so I used pine nuts I had on hand.

I made this exactly as stated in the recipe. It was good as is, but lacked a little flavor for me. To give a little depth to this dish I sauteed up some fresh garlic and thyme and added it. This addition made it more flavorful for me. I love, love, love how easy this is to make!

Strawberry Cinnamon Oatmeal Cookies

These cookies are very good. The strawberry flavor came through deliciously. Be sure you use strawberry yogurt SPREAD as stated in the recipe - Brummel and Brown has a good one. I'm not sure I like the olive oil in these. I am going to try making them again with vegetable oil or maybe coconut oil to see the difference, but I do recommend giving these a try. They weren't too sweet either. I think if you are finding them too sweet it might be a result of using something other than the yogurt spread. I think using the spread is key to getting these cookies just right. I love how they have a little crunch but at the same time they are soft and chewy. I HIGHLY recommend adding white chocolate chips to these. It really brings out the flavors and be sure to add at least a 1/2 teaspoon of salt to the dry ingredients.

I made this with sour cream the first time and we really loved it. I added sun-dried tomatoes for a little more flavor. I wanted to try it with the creme fraiche, so I made it again. We preferred the tang the sour cream added for sure, so I'll be making it again and again but with the sour cream. I omitted the lemon as we didn't care for it in this dish.

Simple Beef Short Ribs

Fantastic! Thanks for a great recipe! I doubled the beef and used a 14.9 ounce can of Guiness and a full tablespoon of freshly minced garlic. It's even more delicious the next day!
