Chicken Noodle Salad with Peanut-Ginger Dressing

I doubled the sauce on this, per some other reviews, but left out the red pepper flakes and dialed back the chili garlic sauce a little (I didn't want it to be overly spicy for our toddlers). I left out the green onions and celery and used extra carrots and red pepper. My husband said it was nice that the raw vegetables added some crunch and balanced out some of the heat in the sauce. The kids were happy to eat the noodles and some carrots. Also, this did not save well for leftovers - the chicken became super saturated with the sauce and the texture was not good.

Rutabaga Oven Fries

These were just okay for us. It was our first time trying rutabaga. The flavor was good, but the texture did not meet our expectations. I followed the recipe, but mine did not crisp up at all, they had a limp and somewhat soggy texture.

Bean Soup With Kale

I like that this is a healthy soup that does not involve a lot of prep work. I also like the idea of thickening the soup with pureed beans, but using those beans for thickening only left a few in the soup. I would add in additional beans next time, especially since that is the only part my two year olds like to eat!

Slow Cooker Peach Cobbler

I made this recipe as written and it was okay, but did not turn out as I had hoped. The consistency was quite sticky and I felt there was too much sugar mixture and not enough peaches. It was nice to be able to prep dessert head of time and get everything cleaned up while it cooked, but overall I prefer other cobbler recipes that are baked in the oven.

Grilled Pineapple

These were great. I marinated them for about 1.5 hours and followed the recipe as written, other than not coring my pineapple (I find them easier to grill that way). I was worried about the hot sauce but we could not tell that it was there, it only tempered the sweetness, which made this a great side dish for kabobs.

Flash-blasted Broccoli and Feta Pasta

I made a half recipe of this for my family and it was the perfect amount (no leftovers!). I left out the onion because we do not care for it, I used pre-diced tomatoes instead of chopping whole ones, and chopped my spinach a little so the pieces would not be large. I did not measure the feta, just sprinkled on what seemed to be a good amount. I think next time I would increase the amount of broccoli in this dish.

No-Bake Peanutty Graham Treats

I made these exactly as written, using Golden Grahams for the cereal. The flavor was good, but the majority of the marshmallow/peanut butter mixture sunk to the bottom of the pan, making the bottom of the bars extremely sticky. A nice alternative, but a tad messier than the standard rice crispy treats.

Greek Lemon Chicken Soup

I made this a couple days ago when we really needed to go grocery shopping so I didn't have much on hand. I did have enough to make recipe though, which was great. I served it with some leftover naan that needed to be used up. I did not have onion or celery (we honestly don't care for them anyway) so I used extra carrots instead. I used the full amount of egg yolks called for. I probably had a bit more rice than called for, as I had some leftover from a previous dinner and I just put rice in our bowls and poured the soup over the top. It was easy, filling, and my husband said he liked it too.

Lemon-Lime Mousse

This was tasty and fairly easy to make. To us, it tasted similar to key lime pie filling. Texturally we felt this dessert needed crunch, so we ended up dipping graham crackers in it and that worked well for us.

Lemon-Parsley Green Beans

This was a good accompaniment to our greek-style kabobs. I skipped putting the beans in ice water and did not saute them quite as long as called for, as we prefer a crisper bean. I liked the combination of fresh lemon and parsley.

Swiss Chard, Sausage, Pasta, and Bean Casserole

Delicious! I left out the onion because we don't care for it. Also I realized too late that I did not have a tomato and all I had was a can of tomatoes with garlic, basil, and oregano seasoning. I drained the can of tomatoes and used the whole thing and really liked the results. Everyone liked this meal, including my husband and my picky toddlers.

Yummy Lemon Salmon Burgers

These were pretty good, they were moist and held together well. The lemon flavor was there, but not overpowering. I used the boneless skinless salmon in the sealed pouch from Chicken of the Sea and it was very easy.

Chicken and Gnocchi Soup

This was just ok for me. I felt like the celery flavor ended up being pretty strong and I wasn't a fan of that. Also I tore the spinach before adding it to the soup but chopping it fine would have worked better.

Vegan Avocado Pasta with Blackened Vegetables

I really enjoyed this dish; it feels very fresh and bright. The sauce coats everything nicely but does not feel heavy. When the warmer weather finally arrives I would like to have this for dinner on my patio. I doubled the broccoli because mine seemed a little on the small side and left out the onion because we don't care for it. My vegetables only took about 20 minutes to become blackened. This is a great recipe, even for meat eaters!

Steak Tacos with Spicy Yogurt Sauce

When I made these I forgot to pound the meat thin before slicing, which I definitely recommend doing because without it the meat was kind of tough (not the recipe's fault though!). I was unsure about using dill in the sauce but I did it anyway and it turned out very tasty. I only made half the amount of yogurt sauce called for and it was plenty for us. I also swapped out the onion for chopped tomato because that is what we prefer.

Black Bean and Corn Quesadillas

I really liked these and my picky toddlers ate them too. I added chicken for my husband, but I personally think they are just as good without it. Next time I will get a little sour cream to serve with it.
