Lumps of Coal

I made this for my extended family and it was very well received. I thought the flavor was similar to cookies and cream ice cream. Our only complaint is that these were dense and more difficult to cut into squares than we thought it would be.

Healthy Creamy Mac and Cheese

I made this as written, but without the nutritional yeast because I did not have any on hand. I liked it, but my kids wouldn't touch it (not sure why, they had no idea it was cauliflower!) and my husband said it was just ok. The flavor and texture are light, although not quite mac & cheese-like. I don't think it was the recipe writer's intention to "hide" the vegetables, and if that is what you are looking for, I don't think this recipe will help you do that. The flavor and texture of the sauce is not close enough. However, if you like cauliflower and are looking for a lighter and healthier version of the classic recipe, this is a good one to try!

Best Brownies

My daughters and I made these today for their third birthday. They were easy to make and the kids had fun. We made this recipe as written. The brownie itself was pretty good, had a nice texture and flavor. The frosting had good flavor, but was dry and crumbly after settling down on the brownie. We found these to be very chocolaty and rich, a little piece was perfect! I think I would prefer these without the frosting or maybe with a different frosting recipe.

Slow Cooker Chicken Chili

This was tasty and easy to make. I had a little extra black beans in mine, as I had some I wanted to use up. As per the Cook's Notes, I used plain greek yogurt instead of sour cream and it worked out well.

Best Chicken Salad Sandwich

My husband and I both enjoyed this. I don't care for celery so I left it out and used extra apple in its place. Next time I would use less cranberries and more chicken. The canned chicken was easy, but roasted or boiled fresh chicken might be tastier. I really liked how light this salad was and was not weighed down by a lot of mayonnaise.

Chicken with Barley Soup

This was pretty good and simple to make, without any really expensive ingredients. I don't care much for celery so I used extra carrots in its place and added a little celery seed to the soup instead.

Mediterranean Farfalle

Kids and husband were happy, so this recipe really worked for us! The recipe did not say so, but I drained the chorizo after cooking. I also thought the olive oil/red wine mix would add too much oil overall to the dish, so I only used about half of it and it was perfect for us. I would like to add more vegetables to this dish, so next time some spinach and perhaps red peppers will be added.

The flavor of the sauce was good, however, the meat was not tender at all. Also, even though I did grease my pan, some marinade still burned to cinders and was difficult to clean up.

Nancy's Baked Spaghetti Squash

We are not big fans of onion, so I only used half the amount called for. I still felt like there were too many onions for how much squash and tomatoes there were, but maybe that is only the opinion of someone who feels the way I do about that ingredient! I also think more squash is needed to match up to how much tomatoes and sauce there are. If I were to make this again, I would use 2 squashes instead of just one (and then also a bigger pan to fit it too!) I have some leftovers in the fridge that I am planning on mixing with some pasta, as I think the flavors would go great as a kind of pasta sauce.

Slow Cooker Fresh Vegetable-Beef-Barley Soup

This turned out to be more of a stew than a soup, which I actually personally prefer, but if you want soup you will need to add more liquid. I made this as written, although the only tomatoes with garlic I could find were fire-roasted, but it still worked out well. This was great to leave in the crockpot all day Sunday while we worked outside and then come back in to a warm meal. I served it with Cheddar Cheese Muffins from this site. The leftovers re-heated well.

Cheddar Cheese Muffins

A good muffin, really easy to make, with good texture and taste. The cheese flavor was there, but not too strong, which worked for us. I served this with beef vegetable stew, but I think they would go well with chili and other dishes as well. The extras stored well in a Ziploc bag for 3 days and did not dry out, which is great so that they could be happily eaten over a few days time.

Slow Cooker Spaghetti Squash

This worked very well as an alternative to baking spaghetti squash. A nice idea for if you are going to be out of the house for a while and want to cook something with the squash when you come home, or if you simply don't feel like using your oven. I cooked mine for the full 6 hours and it turned out perfectly tender.

Slow Cooker Cranberry and Muscadine Pork Roast

I liked the flavor of this roast, plus is was really easy to put together. The cranberries soaked up the wine and went nicely with the pork. However, I am not sure if I did something incorrectly because the meat was very dry so the texture was not too pleasant. I served this with mashed sweet potatoes and broccoli. Taking a bite of the pork along with the sweet potato actually worked very well to add some needed moisture and the flavors complimented each other. If I make this again, I might leave just a little bit of the fat and see if that helps keep some moisture in the meat.

Quick and Easy Chicken Taquitos

I would love to give this recipe 5 stars because the flavor is spot on. The filling tastes similar to the stuff you get in the frozen aisle, except even tastier and a lot more fresh! I followed the recipe exactly, using shredded rotisserie chicken to save time. However, I had a problem with the sides of the tortillas splitting. In my first batch, the sides of every taquito split open, although luckily the contents stayed mostly intact. I made a second batch and doused them with cooking spray this time, and I still had 80% of them split on the sides during baking. While they were still tasty, this was a presentation issue, as well as a little bit of a texture issue with the exposed filling becoming a little dry. Next time I will try flour tortillas to see if that helps.

Basil-Avocado Chicken Salad Wraps

This made a very nice filling for my favorite multi-grain wraps. I don't like raisins and used dried cranberries in their place. To make it fast and easy, I used rotisserie chicken breast that I had cubed up the day before. This was great texturally; creamy avocado, crunchy walnuts, chewy dried fruit, meaty chicken. This had great flavor as well; savory and a bit sweet at the same time, wonderful freshness from the basil and a hint of tartness from the lime juice. What are you waiting for? Go make this now! :)

Butternut Squash Enchiladas

I was very excited to try these because I love butternut squash and it seemed like a wonderful idea to make enchiladas with them. But I really feel this recipe fell down in several areas (I followed the recipe as written except for leaving out the cotija cheese because I didn't want to buy some for just one recipe). The filling was severely lacking seasoning and needed a little more moisture. The way the tortillas were stacked and baked resulted in a dish that was difficult to cut and eat because the tortillas became dry and somewhat rubbery. The sauce ran everywhere and burned onto my pan instead of cooking with the enchiladas. I would make these again but with some pretty big changes: cube the squash, toss it lightly in olive oil and a good amount of salt & pepper, then roast it in the oven. Add in a few extra tomatoes and a little more spinach. Maybe even throw in some spices such as cumin or chili powder. Instead of stacking, put the filling inside the tortillas, roll them up, place in a glass pan, cover with enchilada sauce, then bake. I might also swap the goat cheese for cheddar, but really only to make it more appealing to my kids, who find goat cheese to be too strong.

Kids' Choice Healthilicious Pineapple Smoothie

I'm sorry but this recipe didn't work out well for us. We found it to be incredibly tart. No one really liked it much. I am not sure what went wrong because I followed the recipe, but my only thought is maybe because the fruit is not really in season right now, although the blueberries and pineapple seemed fine when eaten on their own.

Cardamom Maple Salmon

I really liked this a lot. My husband and kids were not as thrilled as me, but they don't enjoy salmon as much as I do, either. The flavor was great and it was easy to cook. I served this with soba noodles but I think rice would work better. I might reduce the oil a bit next time as well.
