Apple Orchard Punch

Chicken Pot Pie IX

Wow! Very impressed. I've been hooked on Marie Callenders pot pies and this is very close. Of course it doesn't have the extra flavorings like MSG and all so it's still not QUITE as good to me but I'll take this healthier dish waaay before the frozen unhealthy ones. I didn't used carrots or celery since I didn't have them on hand but honestly I don't think it would make a difference. If you have them great, if not then it's STILL great. I did chop up fresh garlic to saute along with the onion since we are garlic lovers and used celery salt instead of adding any extra salt to the dish. It was PERFECT. I've made pot pies before but the recipe always called for cream of something soup. I will NEVER use soup again! You can't beat the homemade broth from the chicken and making the gravy from scratch. It didn't take that long and this is something you could do in stages. You cook the chicken the day before and save the broth in a big jar and refrigerate and chop up the onions. That day all you'd need to do is make the gravy. It would take a max time of 15 min of prep and then cook time. Easy! :-D

Greek Chicken Burgers with Feta

I thought this was an excellent way to eat a burger in a more healthier way than red meat. I did add a little more sun-dried tomatoes and herbs and also some minced garlic but we are garlic loving family! Also instead of "folding" in the feta, I made two thin patties, added feta put the two together and mashed and pinched the sides together to keep closed. I didn't really understand the folding in thing. I would need to see someone do it to be know what they are talking about. I also used Tzatziki sauce on the burgers as a condiment. I will definitely make it again!

Mint Tea Punch

This was wonderful! I had tea that needed to be drank before we went out of town so I made this for dinner. The ONLY difference I did was add the fresh mint after everything was stirred together. I did NOT steep it with the tea. I don't know if I would like it any differently that way but I REALLY liked it this way. I also used no pulp orange juice. This will be a keeper for dinners with guests now. :-)

Zucchini Alfredo

WONDERFUL! I actually used classico alfredo sauce since I had it on hand. I also added more garlic and onions and mushrooms. I would have NEVER thought of doing this. I'm not vegetarian but a great meal for that too. :-) Thanks!!

Monte Cristo Sandwiches

This was great. It's not quite like Bennigan's but we don't have a bennigans anymore and this'll do. PLUS it's much healthier than bennigans. I did have to change it a tiny bit because of what I had on hand. I used sliced honey turkey breast, provolone cheese, which I think was better than swiss and I used cranberry chutney for dipping. I was very disappointed when I didn't have raspberry preserves but after tasting the cranberry with it, I'll never go back. It complimented the sandwich well. Thanks for the recipe!

Spicy and Cheesy Egg and Tomato Frittata

I made this a 4 because I added things I thought it needed, at least for my tasting. I like more flavors but this was a great base recipe. I did use half real eggs and half egg beaters. I added garlic salt, paprika, chili powder, basil and rosemary to the egg mixture. Not much of each but just enough to add some extra flavors. I added raw chopped onions and peppers after it had cooked in the pan for about a minute. Then I added some turkey bacon bits, mushrooms and then the cheese. Covered and cooked for a few minutes longer and then added the diced tomatoes with chilies. Was great!! Served with a dusting of cheddar and mozzarella cheeses.

Ziti Lasagna

The changes I made were as follows... 1 lb gorund turkey, 1/2 c. onion, 1 1/4 jar of Ragu mushroom/garlic sauce, 2 Tbs garlic powder, One 15oz container low fat ricotta cheese mixed with 1 cup Italian mix shredded cheese and a handful on top when it's almost done to melt. This was fast, easy and one of the best pasta dishes I've ever had. I only gave it 4 stars cause It needed more meat and sauce to go with that 2 cups of ziti. I HATE dry pasta. My hubby LOVED it and he is VERY picky. If you like Garlic and sauce, the way I made it is for you. :-)

Ellen's Buffalo Meatloaf

OMG!!! This was awesome. We have heard that bison was better for you and we've had burgers and they were ok but NOTHING like this!! I did NOT tell my family it was bison until after they told me it was the best meatloaf ever. They won't lie cause they don't want something made over and over if they don't like it, :-). I HIGHLY recommend trying this recipe. I did it ALMOST exactly. It seems a little to running before I put it in the pan so I added another piece of bread crumbed up. It was perfect! Thank you SOOOO much. I would have NEVER thought of using bison in meatloaf and now I'm gonna end up using it in tacos, burgers and anything else calling for ground beef. :-D

Banana Pudding IV

Great Recipe. I hate to admit it but it's better than my mom's. I would NEVER tell her that but this one is great. I did you 1 3.4 oz. box of instant vanilla and then 1 3.4 ox. box of instant banana cream pudding. I really like the extra banana creamy flavor. :-)
