Big Soft Ginger Cookies

I just made these cookies and can't stop eating them! These are seriously delicious cookies, and like other cooks, I found the dough a little too soft to form balls, so I added an additional 1/4 cup of flour and they turned out soft and amazing. Next time I am going to add orange juice in place of water and 1/4 tsp. cardamom and make a double batch to see how well they freeze. I highly recommend this recipe exactly as it is if you have time to chill the dough before rolling them into balls - otherwise, just add a little extra flour and you are good to go! I made them for my husband's lunchbox treat, but at this point, I'm not sure they will make it that far! Thank you for this yummy contribution!

Lemon-Garlic Rainbow Chard

This was so yummy! I think next time I'll add some sliced onion and sunflower seeds, but really - this is absolutely wonderful the way it is! I grow Rainbow Chard so this is going to be part of our regular menus from now on. Thanks for the submission!

Honey Of An Oatmeal Bread

We love this bread! I substitute 1 cup whole wheat flour, 1 cup white flour and 1/3 c. oat bran for the white flour. I also add a an additional 1/4 tsp yeast and 1/2 tsp sugar for a fluffier loaf. I use the bread machine and set it to "dough" and then form it into a loaf and put it in a loaf pan. Let rise for another 30 minutes and then bake. Easy and Excellent! Thanks for sharing!

Yummy Sweet Potato Casserole

YUM! I made this for Thanksgiving this year and even those in my family that don't like sweet potatoes loved it! I did add marshmallows in with the sweet potatoes and used Splenda brown sugar substitute. Amazing. Next time I make it I think I will try adding some crushed pineapple. Thanks for sharing!

Ragu No-Frying Eggplant Parmesan

This was really good! I grew eggplant in my garden this year. Hubby isn't fond of eggplant, but said he would eat it if I added some meat. So, I sautéed onion and green peppers from our garden with some ground turkey and added it to the sauce layer. I also used herbed breadcrumbs (also from our garden)to bread the eggplant. Turned out way better than I had imagined, and we will definitely make this one again! Thanks for sharing!

Rosemary Chicken

This was a great recipe! Chicken turned out moist and delicious. I did sauté the onions first and placed them on top of the chicken. I also cubed up potatoes and apples and put them on the bottom of the pan, adding the chicken and then the onions on top. Turned out beautifully, and the hubby says we need to make this a regular! - Miss Charlee

Collard Greens with White Beans

this was really yummy! Reminded me of something my grandma used to make when I was a little girl. Instead of using all the water I just use one can that I got from the canned tomatoes and it turned out wonderful thank you for sharing!

Roasted Acorn Squash Soup

This is so yummy and so good for you, too! I added 1 large, chopped Granny Smith apple to the veggies I sautéed and because I am allergic to milk, I substituted coconut milk for the half and half. It was amazing and is the perfect fall soup! Great after visiting the pumpkin farm and corn maze on a chilly October afternoon. Thanks so much for sharing!

This is so yummy and so good for you, too! I added 1 large, chopped Granny Smith apple to the veggies I sautéed and because I am allergic to milk, I substituted coconut milk for the half and half. Fluffy Pancakes

This is simply the best pancake recipe ever - whether you use it the way it's printed or customize it to make it your own! I cut the flour down to 3/4 cup and added 1/4 c. quick cooking oats, and 5 tsp. ground flaxseed. I also used one packet of Truvia instead of sugar and 2 Tbsp. olive oil in place of the butter. To make it full of fall flavor I added cinnamon and chopped raw apple. SO YUMMY!

Juicy Roasted Chicken

I loved this. Quick, easy and so flavorful! I added about a quarter cup of Bluemoon carmel apple beer (seasonal) to the bottom of the pan and put the lid on the roaster the last 1/2 hour of cooking and it was crazy moist and soooo yummy! The best part - the left overs were just as good the next day! Goes on my regular menu for sure.

Make Ahead Lunch Wraps

So Good! And a HUGE time saver. Sometimes I add jalapenos for a little extra kick. My guy is a soldier, so sometimes when he is on mission and I'm all alone these are the perfect solution to my, "I don't feel like cooking just for me" nights! Thanks for sharing.

Bread Machine Bagels

Wow! This was SUPER EASY to do and very yummy! I altered the recipe to make orange cranberry bagels for Thanksgiving day breakfast. I replaced the water with 3/4 c. orange juice and 1/4 c. water and warmed it up in the microwave before putting it in to the bread machine. I also added 1 tsp. cinnamon and 1/4 can cranberry sauce. They turned out AMAZING and left the house smelling so good! I served the bagels with home made apple butter and cream cheese whipped w/orange zest and sugar. My sweetie wants me start making them all the time!

Pumpkin Carrot Swirl Bars

Excellent! I was looking for something with a fall flavor to take as an after the race snack for an Oktoberfest 5K that I ran with my mother in law. These were perfect! I didn't alter the recipe at all. They weren't too heavy and the carrots and pumpkin were a perfect blend. My sweetie likes them best when they are straight out of the refrigerator. Even my niece and nephew who are under 5 loved these. Will definitely add these to my holiday baking list!
