Rhubarb Pineapple Chutney

There was a lot going on in this chutney, that made this recipe rather weird with an acidic flavor, overly tart and had way to much black pepper in it, that no one liked it at all and it was unpalatable. The smells were delicious to say the least, but the taste was not. There is a fine line about heat when it comes to peppers. There was some light back heat but overly peppery from the black pepper. SO sorry, won't be making again.

Strawberry Raisin Rhubarb Pie

Using a pre-made bottom pie crust and a rolled out pie crust for the top, the pie baked rather nicely. I followed the recipe for the filling as stated, but found that when my pie baked, it spilled out horribly every where in the baking pan I placed the pie on for spilling purposes. Even with 1 1/4 cup of sugar the pie filling was rather tart. Hubby didn't care for it...son and I agreed it was okay, we are not big on tart fruit pies, 2 of my 3 daughters said it was good with ice cream. Not sure if I will go all out and make again. Just because it was so so in my house. However, if you are a real big fan of Rhubarb, then it's probably for you.

Strawberry Fig Preserves

Followed Paula's instructions to a T in the cooking process. And it didn't disappoint not one ounce! I didn't want to do a water bath after I tasted the hot batch and knew instantly, it was going to be a hit with my kids. I can say, I never would have thought to use flavored gelation in preserves and being this was only 3 ingredients in a flash to perfection! What made this totally ridiculously sinful was baking off some puff pastry cut into squares, opening up the cavity slathering a dollop of Cool Whip's frosting (something I have never used before until this), warm preserves and topped with the 2nd half of the pastry square and eating like it is...OMGosh! talk about heaven. This unusual recipe for me was quite easy, tasty and affordable! My whole family loved it! Thanks again. It will be something I do with other flavors of gelatin!

Mamaw's Chicken and Rice Casserole

Surprisingly this was good and not one bit was left at the end of the meal. I know I was totally skeptical about all the cans of soup in this recipe. But it worked and it was delicious when it came out of the oven. No complicates were made at all. Will make again.

Beef and Blue Cheese Stuffed Mushrooms

I was truly disappointed. They looked so beautiful coming out of the oven. The taste however was another story. The blue cheese was really off putting and overwhelming. Out of a family of 6, 2 children gobbled them down as they liked them and the rest of us, couldn't get past the one. Soo disappointed. I'm willing to try the exact recipe again, but sub something different in the place of the blue cheese.

Banana Plum Bread

The bread to seem turned out well. It was slightly thick but not sweet at all. Could go up on the sugar just a tad. My fruit was very sweet and before I baked the batch of bread, however tasted a tad tart with the overall banana bread. I think The fruit needed to be minced a bit smaller or even pureed. Hubby and son weren't much of a fan but 2 of my children were. Totally needs some tweaking. If plum/pluot fruit left out, is a good banana bread on it's own, however needs to be sweeter.

Coffee Cake

this was very good and extremely sweet. Totally easy to make. My family loved it. I would put a finer chop on the walnuts. The walnut mixture was totally delish and the whole recipe turned out well. Felt the top was bare after it came out of the oven, so a little powdered sugar was a nice addition.

HERDEZ® Roasted Pasilla Pepper Chili

Hubby loved it more then myself, I thought it was okay. The cooking sauce flavor was different for me, however, it's worth a try in different preparations as well. Hubby asked that I make it again. But as is, it was to hot for my children. The recipe was totally simple to do and the ease of ingredients was great when you have most on hand all the time. I think I would love to try this with the Tomatillo Verde Cooking sauce next go around. TY

Beef and Broccoli Stir-Fry from Birds Eye®

Not a bad meal for the family. Ease of having a frozen selection of veggies already prepped and in the freezer, ready to go. It was rather quick, easy and ready in no time to fuss over. I've never bought stir-fry sauce and have made it myself in the past, so the ease of taking that step out, made it a lot quicker for me. I had to use the whole grain brown rice steamer pouch due to the availability of what the grocery stores offered. However, it was a decent recipe, totally on the fly...and quicker then making a hamburger helper. It was light and fresh. TY will make again

Chicken 'N Pasta Primavera

the family thought this was tasty for the quick fix of needing a super fast throw together recipe. This is a recipe to go to, if you want pasta with quick convenience right out of the freezer. Even though I love fresh veggies, it's a great sub for when you need dinner on the run. With shorter steps of a jar alfredo sauce, frozen veggies and you could totally add the convenience of pre-cooked chicken to boot to make it faster and skip the step of slicing and cooking your chicken (for time constraints)...however, the family enjoyed and was together in no time to fuss over.

HERDEZ® Mexican Cornbread

this was taste wise....spot on! Perfect with it being gluten-free. Hubby isn't much of a spicy corn bread person (a rather sweet cornbread eater).... I found it quite nice. I did find that the cornbread was held nicely around the edges but did crumble towards the center cut pieces. Possibly needing an egg as a binder. However, the flavor and moistness was great. Next time I'll mix in 2 eggs and see if I can get clean cuts all the way from pan to plate. I will make again. It's a keeper.

Toasted Quinoa Granola

I like quinoa but didn't care for this one to much. Even though it was easy to put together, I had problems with picking the tiny seeds out of my teeth and it didn't make it enjoyable to eat and the flavor wasn't that great. I felt it was too small for granola the way it was and personally, we weren't crazy about it. Sorry, won't make again.

The recipe was quite good, my SIL was so thankful when I gave her the batch I made. My husband and I just loved the flavor. And will make again. Super easy recipe and very quick to throw together and bake. I'm trying the next batch with agave. TY

Carrot Cake Oatmeal

This turned out FAB-ulous!!! by far awesome. I have to thank some members on the forum for help with locating some recipes for my vegan/vegetarian SIL and celiac MIL. I prepped this recipe for a road trip vacation with the family...so it was easy to assemble, easy to follow. And totally easy to make. This was a total hit with myself, my inlaws and one of my kiddo's....the flavor just popped, the fruit just tantalized the taste buds, it needed just a tad bit of sugar in my bowl, but no butter was needed, and used a coconut milk non-dairy based yogurt to top with the pecans.....It's going to be a staple. It was just raving good! I can't say much more on how excellent it is and turned out. TY TY!!!

Southern Grits Casserole

Didn't change anything in this recipe. Was a test run for a huge family gathering coming up and my sister makes a version of this. However, her eggs are scrambled but added to the mixture raw and then baked. We liked the recipe very much and even when it got cold. The only thing negative I might add, is that I could have reduced the butter on the last step to half the amount it suggested. Because it was slightly oily. I used an 8x10 baking pan but could easily used an 11x13 because the ingredients were to the brim of the baking pan. It was nice to fix on the whim and was a great dinner when I didn't want to have anything traditional ;-) It's keeper.

Refreshing Watermelon Lemonade Slush

OMGosh!!! this was the best summertime drink this season ;-) I had soo much leftover watermelon from the 4th of July, that I didn't want not one piece to go to waste!! Froze up a cup to a cup & a 1/4th in individual baggies and waited ;-) Had to make my own drink mix with unsweetened drink mix and sugar and followed the recipe like stated. I ended up adding a TBSP more because I believe the pre-made stuff is more concentrated then mine...but however, it took all of a couple of minutes to pull things to one stop and whip in a matter of seconds...TY TY TY this was the best, now I can make it with a moments notice on the fly! YUM!!!!!

Blueberry Oatmeal Cookies

This recipe will be a remake & a tweaked. Easy recipe to follow, quick to put together. However, after I mixed everything, the blueberries looked like there wasn't enough in the recipe. So I added 1/4th cup more. Then when I baked them, the oatmeal looked like it was swallowed up by the cookie. The flavor was very nice, slightly chewy on the bottom but still tasted like a blueberry muffin, in a form of a cake-like cookie. This is something I will make again, with some adjustments to make it more...chunky.

Perfect Cranberry Cashew Fudge

Very good recipe. Simple to do, but watch the scorching of the marshmallow crème mixture before removing it from the stove top...very very important. Keep that whisk going to insure proper whisking. I had to turn my heating element down some in the process. However I couldn't find whole cashews, so I just used what I could find at the store. I could have done with more cranberries though. Everyone that tried it liked it a lot. Will make again ;-) but decreasing the vanilla just a tad.

Date-Nut and Brown Sugar Bars

I had every ingredient available for this recipe, it wasn't to my liking. I could not taste anything passed the Cardamom. The bar was sticky thick but baked through. The instructions for the recipe were pretty simple but not being able to taste any other ingredient. I feel the cardamom could have been left out. Please note, that you need to be very liberal with the non-stick cooking spray for this recipe, brown sugar tends to stick harder then a cake when baked in a pan and you will find that a recipe like this won't come out of a pan as easy. Recommend spraying with non-stick spray and lining the bottom with parchment paper or wax paper for easy removal of the baked item.

HERDEZ® Creamy Tomatillo Avocado Salsa

Okay....Valerie, I'm a wuss ;-) I forgot how spicy the HERDEZ cooking sauces are. And no one could eat it as written. However, I loved the flavor it was just to darn hot. But because I was serving it to my kids, I needed to adjust the heat in it. I basically had to increase the avocado & Greek yogurt by 4 times what the original recipe stated but left the cooking sauce and cilantro the as is. Still had a great amount of heat without hurting my little ones and everyone enjoyed it but hubby. He wouldn't try it because of the avocados, but for me, making it the way I did, will be a keeper. And it still had it's creamy texture. I'm just glad this recipe is soo easy when it comes to evening the heat without losing the flavor. So it's a win win for the whimpiest heat seekers to the atomic bomb dropping eaters
