Sugar Glazed Walnuts

If you need glazed walnuts quick for a salad, this is a perfect recipe. I agree that time is less in the microwave - about 5.5 min. for mine.

Chicken Satay

I would recommend marinating in a ketsap (not ketchup!) which is a sweet soy sauce found in asian food stores adding only fresh cilantro or chopped green onions and then using the rest of the ingredients separately to make a dipping side peanut sauce. That the satay I grew up with.

Thai Noodle Salad

Absolutely excellent sauce. I turned out surprisingly well. I am sure the recipe was great as written but did some subs to use what I had on hand and turned out great. Instead of shrimp, I used my microwave pressure cooker on chicken 6 minutes in a teaspoon each of soy sauce, rice wine vinegar and sesame oil and thinly sliced and then cut into bite size lengths. Since I had "Excellent Flour Stick" - a quick boil noodle from the Philipines I picked up in a previous asian market spree - I used that. The "noodle" has coconut oil in complimenting the sauce. I used Mann Broccoli slaw instead of napa cabbage and mini salad multicollar peppers. I also used a teaspoon of sabal oelek instead of a sweet chili sauce and upped the brown sugar to a tablespoon and a half.

Yucatan Potato Salad

I cut the oil down to two tablespoons and used olive oil instead. Instead of powdered mustard I used dijon because I ran out of powdered. I think the powdered would be better.. I used a tablespoon of pickle relish with two cut up pickled jalapenos - yum. The green olives give it that salty kick that is just inspired. Great idea!

Suki's Spinach and Feta Pasta

Thank you for a great recipe. Add 2 TBSP chopped Kalamata olives and 1 TBSP olive juice for acid balance. 2 more cloves of garlic is about right. Contrary to other reviews, DO NOT add salt unless you taste it first - there is plenty already in the feta. Great on a ridged whole grain penne. Cook pasta until 90% done and finish off when you add to the sauce.
