Kyle's Favorite Beef Stew

This is a great beef stew. After about 5 hours in the crock pot (you need a really nice sized crock pot because it makes alot) I tasted it for flavoring...decided it needed a little something added. So, I added a can of Rotel tomatoes, can of beef consomme', a nice dash of garlic salt, about 1/4 cup of ketchup and THEN it all came together. Served it to company and they all loved it on a nice chilly night.

Banana Crumb Muffins

This was a melt in your mouth recipe! Served it to 5 very picky eaters and they were literally trying to find crumbs to not waste a drop! Moist, flavorful, and OHHHHHHH so good!

Summerly Squash

A great and healthy way to use up those batches of summer veggies. I used a small can of Rotel tomatoes including the liquid instead of fresh tomatoes. The only other change I made was at the very end of cooking I put about 1/4 cup of parmesan cheese on top - melted that and served.

Restaurant Style Chicken Nachos

This is good as written. To make it better be sure to add taco seasoning to the chicken while cooking. I warmed a can of refried beans in the microwave and after warming the chips for 5 mins. put cheese on the chips, then refried beans, then chicken mixture, more cheese and topped with sliced jalapenos and the chopped tomatoes. Warmed at 350 degrees for 15 mins. After warming topped with the green tips of the onions. The more cheese the better. Be sure to use really good shredded cheese so it melts well. Served with salsa and sour cream on the side. A great nacho recipe for sure!

Stuffed Mushrooms with Swiss Cheese

I agree that there is just a bit too much butter. Having said that I used 12 medium sized portobella mushrooms and had to use some bread crumbs and chop up about 10 baby bellas to have enough filling. With that said, I only used 4 tbsp. of butter. I liked them but weren't my favorite stuffed mushroom appetizers. The mushroom seemed to overwhelm the filling. Maybe I need to double all of the ingredients for 12 mushrooms. Just an idea! Problem is in a recipe sometimes the 'large fresh mushrooms' are a different size than the ones we use.

Slow Cooker Chicken Taco Soup

HATE TO REVIEW SOMETHING THAT WASN'T MADE EXACTLY LIKE THE RECIPE. BUT, I DIDN'T LIKE THE FLAVOR 'AS IS', SO, THIS IS WHAT I CHANGED: USED 2 CANS OF FIRE ROASTED TOMATOES WITH GREEN CHILIS, ADDED A PACKAGE OF DRY RANCH DRESSING MIX, ADDED A PACKAGE OF DRY ONION SOUP MIX. ADDED JUICE FROM 2 VERY JUICY LIMES WHILE COOKING. ABOUT 30 MINS. BEFORE SERVING I ADDED ABOUT 4 TBSP OF CHOPPED FINE CILANTRO. WITH THESE ADDITIONS I THOUGHT IT WAS GOOD. WITHOUT MY CHANGES THAT'S WHY I GAVE IT 3 STARS. WITH MY CHANGES I'D RATE IT A 5 STAR RECIPE.

Spring Strawberry Salad with Chicken

Thought this was a great summer salad. I made my own balsamic vinaigrette and added 2 tsp. of strawberry jam to the vinaigrette and it was fabulous! Used feta instead of goat cheese - just a personal preference!

Mexican Orzo Salad

I found 16 oz. of orzo was way too much for the mixture to not taste like all orzo. Also chopped fine 1/2 of a large jalapeno (because we like it with a little kick). 5 limes doesn't really tell me how much juice - so I juiced 5 limes and it was a scant 1/2 cup. I added an extra 2 limes, juiced and a 1/2 tsp. garlic salt and 1/2 tsp. cumin. Think it will be really tasty after it sits in the refrigerator for a few hours or over night.

Double Tomato Bruschetta

This is a great appetizer. I didn't use Roma tomatoes because I had lots of vine ripened ones. My suggestion is if you use vine ripened tomatoes to chop and then drain them for about 30 mins. in a colander so the mixture isn't so runny. Maybe it was just me but I felt like the sun dried tomatoes in olive oil was plenty of olive oil. So, I didn't add any more. For sure use fresh basil if possible - makes a big difference - again I didn't use but about 2 tbsp. and felt it was very flavorful. I served these as appetizers to 6 adults and they all loved them. We were off to dinner so I had quite a few left over even after almost everyone had 2 or 3. Some of the guys just wanted to stay and eat the rest and pass on dinner!!

Caribbean Chicken Salad

I was looking for a light, fresh, spring-like salad as an entree and this fit the bill perfectly. My only suggestions are to be sure to marinate the chicken in a teriyaki sauce. The one I used was pineapple/teriyaki and it gave the chicken the perfect flavor to accompany the other ingredients. When I make this again, I'm going to use a fresh pineapple for more flavor. I'd also suggest using a purple onion. Like other reviews, I only used about 1/2 the amt. of sugar and used about a scant 1/4 cup of the pineapple juice too. Didn't think it was too sweet at all. Not too sure you need as many tortilla chips (or any, really).My husband and I both really enjoyed this salad and it will certainly go into my 'favorites' folder.

Caprese Appetizer

I haven't made this exact recipe but one similar. I find it's easier to eat if you halve the grape tomatoes and put the cubed cheese with the half piece. I also marinate the mixture for a few hours in the olive oil and add some dried herbs for extra flavor. Also add a few sprinkles of crushed red pepper flakes for color - doesn't really make it that spicy. I rub the flakes in the palms of my hands to crush a little more and release the flavors too. Be sure to buy the best mozzarella cheese you can find.

Cheesy Broccoli and Vegetable Soup

One of the easiest and best soup's I've every made. Used the frozen Calif. mixed veggies but used fresh broccolil - about 4 big stalks cut into bite sized pieces. Only used 1/3 cup flour and stirred that into the 1/4 cup butter and stirred until it was a nice golden color. Used 2% milk. This time I used the real velveeta cheese next time I'll try it with the 2% velveeta and I really don't think it will change anything but the calorie count. Also put 4 chicken bouillion cubes and 2 beef boulilion cubes into the broth - think it give it a bit more depth of flavor. Being in Texas I had to add a few sprinkles of crushed red pepper flakes. Great on a cold winter night!

Yummy Pork Chops

My husband really enjoyed. I had mixed feelings about it. Meat was moist and tender but there was a little something about the flavor that wasn't my favorite. Next time I may cut back on the soy. Also, use the best Italian dressing you can find. I used Giraud's Italian and that is good stuff.

Baked Lemon Chicken with Mushroom Sauce

There was just something missing - can't figure it out. The chicken was tasty enough and moist but the sauce was gummy even after adding add'l broth and I had to add quite a few ingredients to make it have a decent flavor.

The Really Good Salad Recipe with Pieces of Fruit

A great summer salad - very light and refreshing. Even though I've made the almond/sugar pieces before this time I had some pre-made sugar coated pecans and used those. Any fruit you like can go into this salad. Loved the dried cranberries and added more of those.

Chrissy's Sweet 'n' Sour Tomato Salad

Used fresh garden tomatoes along with a few yellow and red cherry tomatoes too. Also added chopped cilantro, minced garlic and about 1/2 cup of an english cucumber. Be sure to leave at room temperature. A great summertime recipe to use up all those 'maters!

Mexican Shrimp Cocktail

Be sure to buy the very best shrimp that you can find. The next time I make this I'm going to buy raw shrimp and cook them myself. The market was out of fresh shrimp so I bought those that had been frozen and then thawed and they weren't good. The sauce was fabulous.
