Sweet Apple Chicken Sausage, Endive, & Blueberry Salad with Toasted Pecans

YUM YUM YUM.... Added dried cranberries too. Used high quality balsamic vinegar and it was delish!! Daughters already asking when will we have it again :-)

Italian Chicken Sausage Risotto

I did love this recipe, HOWEVER: the recipe doesn't say it, but I think that the dish will look a lot more appetizing if you brown the sausage. The recipe also doesn't say to cut the sausage, I did. Brown the sausage FIRST (either cut or whole) and THEN add the onions and continue the recipe as written. I Didn't use the peas because of food allergies.

Chicken and Wild Rice Slow Cooker Dinner

First of all, this would have to be made in a HUGE crockpot to get SIX breasts in. It was disappointing. In principle this is a good idea, but needs work. I made half the rice recipe with 4 breasts and they fit fine in my large size pot. The chicken turned out very bland. The breasts should be seasoned. At the end, I shredded the chicken and mixed everything together. I didn't use carrots because I am allergic, had I put them in this would have been even blander (and mushier). Also, the long grain and wild rice boxes have less than 1 cup mix so prepare to buy several to get the amount needed. The dish in general is NOT visually attractive. If you are looking to WOW guests, don't choose this one. I suppose it would be good to feed a large group of people but only fixing the flavor. I will mix in some light cream and Parmesan cheese to make it look like a risotto.

Fiber One® Chocolate-Peanut Butter Haystacks

Used regular peanut butter and milk chocolate chips because we like them better. I personally feel neutral about these but the rest of the family liked them. The cereal does give it a particular taste, but not bad. If you need to increase your fiber intake, these would be a great alternative.

FiberOne Herman Sourdough Biscuits

I have a great batch of Herman Sourdough starter in my kitchen that I use to make biscuits, pancakes, and other bread items. I wanted to try the biscuit recipe but substituting one cup of flour for one cup of crushed cereal. The biscuits came out wonderful, very tender and flavorful.

Minister's Delight

I had never tried something like this and wanted to try it. Used 2 cans of premium quality blackberry pie filling - this proved to be a good choice because it is not as sweet as cherry. I added about 3/4 cup of oatmeal to the topping and a little bit more butter. HOWEVER when it was done the topping didn't look pretty and seemed soggy, so I put it in the regular oven at 350 degrees so it could 'crisp up' and turn golden. VERY GOOD but only gave it 4 stars because I had to finish in the oven for it to be better.

Beef and Bean Crescent Burritos

I really liked this idea. The only thing I did different is that I used refried beans instead of black beans. This made the meat mixture really creamy and yummy. It reminded me more of a meat pie, except that it is wrapped in burrito style and has the tex-mex flavorings. Nice snack or light lunch!

Pineapple Cheese Casserole

DEFINITE CROWD-PLEASER!!!! I always make it with crushed pineapple because I like the texture better, but it works either way. WARNING it is addictive. I highly recommend it for potlucks because it is easy, relatively inexpensive and delicious.

Korean Marinated Flank Steak

Stop what you are doing right now and go make this marinade. It is FANTASTIC!! I used it on NY Strip steaks and was only grilling 3 steaks, so I used only what I needed and froze the rest to use it later on chicken... Will definitely make again!!

Out of this World Pasta Salad

Very good, had to substitute the veggies for different reasons (can't have broccoli and only had red bell peppers) and used the pasta that I had in the pantry. I added tomatoes from the garden and it was super good. It is very good and the best thing is that you can vary the ingredients and it is still yummy!!

For this recipe you MUST use ripened plantains, with green plantains it will taste completely different. It won't necessarily be bad but it is a totally different dish altogether because plantains change in texture and flavor when they ripen. If you use green, these will be more like a potato dumpling filled with beans and will favor a savory taste. If you use ripe plantains these will be softer and have a sweet taste, similar to a sweet potato fritter (slightly sweeter depending on the ripeness level of the plantains). I am using the potato/sweet potato analogy to give you an idea of the sweetness, not because the taste is the same.

James Gang Red Velvet Cake

This recipe is very good. I used butter flavor shortening and didn't use the butter flavor extract. I also doubled the cocoa powder to 4tbsp because I wanted to. Probably didn't use as much red coloring as I could have but the color has no bearing on the taste anyway. Initially I wasn't going to do the frosting but was intrigued by the technique of 'cooking' the milk with flour (had never done a frosting with flour in it). However, I made it with half cream cheese and half butter instead of shortening. It came a bit soft because the only cream cheese I had was fat-free... but it was delicious.

Abstinence on the Beach

Instead of water, I used carbonated water. I also made 'frozen' style drinks using the mix of concentrates and coconut as the mixer, adding ice and carbonated water to the blender. It is very good!!

Tostones Rellenos (Stuffed Plantain Cups)

This is definitely a crowd pleaser! Fill them with your favorite toppings or with nothing at all. I used the beef filling from the recipe except that I added a handful of golden raisins to it. My daughters loved them!
