My official party chef uniform!
About this Cook
I am a 49 year old welder/fabricator. I am married to a great lady. We have 4 kids, and a grandson. I am almost obsessed with cooking and guitar playing.
My favorite things to cook
Cheesecakes, BBQ, fajitas,pies
My favorite family cooking traditions
Summertime bbq's for family and friends (usually around 150 people) and family Christmas dinner with prime rib and smoked turkey.
My cooking triumphs
I had a chef from Miami that ate at one of our cookouts this past summer. I had smoked Boston Butts, turkeys, chickens, and sausage. I grilled pork and beef loins, fried mushrooms, made baked beans, slaw and potato salad. The chef told me that my food was "phenomenal". I was on cloud 9!
My cooking tragedies
I made 2 cheesecakes one year for a lady for her family Thanksgiving dinner. The both cracked like mad. I was so dissapointed, but they loved the cheesecakes, so all was not lost.

Kosher Salt Encrusted Prime Rib Roast
I cook prime rib like this every year at Christmas, except I use rock salt. It works just as well, and I use a disposable pan. I also rub my roast down with worcestershire before putting on the seasonings. There is never any left oversfrom this.

Double Layer Pumpkin Cheesecake
I made this recipe exactly like it says, except I used Splenda. Folks loved it, and my diabetic friends and family really appreciate it. Thanks for a great recipe.
