Super Bowl Bites

These are GREAT. We made these last night to give them a trial run before Super Bowl. I followed the recipe and added minced dried onion & a few dashes of worcestershire (only because that is what we add to homemade turkey burgers). We definitely did not think they were salty as some reviewers. I used dinner rolls from the bakery section of the grocery store. I did top with a damp papertowel while cooking, which was needed. The bottom bun was still a little on the hard side but not a big deal. I don't think a damp papertowel on the bottom would work. I cooked at 350° for 40 minutes and the meat was done. My husband and daughter said they taste exactly like "sliders" & LOVED them. (I submitted a photo and unfortunately there is really no way to make them look as good as they taste.) Thanks for sharing this recipe. It is a keeper.

Scotch Eggs

I just made this recipe to try out for a breakfast item for a tailgating football event we are going to. It is awesome! I had the same issue as others where I fried them and then finished them off in the oven at 400° for about a 1/2 hour. I only had panko on hand and that worked great. I also used one pound hot and one pound of regular breakfast sausage to add some kick & doubled the recipe ingredients (except for pepper). Using two pounds of sausage, I was able to make 11 scotch eggs. Next time I will probably be able to squeeze out about 14.
