Cherry Bomb Chicken

I was looking for a recipe that would use up my leftover habaneros. I'm so glad I found this one; it was excellent! We didn't notice much spice in the chicken, surprisingly, but it was very good anyway. I used bone-in chicken thighs and cooked it on a cookie rack over a cookie sheet at 450 in the oven. I forgot to use the sweet chili sauce at first and found the chicken doesn't need it, but when I dipped my next bite into the sauce, that raised it to the next level of delicious. The sauce compliments it perfectly!

Peanut Butter Bars I

These are excellent. I made them after making the homemade peanut butter cups on this site and I think these are much tastier. The peanut butter mixture is the best I've had. I might prefer to make more of the chocolate layer next time, though. Made these for Christmas and they were a hit with everyone.

Homemade Peanut Butter Cups

These were fun to make. I took the advice of others and melted the chocolate in batches. I only had the regular sized paper cups so I made them reese's-sized and they turned out great. I made these as part of my Christmas gifts for friends and family. Everyone loved them.

Fluffy Pancakes

I have tried a LOT of pancake recipes. After this one, I now know I have found my favorite and can stop trying other recipes. These were the fluffiest pancakes I ever made. Delicious!

Acorn Squash

We didn't find this particularly great. The whole match-the-halves-together thing was weird. I did it, but then found myself dumping the liquids into what had been the top half afterward and letting them sink in a bit. I wouldn't follow that direction again. I'm going to use a different recipe for acorn squash next time.

Napa Style Roasted Vegetables with Diamond Crystal® Sea Salt

These were very good. My son and I ate these for days without getting tired of them. The only thing I didn't like was that one of the vegetables (butternut squash, I think) got very mushed and disintegrated. My son thought that was part of what made the dish so awesome. He's not particularly into root vegetables, so I was glad he liked this so much. Oh, I had a hard time finding a large enough dish to roast this in. It is very bulky!

Banana Crumb Muffins

I baked these for two reasons: the super-high, popular ratings had me curious and I had three ripe bananas on hand. I made these as directed, only making the following substitutions due to what I had on hand: whole-wheat flour instead of white, sucanat instead of brown sugar. The reason I gave it four stars instead of five is because I found it too sweet for me and my family. I realize, though, that that's just our own personal tastes. However, if you don't like overly-sweet foods, be aware. The texture was heavenly. I probably would give 4.5 stars, if posslble. Very glad I tried this and definitely would make for guests, depending on whom was visiting.

Bourbon Whiskey BBQ Sauce

The sauce is very good. I cooked the ribs indoors a few different ways and found the best method was to follow the directions for Scott Hibb's baby back ribs (except broiling rather than grilling them at the end), putting this sauce on at the end. Yum!

Delicious Salmon

This is the best salmon I have ever made, the best I've ever eaten! I made this paleo-friendly by substituting coconut aminos for the soy sauce and date sugar for the brown sugar. I don't want to even try it any other way because this was soo perfectly delicious. I'm not a huge fan of salmon but my son is. We both agreed that this was great! I searched it with garlic mashed cauliflower and ginger-garlic broccoli (I have a lot of garlic right now).

Easy Garlic Broiled Chicken

This was very good! I used coconut aminos in place of soy sauce. I imagine regular soy sauce would make this saltier but it was perfect the way I made it. If you use soy, definitely use low sodium.

Baked Sweet Potato Sticks

This is a good basic recipe. I like it but there's no "wow" factor to make it a 5-star rating. Like others, I put everything in a large Ziploc bag along with several other items from my spice rack: garlic powder, onion salt, etc.

Balsamic Roasted Carrots

This is my new favorite way to cook carrots. I made it as-written last night for my son and myself. We liked it so much that I quadrupled the recipe tonight. I found that I don't need to roast the carrots as long as it says. I use regular carrots, peeled and cut to relatively the size of baby carrots. I don't use quite the amount of balsamic as called for. I just give the carrots a good sprinkling, mix it up and roast 5 more minutes or so. Yum!
