Strawberry Cake II

Followed the directions exactly. The cake was cooked through, but sunk immediately after taking them out of the oven. The texture was funky, maybe because of the jello? Would very much not recommend this recipe.

Simple Whole Roasted Chicken

Wow! I had given up on roasting my own chicken because they always ended up over cooked, dry and pretty unremarkable. After trying this recipe, I am amazed; this was the best roasted chicken I have ever made - the flavors are very unusual, but work nicely, and the chicken was so perfectly cooked and moist, I will definitely be making this again. I followed others' recommendations and increased the amount of seasoning used (doubled), as my chicken was also much larger than the 4lbs recommended, I had to add time to the end (added 15 minutes) and my 6 lb chicken was perfectly cooked after resting for 20 minutes. I just finished a salad using the leftover chicken and it was still so moist and flavorful. I highly recommend this recipe to others who, like me, have struggled with roasting chickens and challenge them to give it another try – I don’t think you’ll be disappointed!

Lana's Sweet and Sour Meatballs

What a great, versatile dish. Because I knew I'd be in a hurry, I used pre-made chicken meatballs ( but can imagine it would be that much better with homemade). I also did nearly everything ahead of time - chopped veggies (but added extra: carrots, red bell pepper, red onion and celery), made the sauce, and stored everything in the refrigerator. When I got home from work, I started some rice in the rice-cooker, and stir-fried everything in the wok; started with the veggies, added the meatballs and then finished cooking through by boiling the sauce in the wok. This was a huge hit and reheats well. I felt the cornstarch ratio was a little high, but my husband liked the thick sauce, so I think it's a matter of taste.

False Cabbage Rolls

This is a great basic recipe. I am a big fan of bold flavors, so I agree with some other posts that this is a little bland as is. However, the recipe is a great foundation and lends itself well to a bit of creativity with herbs and spices that suite your interest. I have spiced it up with Italian, Mexican and Greek spices and all worked well.

Chili I

Amazing Chili recipe and a real crowd pleaser. I make this chili at least once a month and never tire of it. Leftovers freeze well and we have a new family favorite with the leftovers - we serve this over noodles with grated cheese, onions and pickled jalapenos. . .sort of our take on Cincinnati style chili.

Berry Cornmeal Muffins

These muffins are easy to make and so versitile; I use whatever kind of fruit I have on hand (blueberries, strawberries, cherries, etc) and the corresponding yogurt flavor. The come out perfect every time and get rave reviews.

Thai Noodle Salad

This salad is a real crowd pleaser. The first time I made this salad, I didn't read that it served 20 until I was 3/4 through preparation. I felt pretty silly makeing the whole recipe for 8 people, but I am glad I did because there was hardly any left! The sauce is fantasitic, and versitile - it would make a great dipping sauce for chicken, shrimp or pork.

Salmon Patties

I did not like this recipe at all. The crunch of the celery and raw onion was too much with the delicate salmon. I tried a second time and sauteed the vegetables and it was still no good

Roasted Garlic Cauliflower

This is my new favorite side-dish! Super easy to make and, when using quality ingredients(olive oil and parmesan), this turns out MAGNIFICENT!! Even my veggie-resitant husband had to agree that this was a good vegetable dish. Made it for the first time last night and have been planning when I can make this again.

Mexican Rice

Good recipe that will definately serve 8. Fairly easy to prepare and MUCH better than anything out of a box. I really like saffron and appreciate the flavor in the rice. Will make again.

Great Recipe - I followed the advice of others' and reduced the cooking time. The first time I made it I followed the ingredients exacty and agree that it is a bit on the bland side but, my picky toddler thought it was great. The next time I substituted chili sauce for the ketchup and it had some more pep. SUPER easy!!

Yakisoba Chicken

This is a great dish. I found the quantities to be perfect. The first time I made this, I didn't use a big enough pan which was difficult. As the recipe reads, it was a bit to spicy for my 2 year old, but perfect for my husband and myself. To solve this, I now omit the chili sauce and add a sweet-hot chili paste as condiment at the table.

Pork Chops with Apples, Onions, and Sweet Potatoes

This dish was really disappointing. The aroma when it is cooking raises your expecations for excellent flavor - but it turned out to be extrememly bland. I followed the recipe exactly and ended up with a boring flavor and dry pork. I will not make this again.

Asian-Style Pork Chop Bake

Very good flavor and easy to make. I would encourage marinating overnight. Next time I will take the advice of others and use less of the marinade as I was left with a lot of runny liquid at the end of the baking time.

Rosemary Turkey Meatloaf

This flavors in this recipe are great together. Based on previous feedback, I made some adjustments: I left out the milk and used 1.5 cups of breadcrumbs and also used only 1/4 cup of brown sugar. I also sauteed the onion first (personal preference) and used roasted garlic because I had some extra. Served this to company with rave reviews.

Great Recipe - very easy to make. Ground turkey worked well. I would agree that it's a little sweet - next time I will cut the brown sugar to half or less. The buns I used were on the sweet side also which may have accetentuated it. I served it with a salad with blue cheese dressing which was a nice contrast. Definately a keeper - wonderful every-day dish!
