So good! (And I ran the calories, less than 350 a serving!) It's a very versatile recipe, too. I've made it as instructed (except for the mushrooms - yuck) and I've played with the ingredients and it always turns out amazing. This last time, I added a cup of diced acorn squash, plain Greek yogurt in the place of half and half and Mexican blend of shredded cheese in the place of cheddar. It was excellent! I look forward to trying it with breakfast sausage in the place of ham in the future. Ooh, and a gyro themed strata, too. ...such an exciting recipe!!
